AB - The ability of Coriolus versicolor medicinal mushroom to grow and accumulate selenium during submerged cultivation in a selenium-fortified medium is examined in this paper. For selenium supplementation, commercial selenium yeast was used. Control, nonenriched sample and reference cultures cultivated in the medium enriched with commercial yeast Saccharomyces cerevisiae were also prepared. The mushroom demonstrated a high ability to accumulate selenium from the added source (around 970 and 1,300 mu g/g of dry mycelium weight for samples enriched with selenium in a concentration of 10 and 20 mg Se/L, respectively). The addition of selenium significantly (p lt = .05) increased the biomass yield, whereas the addition of nonenriched yeast had no significant (p lt = .05) impact. Furthermore, regression analysis showed statistically significant (p lt = .05) and positive correlations between the content of Se and Fe (r = .92), Se and Cu (r = .92), Se and Mn (r = .98), and Se and Sr (r = .96), suggesting that selenium incorporation was followed by incorporation of these elements, and led to mineral enrichment of the obtained mycelium. Methanol extracts prepared from mycelium biomass demonstrated a better inhibitory effect on Gram-positive bacterial strains with minimal inhibitory concentrations between lt 0.3125 and 40 mg/ml. The obtained results showed that selenium yeast could be used for obtaining a potential novel food supplement: mushroom biomass with high selenium content and enhanced mineral composition.

AB - Goats, the earliest ruminant to be domesticated, are traditional sources of meat, milk, fibre, leather, related products of animal origin and as draught and pack animals. Meat is the major product of the goat. Meat quality is the sum of all sensory, nutritive, technological and hygienic-toxicological factors of meat. The aims of this study were to investigate the chromium content of four different muscles (M. psoas major, M. longissimus dorsi, M. semimembranosus and M. triceps brachii) of Saanen goat male kids and to determine whether the chromium contents differed between the muscles. Chromium content was determined using inductively coupled plasma optical emission spectrometry (ICP-OES), after dry ashing mineralisation. The studied muscles did not significantly differ (P >0.05) with respect to chromium content. The chromium content ranged from 0.012 to 0.067 mg/100 g, with an average of 0.026 mg/100 g.

AB - Ultimate pH value and instrumental colour (CIEL*a*b* values) characteristics, proximate (moisture, protein, total fat and total ash) and mineral composition (K, P, Na, Mg, Ca, Zn, Fe, Cu, Ni and Mn) were determined in 10 (heart, tongue, lungs, spleen, liver, kidney, brain, testicle, thymus and kidney fat) edible by-products of Saanen goat male kids. Many significant or numerical differences were found in the mean values of quality characteristics among the edible by-products. Among edible organs and glands, liver had the lowest surface CIEL* value (darkest colour), and the highest levels of protein, Zn, Cu and Mn. Furthermore, the highest pH(24h), total ash, K, P and Mg levels were determined in the thymus. The testicle had the highest moisture, Ca and Ni levels. The spleen had the lowest fresh cut cross-section CIEL* value (darkest colour), and the highest Fe level. The highest total fat content and Na level were determined in the brain and kidney, respectively. Among all the edible by-products, kidney fat had the highest pH(24h), surface CIEL* value (lightest colour) and total fat content, and the lowest moisture, protein, total ash, K, P, Na, Mg, Ca, Zn, Fe, Cu, Ni and Mn levels.

AB - Coriolus versicolor je medicinska gljiva čija je lekovitost potvrđena
brojnim istraživanjima. Biološki aktivni polisaharidi i polisaharopeptidi
izolovani iz micelije submerzno gajene Coriolus versicolor gljive se
koriste u prevenciji mnogih bolesti.
i pšeničnih mekinja. Za obogaćivanje supstrata korišćeni su organski i
neogranski izvori selena: selesnki kvasac (Sel-Plex®
, Alltech Inc.,
Lexington, USA) i natrijum selenit, Na2SeO3 u koncentraciji od 25 mg/kg
suvog supstrata.
selena nego kod uzorka obogaćenog selenitom, antimikrobna aktivnost
takvih uzoraka je bila znatno izraženija. Pretpostavlja se da je selen iz
organskog izvora promenio hemijski sastav gljive.

AB - Concentration of cadmium was investigated in the heart, tongue, lungs, spleen, liver, kidney, testis, brain and thymus of 15 Saanen goat male kids. This element was determined by inductively coupled plasma optical emission spectrometry (ICP-OES), after microwave digestion. The cadmium concentration was significantly influenced by the type of edible offal. Mean cadmium concentrations ranged from 0.018 mg/kg (heart) to 0.114 mg/kg (kidney). The maximum cadmium concentrations found in the kidney (0.133 mg/kg) and liver (0.075 mg/kg) were below maximum levels (1.0 and 0.5 mg/kg, respectively) set by legislation for these tissues.

abstract = "Concentration of cadmium was investigated in the heart, tongue, lungs, spleen, liver, kidney, testis, brain and thymus of 15 Saanen goat male kids. The maximum cadmium concentrations found in the kidney (0.133 mg/kg) and liver (0.075 mg/kg) were below maximum levels (1.0 and 0.5 mg/kg, respectively) set by legislation for these tissues.",

AB - The relationships between the contents of various metals (Cu, Ni, Pb and Al) in different types of chocolates were studied using chemometric approach. Chemometric analysis was based on the application of artificial neural networks (ANN). ANN was performed in order to select the significant models for predicting the metal contents. ANN equations that represent the content of one metal as a function of the contents of other metals were established. The statistical quality of the generated mathematical models was determined by standard statistical measures and cross-validation parameters. High agreement between experimental and predicted values, obtained in the validation procedure, indicated the good quality of the models. The obtained results indicate the possibility of predicting the metal contents in different types of chocolate and define the strong non-linear relationship between metal contents.
