AB  - The aim of this research was to verify the authenticity of monofloral honeys from the territory of the Republic of Serbia on the basis of physicochemical parameters routinely measured in honey quality control using multivariate analysis. Seventeen samples of monofloral honey (11 samples of acacia honey and 6 samples of sunflower honey) from the territory of the Republic of Serbia were analyzed. Physico-chemical analysis of the samples included the examination of basic quality parameters and qualitative and quantitative analyses of phenolic compounds. In the samples tested, a total of 93 phenolic compounds were tentatively identified, and 19 of them were quantified. The obtained physicochemical analysis of the data served as input for the multivariate analysis. The hеаt map, which is useful for visualizing numerical data, was used for this purpose. The obtained results showed that the applied data can serve to clearly separate acacia and sunflower honeys.

Varietal Differences of Prokupac, Evita and Čokot Zemun Based onTheir Anthocyanins Content in Grape Skin Extract

AB  - In this study, we have analyzed the anthocyanin composition of skin extracts of three red grape varieties Prokupac, Evita and Čokot Zemun in order to distinguish these cultivars based on their anthocyanin profile. Also, mechanical analysis of grape bunches and berries was performed. According to our results, seventeen anthocyanins were identified using LC/MS technique and quantitative differences were recorded using HPLC-DAD method. The highest content of total anthocyanins was obtained for Evita variety and the lowest one was recorded in Prokupac. Also, clear differences were observed in anthocyanins ratios. In comparison to Prokupac and Evita varieties, Čokot Zemun was characterized with a high content of coumaroyl derivatives of anthocyanin compounds, while high levels of acetylated derivatives were recorded in Prokupac. Data reported in this study represent a certain contribution to a database of mechanical properties and chemical composition of grape varieties originating from Balkan.

Health impact of the commercially cultivated mushroom Agaricus bisporus and the wild-growing mushroom Ganoderma resinaceum - A comparative overview

AB  - The health promoting effects of hot water extracts obtained from fruiting bodies of the commercially cultivated mushroom Agaricus bisporus (AbHW) and the wild-growing mushroom Ganoderma resinaceum (GrHW) originating from northern Serbia are presented in this research. These abilities were compared in vitro by the prevention of lipid peroxidation (LPx) in a linoleic acid model system, inhibition of the angiotension converting I enzyme (ACE) that could help in the maintenance of a normal blood pressure level and strengthening the ability of the central cholinergic neuron by inhibiting the activity of acetylcholinesterase (AChE). Cytotoxic activities were observed towards selected human malignant (HeLa and K562) cell lines and normal-human peripheral blood mononuclear cells (PBMC). GrHW contains higher phenolics (5.9 g (100 g)(-1)), inhibition of LPx (EC50 = 1.07 mg mL(-1)), ACE (IC50 = 0.54 mg mL(-1)) and AChE (IC50 = 0.37 mg mL(-1)), and exhibited a significant selectivity in the antitumour action against HeLa (IC50 = 0.14 mg mL(-1)) and K562 (IC50 = 0.11 mg mL(-1)) cells. AbHW contained higher total protein (6.4 g (100 g)(-1)), carbohydrate (75.4 g (100 g)(-1)) and beta-glucan (55.1 g (100 g)(-1)) contents and induced significant proliferation of healthy PBMC from 152-116 % in the concentration range of 0.047-0.187 mg mL(-1). The difference in the biological activity of the extracts provides guidance on their use as functional food.

Biogenic amines content in the serum of patients with non-hodgkin's lymphoma

AB  - The biosynthetic pathway of biogenic amines is very active during the growth of many tumour cells. Non-Hodgkin lymphoma represents a very heterogeneous group of malignancies. The concentration level of some biogenic amines (putrescine, histamine, spermidine, epinephrine, and spermine) was investigated to elucidate whether they could be observed as markers for the patients with non-Hodgkin's lymphoma. In this study, the method of acidic extraction of five biogenic amines from human serum, dansyl chloride pre-column derivatization, and LC/DAD analysis were used to determine the content of biogenic amines in biological fluids. The results indicate that statistically significant differences exist in putrescine, spermidine and histamine contents in non-Hodgkin's patients versus healthy controls. The concentrations of putrescine, spermidine and epinephrine were elevated, and histamine was lower compared to controls. Based on their content, serum biogenic amines could be considered as potential tumour markers.

AB  - Plum wines made from two cultivars of Prunus domestica L. (Pozegaca and Crvena ranka) and one cultivar of Prunus insititia L. (Trnovaca) were evaluated for their total phenolic and anthocyanin contents. LC-MS/MS analysis based on specific MS transitions in the multiple reaction monitoring (MRM) mode was used for the identification and quantification of selected phenolic compounds. Catechin, chlorogenic and caffeic acids, as well as quercetin, were identified as the main polyphenols in plum wines. The total amount of phenolic compounds ranged from 1.24 to 1.58 g gallic acid equivalent per L. Among the examined wines, the Crvena ranka wine had a higher content of anthocyanins (12.31 mg cyanidin-3-glucoside equivalent per L). The antioxidant capacity of the wines was determined using the DPPH assay. The variations in the physicochemical characteristics, phenolic composition and DPPH radical scavenging activity of these wines are related to differences due to the different plum cultivars used in the preparation of each wine.

AB  - Ganoderma lucidum is one of the five major medicinal mushrooms. In Asian countries, alcoholic beverages with Ganoderma are traditionally produced and sold in local markets as a symbol of healthy products. The aim of this study was to examine the possibility of producing brandy enhanced with this mushroom and to investigate the influence of extraction parameters (time, concentration) on color, total phenolic content, antioxidant capacity, sensory characteristics and the composition and content of triterpenoid acids within the brandy. HPLC-DAD/ESI-ToF-MS analysis was used to identify triterpenoid acids. In brandy samples, 15 triterpenoid acids were determined, with the total content in the range of 2.63-4.06 mg/100 mg. In these samples, the most commonly detected triterpenoid acid was ganoderic acid A. In our study, the total phenolic content of analyzed samples ranged from 34.07 to 118.1 mg/L GAE. The color and sensory characteristics of analyzed brandies were significantly improved in comparison with samples without G. lucidum. The obtained samples represent an interesting new product for market worldwide with improved antioxidant capacity.

In the present study, the method of acidic extraction of histamine (His), of polyamines putrescine (Put), spermidine (Spd) and catecholamines epinephrine (Epi) and norepinephrine (NE) from human serum, precolumn derivatization with dansyl chloride, and LC/DAD analysis of the biogenic amines was used with the aim of monitoring differences of their levels in patients with diabetes mellitus, chronic urticaria, and Hashimoto's thyroiditis, compared to healthy subjects, and to observe them as possible markers for immune mediated diseases. The retention times were used for the determination of serum biogenic amines. Statistically significant differences were found in the levels of putrescine and histamine in diabetes mellitus patients, of the levels of putrescine, histamine, spermidine and epinephrine in chronic urticaria patients and of the levels of putrescine and spermidine levels in Hashimoto's thyroiditis patients, compared to those of healthy controls. Norepinephrine was found only in the serum of patients with chronic urticaria. The values of recovery, evaluated in controls, varied between 85.7 and 106.7 %. The statistically significant changes in putrescine, histamine, spermidine and epinephrine levels in patients compared with those in healthy people reflects the existence of biochemical disturbances in the mentioned immune-mediated diseases.

AB  - ljivovica and Prepeenica are traditional Serbian distillated beverages made from varieties of plum, of the genus Prunus. The ageing in wooden casks not only improves the sensory characteristics, but also changes the content of total polyphenols and contributes to the other important health properties, such as the increase of their antioxidant capacity. In this study, home-made brandy (ljivovica and Prepeenica) samples were used, which matured in casks during the time period from 10 to 47 years. The aim of this investigation was to examine the influence of the ageing parameters (time period and type of wooden casks) and raw material (plum cultivars) on the total polyphenol content, amount of certain phenol compounds, sensory properties, colour and antioxidant properties in matured brandies. The individual phenol components were determinated using HPLC system equipped with diode array detector, while the total phenol content and antioxidant activity was estimated using spectrophotometric methods (Folin-Ciocalteu, DPPH, FRAP and TEAC). Total polyphenol content (TPC) of aged Prepeenica samples was ranged from 230.26 to 890.26 mg/L gallic acid equivalents (GAE mg/L), whereas the TPC of ljivovica sample was 110.38 mg/L. Antioxidant capacity of analysed Prepeenica samples and ljivovica sample was in strong correlation with TPC. Total sensory score of all samples was very high and varied between 18.2 and 19.8. The obtained results have shown that the benefit of longer maturation on sensory characteristics is well recognized, but the improvement has some limitation.

AB  - The effect of pruning severity on quercetin and catechin content in berry skins of cv. Blaufrankisch (Vitis vinifera L.) was studied over 3 years. Different crop levels and canopy structures were obtained by retaining 8, 16, and 24 nodes per vine at pruning. Canopy density, which is proportionate to the shoot number per canopy volume, directly affects the intensity of photosynthetically active radiation (PAR). The quercetin content has been shown to be highly dependent on the light exposure of the berries in which it accumulates. An increase in node number linearly decreased skin catechin, and it is suggested that the decrease was caused by increased yield per vine.

AB  - The aim of the present work was to investigate and compare phenolic compounds and antioxidant activity of methanol extracts of Quercus robur and Quercus cerris acorn kernels obtained before and after thermal treatment. Content of total phenolics, tannins, non-tannin phenolics and flavonoids was determined spectrophotometrically and content of gallic acid with HPLC. Antioxidant activity of the samples was assayed through FRAP (Ferric Reducing Antioxidant Power), DPPH scavenging test and inhibition of Fe2+/ascorbate induced lipid peroxidation. Extracts of native and thermally treated kernels showed high antioxidant activity, with extracts of thermally treated kernels being more active than extracts of native ones. Hydrolysable tannins and gallic acid were identified in all samples. Non-tannin phenolics, including gallic acid, were present in significantly higher quantities in thermally treated samples, whilst tannin content decreased. This indicates that during thermal treatment hydrolysable tannins were degraded. As the result of this degradation and consequent increase of non-tannin phenolics content, and amongst them especially gallic acid, thermally treated samples possess higher antioxidant activity than do the native ones. The obtained results have provided further grounds for establishing Q. robur and Q. cerris acorn kernels as a source for functional food preparation,

AB  - Fruits from three walnut cultivars were picked in three terms with the aim to determine the optimal harvesting time of green walnut fruits for the improvement fruit brandies. Quantity of juglone and its antioxidant activity was determined in the picked fruits. Juglone quantity was the highest in fruits weighing between 4.5 g and 6.5 g (harvesting time around June 1), and varied from 209.60 mg up to 735.00 mg in the cultivar Sheinovo, from 388.50 mg up to 418.60 mg in the cultivar Geisenheim 139 and from 325.50 mg up to 499.40 mg in the cultivar Geisenheim 251, in a sample of 100 fruits. In this phase, walnut fruits had the highest antioxidant activity, too. .
AB  - Tehnikom visokoefikasne tečne hromatografije određivan je sadržaj juglona (5-hidroxi-1,4-naftohinona) u uzorcima mladog oraha različitih sorti i različite zrelosti berbi 2005. i 2006. godine. Pored toga određena je anatioksidativna aktivnost metanolnih ekstrakata uzoraka plodova. Koncentracije juglona se nalaze u opsegu 0,03-0,24 % za berbu 2005. i 0,03-0,08 % za berbu 2006. Svi uzorci su pokazali značajnu antioksidativnu aktivnost. .
