Bioactive Phytochemicals from Walnut (Juglans spp.) Oil Processing By-products

AB  - Persian walnut (or English walnut) growing dates back to 7000 BC in Persia, a gene center of Juglans regia L. The top leading countries in walnut production are China, the USA, and Iran accounting for ~75% of world production. Nuts are an essential component in human nutrition because their consumption provides the required amount of energy (720 kcal per 100 g of fruits), unsaturated fatty acids, carbohydrates, proteins, fibers, sterols, tocopherols, minerals (K, P, Ca, Mg, and Na), volatiles, and other bioactive constituents. In addition, walnut kernels are rich in oil (50–70%) and protein, depending on the cultivar, location, and irrigation rate. Although mostly consumed raw, walnut kernels are increasingly processed by cold pressing into light yellow edible oil used in foods as flavoring, like salad dressings or cooking. Walnut oil is especially valued for its high content of essential fatty acids (linoleic and linolenic acids) and micronutrients such as phytosterols, squalene, and other tree nut oils polyphenols, and tocopherols. As by-products, both shell and cold-pressed cake from walnut that remains after the cold pressing process of oil can be used in various ways (food, cosmetics, pharmaceutical products, or textile industry). Especially residual walnut press cake is practical when used in food and in pharmacy, mostly integrated into other products. The reason for treating residual cake as a value-added product lies in the fact that defatted cake is generally rich in polar phenolic compounds and, as a source of natural antioxidants, is expected to show significant antioxidant activity. The most abundant polyphenols found in walnut oil cake are hydrolyzable tannins. In addition, press cake is rich in dietary fiber, protein, residual oil, polyunsaturated fatty acids, and tocopherol, all considered health-enhancing components. Therefore, by using walnut oil cake as a low-cost product, many aspects connected with the valorization of food wastes are covered, such as consumers' dietary habits, economy, and environmental protection. © 2023, The Author(s), under exclusive license to Springer Nature Switzerland AG.

AB  - Sorghum grain (Sorghum bicolor L. Moench) is a gluten-free cereal with excellent nutritional value and is a good source of antioxidants, including polyphenols, as well as minerals with proven health benefits. Herein, the phenolic composition, elemental profile, and antioxidant activity of sixteen food-grade sorghum grains (S1–S16) grown under agroecological conditions in Serbia were determined. Nine phenolic compounds characteristic of sorghum grains, such as luteolinidin, 5-methoxyluteolinidin, luteolidin derivative, luteolidin glucoside, apigeninidin, 7-methoxyapigeninidin, apigeninidin glucoside, and cyanidin derivative, were quantified. The antioxidant potential of the analyzed sorghum grains was evaluated by UV/Vis (DPPH, ABTS, and FRAP) and Electron Paramagnetic Resonance spectroscopy (hydroxyl and ascorbyl radical scavenging assays). The content of macro- and microelements was determined by Inductively Coupled Plasma Optical Emission spectroscopy. Theoretical daily intakes of selected major and trace elements were assessed and compared with the Recommended Daily Allowance or Adequate Intake. Sample S8 had the highest amount of phenolic compounds, while S4, S6, and S8 exhibited the strongest antioxidative potential. The sorghum studied could completely satisfy the daily needs of macro- (K, Mg, and P) and microelements (Se, Zn, Fe). Pattern recognition techniques confirmed the discrimination of samples based on phenolic profile and elemental analysis and recognized the main markers responsible for differences between the investigated samples. The reaction between hydroxyl radicals and luteolinidin/apigeninidin was investigated by Density Functional Theory and thermodynamically preferred mechanism was determined.

AB  - The aim of this study was to find the chemical parameters for the differentiation of plum cultivars grown along the fjord areas of Western Norway and Eastern Norway, having specific agroclimatic conditions. Chemical analysis of the fruits confirmed the contents of 13 quantified elements, 22 sugar compounds, 11 organic acids, 19 phenolic compounds, and antioxidant activity in 68 plum cultivars. Dominated contents were noted for nitrogen (with the maximum mean value of 3.11%), potassium (8055.80 mg/kg), and phosphorous (7878.88 mg/kg). Averagely, the highest level of sugars was determined for glucose (244.46 g/kg), fructose (197.92 g/kg), sucrose (208.25 g/kg), and sorbitol (98.02 g/kg), organic acids for malic acid (24.06 g/kg), and for polyphenol compounds were 5-O-caffeoylquinic acid (66.31 mg/kg), and rutin (58.06 mg/kg). Applied principal component analysis has been useful for distinguishing the plum cultivars from three areas in Norway where copper, iron, potassium, magnesium, manganese, and sodium; sucrose, ribose, maltose, and raffinose; p-hydroxybenzoic acid, rutin, ferulic acid, kaempferol 7-O-glucoside, p-coumaric acid, and 5-O-caffeoylquinic acid were the most influential. In regard to human health and future breeding work that will have the aim to produce functional food with high health-related compounds, the plum cultivar ‘Mallard’ should be underlined due to the high level of elements, ‘Valor’ due to high sugar content, ‘Helgøyplomme’ due to content of organic acids, and ‘Diamond’ due to the content of phenolic compounds. © 2023 by the authors.

AB  - Viticulture is of great economic importance in the southern part of Bosnia and Herzegovina, thanks to favorable climatic conditions and a long-standing tradition of growing vines. The assortment is dominated by international varieties, as well as some autochthonous and domesticated varieties. The subject of the research is the analysis of the quality of Cabernet Sauvignon, Merlot, Vranac, and Blatina varieties at two localities in Herzegovina during the period 2020–2021. The paper examined the most important economic and technological characteristics, grape quality, and berry phenolic profile. A particularly pronounced variation of the tested characteristics during the research period was observed in the Merlot and Blatina varieties, while the Cabernet Sauvignon and Vranac varieties showed a slightly higher stability of the tested characteristics. Poorer grape quality during the research period was registered with the Blatina variety, which can be considered a varietal characteristic to some extent. The analyzed grape varieties were rich in polyphenols, and the impact of grape variety on the berry phenolic profiles was confirmed. The most abundant polyphenols in the analyzed grape samples were quercetin 3-O-glucoside and catechin gallate, followed by kaempferol 3-O-glucoside. The highest values of polyphenols were found mainly in the samples originating from Trebinje. Indigenous Balkan grape varieties (Vranac and Blatina) stood out with particularly high contents of some phenolics. Research has shown that climatic conditions have a significant influence on the most important characteristics of grapes, which are conditioned by genotypic specificities. The conditions for growing vines in the conditions of Herzegovina enable high quality in the production of grapes, especially the Cabernet Sauvignon and Vranac varieties. The autochthonous variety Blatina shows significant variations in grape quality during the test period, which was confirmed by the results of a larger number of studies in the previous period. © 2023 by the authors.

AB  - The Zn(II) complexes [Zn(HLSe2)2](NO3)2∙CH3OH (2-NO3-Se) and [Zn(HLSe3)2](NO3)2·DMF (3-NO3-Se) with selenazolyl-hydrazone ligands 4-(4-methoxyphenyl)-2-(2-(pyridin-2-ylmethylene)hydrazinyl)-1,3-selenazole (HLSe2) and 4-(4-methylphenyl)-2-(2-(pyridin-2-ylmethylene)hydrazinyl)-1,3-selenazole (HLSe3) have been synthesized and characterized using singe crystal X-ray diffraction analysis. Antiproliferative activities of 2-NO3-Se and 3-NO3-Se, the corresponding ligands and sulphur isosteres of the complexes and the ligands were determined on non-malignant HTR-8/SVneo extravillous trophoblast cell line and malignant JEG-3 and JAr choriocarcinoma cell lines. All Zn complexes exhibited cytotoxic effect, comparable to that of a reference metal-based drug, cisplatin. The antioxidant activity of all compounds was determined in three antioxidant assays: ORAC (Oxygen Radical Absorbance Capacity), ABTS [(2,2′-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt] and CERAC [Ce(IV)-based reducing capacity]. As a result of synergy between Zn(II) and selenazolyl-hydrazone ligands, the complexes 2-NO3-Se and 3-NO3-Se appeared to be more active than Trolox, which is not the case for their sulfur counterparts. In-silico calculations of ADME properties pointed that the compounds possess some of desirable Lipinski rule principles. Applied algorithms did not report the compounds as potential PAINS or covalent inhibitors, although due to high molecular weight none of the compounds represent a potential lead compound. Toxicity prediction of the compounds is performed using machine learning models. The complexation of the ligands most likely reduces their toxicity or reduces their negative metabolic effects. © 2023 Elsevier B.V.

AB  - Varroa destructor is a parasitic mite responsible for the loss of honey bee (Apis mellifera) colonies. This study aimed to find a promising marker in honey for the bee colony infestation level using fluorescence spectroscopy and biochemical analyses. We examined whether the parameters of the honey samples’ fluorescence spectra and biochemical parameters, both related to proteins and phenolics, may be connected with the level of honey bee colonies’ infestation. The infestation level was highly positively correlated with the catalase activity in honey (r = 0.936). Additionally, the infestation level was positively correlated with the phenolic spectral component (r = 0.656), which was tentatively related to the phenolics in honey. No correlation was found between the diastase activity in honey and the colonies’ infestation level. The results indicate that the catalase activity in honey and the PFC1 spectral component may be reliable markers for the V. destructor infestation level of the colonies. The obtained data may be related to the honey yield obtained from the apiaries. © 2023 by the authors.

AB  - This study aimed to show aromatic profile of wines produced from two autochthonous grape cultivars Krstač (K) and Žižak (Z). During the wine production two enzymatic preparations (EP) Lallzyme cuvee blanc (CB) and Lallzyme enzymatic preparation β (EB) and different time of skin contact (4 and 8 h) were applied. Aromatic compounds were detected by GC/FID–MS ana­lysis. Significantly higher content of total detected aromatic compounds com­pared to appropriate controls (168.54 and 161.72 mg L-1) was observed for K EB4h (176.33 mg L-1) and Z CB4h (177.29 mg L-1) wines. Skin contact and usage of EP mostly increased content of 2-phenylethyl and isoamyl alcohols. Wines from both varieties showed higher content of hexanoic and octanoic acids compared to the control. It is interesting to emphasize that content of esters that are responsible for fruity aroma of wine which is important for plea­sant taste (isoamyl acetate – banana, ethyl hexanoate – ripe banana, 2-phe­nyl­ethyl acetate – powerful fruity rose like) were increased in all samples com­pared to the controls. The highest grades, after sensory evaluation, were obtained for K EB 8h (18.0 out of 20.0) and Z CB 8h (18.2 out of 20.0).

AB  - The present work determined complete mineral profile of four different types of grains (spelt, soybean, maize, and buckwheat) grown under two growing systems – conventional and organic. The contents of 20 macro-, micro and trace elements were analysed in the examined grains by inductively coupled plasma-optical emission spectrometry (ICP-OES). In most samples, nine elements were present in concentrations higher than 10 mg/kg. The remaining elements were present at lower concentrations or in traces or not detected in certain samples. Aluminium and arsenic, as two toxic elements, were detected only in organic buckwheat grains. Based on the obtained results for the mineral contents, a nutritive assessment of the quality of grains of spelt, soybean, maize, and buckwheat were made. Results of nutritional assessment showed that spelt, soybean, and buckwheat grains could potentially be good sources of several minerals for human diet. On the other hand, the presence of some toxic elements, such as cadmium and strontium, should be monitored. Results of principal component analysis (PCA) and hierarchical cluster analysis (HCA) shown that the mineral composition, to a much greater extent, depended on the botanical origin of grains as compared to the production system © 2022. AB  - Vegetables are important contributors to a healthy diet, and their adequate daily intake can help prevent some of the major illnesses. The aim of the study was to examine the content of the major and trace elements in selected organically grown (OG) and conventionally grown (CG) vegetables (cabbage, kohlrabi, Brussels sprout, beetroot, carrot, potato, and onion), taken from city green markets. Multi-elemental analysis was carried out by inductively coupled plasma method with optical emission spectrometry (ICP-OES). Nutritional quality evaluation in comparison to nutritional reference values was done. In studied vegetables, Al, Ca, K, Fe (with the exception of organic kohlrabi), Mg, Na, P, S, and Zn were quantified in all samples, whereas As, Cd, Co, Hg, Se, and V were below the limit of detection for these elements. Macroelements and trace elements were found at higher concentrations in OG and CG vegetables, respectively. Differences in concentrations of studied elements between the same vegetable species produced in two agricultural systems were significant, except for beetroot (p ≤ 0.05). Principal component analysis and hierarchical cluster analysis results showed that the botanical origin had higher influence on sample differentiation than the agronomic practice, which was in accordance with the results obtained by Mann-Whitney U test. Good quality of both OG and CG vegetables in respect of nutritionally beneficial elements was observed.

abstract = "Vegetables are important contributors to a healthy diet, and their adequate daily intake can help prevent some of the major illnesses. The aim of the study was to examine the content of the major and trace elements in selected organically grown (OG) and conventionally grown (CG) vegetables (cabbage, kohlrabi, Brussels sprout, beetroot, carrot, potato, and onion), taken from city green markets. Multi-elemental analysis was carried out by inductively coupled plasma method with optical emission spectrometry (ICP-OES). Nutritional quality evaluation in comparison to nutritional reference values was done. In studied vegetables, Al, Ca, K, Fe (with the exception of organic kohlrabi), Mg, Na, P, S, and Zn were quantified in all samples, whereas As, Cd, Co, Hg, Se, and V were below the limit of detection for these elements. Macroelements and trace elements were found at higher concentrations in OG and CG vegetables, respectively. Differences in concentrations of studied elements between the same vegetable species produced in two agricultural systems were significant, except for beetroot (p ≤ 0.05). Principal component analysis and hierarchical cluster analysis results showed that the botanical origin had higher influence on sample differentiation than the agronomic practice, which was in accordance with the results obtained by Mann-Whitney U test. Good quality of both OG and CG vegetables in respect of nutritionally beneficial elements was observed.",

AB  - Product authentication is one of the most important food quality assurances. Considering the importance of consumption of berry fruits with proven health-beneficial properties, high sensory values and rich composition in bioactive substances, the aim of this study was to evaluate a straightforward and simple procedure for the protein fingerprinting of berry seeds. For this purpose, protein profiles of 45 samples of genuine berry fruit cultivars (strawberry, raspberry, blackberry, black currant, blueberry, gooseberry, chokeberry, cape gooseberry, and gojiberry) were analyzed by SDS-PAGE electrophoresis in combination with advanced chemometric tools. The most important parameters for discrimination among berry seeds were polypeptides at 12.8; 15.1; 25.0; 26.4; 30.0; 41.8; 44.4; 46.0; 48.5; 52.3 and 56.4 kDa. Biomarkers obtained from the protein profile of berry seeds proved to be a powerful tool in the authentication of their botanical origin, as well as for potential detection of berry-based products adulteration.

AB  - Rosehip (Rosa canina L.) seeds are rich in bioactive compounds and nutrients and hence with a great potential to be employed in production of functional foods. This work aimed to evaluate the fatty acid composition of seed oil from wild and cultivated rosehip collected at different locations in the Republic of Serbia. Unsaturated fatty acids were dominant in majority of seed oil samples, with linoleic (LA), α-linolenic (ALA) and oleic (OA) acids (24.53–46.68 %, 4.73–12.39 % and 3.89–13.82 %, respectively) as the most abundant ones. Based on the analyses of most dominant bands in Raman spectra of seeds (∼1265 and ∼1660 cm-1) characteristic for unsaturated fatty acids, ANOVA revealed significantly higher content in two seed samples (5SW and 10SC). Ratios of UFAs/ SFAs, ω-6/ω-3 and LA/ALA and desirable fatty acids (DFA) indicated that most studied rosehip seed oils showed good quality. Factors such as genetic characteristics and agro-ecological conditions most likely affected FAs composition of seed oils. © 2022 The Authors

AB  - The emerging threat of bacterial resistance to antibiotics prompts the urgent search for biomaterials for the treatment of infectious disease. Here we report on the synthesis and characterization of a multiphasic nanocomposite comprising magnetic iron oxide and silver nanoparticles. The method of synthesis involved the combustion of a metalorganic complex and reduction of the silver ions that were exchanged and/or adsorbed on the surface of iron oxide. Different physical and chemical treatments coupled to the reduction process, including ultrasound and Lugol's iodine solution, respectively, homogenized the distribution of the silver nanoparticles on the iron oxide phase. Remarkably, using ascorbic acid as a reductant enhanced the magnetic properties of the material as a result of the reduction of the magnetic matrix alongside the silver cations. The treatment with ultrasound detached large amounts of silver from the iron oxide phase and resulted in the lowest amount of silver incorporated in the nanocomposite. Despite that, this treatment led to the highest antibacterial activity against both Gram-positive and Gram-negative strains, indicating that the homogeneity of the distribution of silver on the iron oxide matrix is a more important determinant of the antibacterial performance than the amount of silver incorporated in the material. At the same time, the treatment with Lugol's iodine equally increased the distribution homogeneity, but induced excessive ion exchange and crystal lattice substitutions, thereby adversely affecting the antibacterial performance. This has indicated that the mode of binding silver to iron oxide can compensate for the positive effects of homogeneous distribution with respect to the antibacterial performance.

AB  - The biological activity of Cd compounds has been investigated scarce since Cd has been recognized as a human carcinogen. However, the toxicity of cadmium is comparable to the toxicity of noble metals such as Pt and Pd. The paradigm of metal toxicity has been challenged suggesting that metal toxicity is not a constant property, yet it depends on many factors like the presence of appropriate ligands. Studies on anticancer activity of cadmium complexes showed that the complexation of various ligands resulted in complexes that showed better activities than approved drugs. In the present study, cadmium complexes with biologically potent thiazolyl/selenazoyl-hydrazone ligands have been prepared, and tested for their activity against different types of tumor cell models. The complexation of ligands with Cd(II) resulted in a synergistic effect. The antiproliferative activity study revealed that all complexes are more active compared to 5-fluorouracil and cisplatin. The mechanism of tumor cell growth inhibition reveal that selenium-based compounds induce cell death in T-47D (gland carcinoma) cells through apoptosis via caspase-3/7 activation. Additionally, their pro-apoptotic effect was stronger compared to etoposide and cisplatin. Nuclease activity, detected by gel electrophoresis, may be the possible mechanism of anticancer action of investigated complexes.

AB  - Earth-abundant, cheap and non-toxic zinc-based coordination compounds are drawing research attention as promising candidates for various applications, such as photoluminescent materials and anticancer agents. In this paper we report six zinc complexes (1–3-NO3 and 1–3-Cl) with pyridyl-based thiazolyl–hydrazone ligands, which differ in the nature of substituents at the ligands' periphery, anion type, and geometry around the metal ion. The complexes were characterized by single-crystal and powder X-ray diffraction analysis, as well as IR and NMR spectroscopy. The symmetrical complexes 2-Cl and 3-Cl, where zinc atoms are located at a two-fold axis, do not exhibit photophysical properties, unlike their asymmetrical analogs 2-NO3 and 3-NO3 with the same complex cation. Asymmetrical pentacoordinated 1-Cl and hexacoordinated 1-NO3 complexes exhibit photophysical properties. An admixture of allowed intra-ligand (1IL) and chloro (X)-to-ligand charge-transfer (1XLCT) electronic transitions is responsible for the fluorescence of the 1-Cl complex. The origin of the emission of the 1-NO3 complex is ascribed to an admixture of 3IL and ligand-to-ligand charge-transfer (3LLCT) forbidden electronic transitions, while for 3-NO3 most electronic excitations are of LLCT character. The thermal stability of the complexes is in accord with the strength of respective intermolecular interactions. The antiproliferative activity of the complexes was in the nanomolar range on some of the investigated cancer cell lines. Contrary to the increase of antiproliferative activity of the complexes in comparison to the free ligands in cancer cell lines, an acute toxicity determined in the brine shrimp assay follows the opposite trend. The overall results suggest that Zn(II) thiazoyl–hydrazone complexes have considerable potential as multifunctional materials.

AB  - Interest in Cd complexes has been growing in recent years. Cd complexes are considered a potential solution in the search for novel antibiotics that can fight antimicrobial resistance. In addition, Cd complexes draw attention to material chemistry. The main objective of this work was to prepare the first Cd(II) complexes with anionic forms of pyridine-based thiazolyl hydrazone (THs) ligands HLS2 [(E)-4-(4-methoxyphenyl)-2-(2-[pyridine-2-ylmethylene]hydrazinyl)thiazole] and HLS3 [(E)-2-(2-[pyridine-2-ylmethylene]hydrazinyl)-4-(p-tolyl)thiazole] and perform their structural and spectroscopic characterization, as well as stability in solution and upon heating. Studies related to their biological activities and possible electrochromic applications are also being conducted. Complexes [Cd(HLS2)2] (1) and [Cd(HLS3)2] (2) have been characterized by a single-crystal X-ray diffraction and computational analysis of intermolecular interactions responsible for their solid-state structures was performed. Thermal stability of 1 and 2 in the solid-state was analyzed by TGA/MS, where as their solution stability was determined by the spectrophotometric titration method. Electrochemical and in situ UV–Vis spectroelectrochemical analyses of 1 and 2 were carried out to determine redox mechanisms and the influence of the substituents and electrolytes on their redox responses. The antioxidant capacity of both complexes was tested in antioxidant assays, while their antimicrobial activity was tested against five Gram-positive and four Gram-negative bacteria, as well as against three fungi. The obtained results indicate their potent antioxidant capacity. The antimicrobial activity of investigated compounds on almost all tested bacterial strains was stronger than that of the standard antibiotic erythromycin. The results of docking studies indicate that the minor groove DNA is the possible biological target of 1 and 2. © 2022 John Wiley & Sons Ltd.

AB  - Previously, the cytotoxic actions of five Pd(II) complexes with bidentate N-heteroaromatic chelators (complexes 1–5) on a palette of several cancer cell lines were investigated. However, the results of the cytotoxic activity did not correlate with the hydrophobic character of the complexes. To gain further insight into the structure–activity relationship, essential for the design of novel potential drugs, other factors, such as non-specific interactions with cellular proteins, have to be taken into account. To explore the potential non-specific influence of the complexes on protein structures, ovalbumin (OVA) was chosen as a model system to mimic cellular non-specific crowding environments with high protein concentrations. A Fourier-transform infrared spectroscopy study implied that the binding of 3 and 4 led to only moderate alternations in the secondary structures of the protein, without the possibility to penetrate into hydrophobic core of the protein and disruption of protein native fold. Contrary, the effect of complex 5 on OVA secondary structures was concentration-dependent. While the lower concentration of complex 5 had no effect on OVA structure, a doubled concentration of complex 5 led to complete disruption of the content native-like secondary structures. The concentration-dependent effect of complex 5 on the changes in secondary structures and considerable increase in the exposure of OVA hydrophobic surfaces to water may be related to a potential crosslinking that leads to OVA aggregation. © 2022 Serbian Chemical Society. In 17 samples of six strawberry cultivars produced in Serbia, i.e., the common varieties Alba, Asia, and Clery as well as promising breeding materials (11.29.11, 11.34.6, and 11.39.3), the anthocyanin profile as well as antimicrobial and antioxidative activity profiles were determined. All investigated extracts showed antioxidative and antibacterial activities against Gram-negative Aliivibrio fischeri. The responses were quite similar in number and intensity. The HPTLC-DPPH• scavenging assay and HPTLC-Aliivibrio fischeri bioassay coupled with high-resolution mass spectrometry identified pelargonidin-3-O-glucoside (Pg-3-glc) as the main anthocyanin and prominent antioxidative and antimicrobial compound in strawberries. The density functional theory calculations at the M06-2X/6-31+G(d,p) level showed that Pg-3-glc quenches free radicals via sequential proton loss electron transfer mechanism in water and in pentyl ethanoate, where the 5-OH group is the most reactive site for proton and hydrogen atom transfer. The results were confirmed via spectrophotometry. The highest total phenolic content was found in Clery and 11.39.3, while statistically significant differences between the genotypes regarding the antioxidant activity were not confirmed. Although very similar in the anthocyanin, antioxidative, and antimicrobial profile patterns, the strawberry genotypes were successfully classified using principal component analysis.

Analysis of Apple Fruit (Malus × domestica Borkh.) Quality Attributes Obtained from Organic and Integrated Production Systems

AB  - The aim of this study was to compare total phenolic content (TPC), radical-scavenging activity (RSA), total anthocyanin content (TAC), sugar and polyphenolic profiles of two apple cultivars (‘Discovery’ and ‘Red Aroma Orelind’) from organic and integrated production systems in climatic conditions of Western Norway. Sixteen sugars and four sugar alcohols and 19 polyphenols were found in the peel, but less polyphenols were detected in the pulp. The peel of both apples and in both production systems had significantly higher TPC and RSA than the pulp. The peel from integrated apples had higher TPC than the peel from organic apples, while organic apples had higher TAC than the integrated. Sucrose and glucose levels were higher in organic apples; fructose was cultivar dependent while minor sugars were higher in integrated fruits. The most abundant polyphenolic compound in the peel of the tested cultivars was quercetin 3-O-galactoside, while chlorogenic acid was most abundant in the pulp. Regarding polyphenols, phloretin, phloridzin, protocatechuic acid, baicalein and naringenin were higher in organic apple, while quercetin 3-O-galactoside, kaempferol 3-O-glucoside, chlorogenic acid and syringic acid was higher in integrated fruits. In conclusion, organic ‘Discovery’ and integrated ‘Red Aroma Orelind’ had higher bioavailability of health related compounds from the peel and the pulp.

AB  - Abstract: Nickel ferrite nanoparticles were synthesized via thermal decomposition of β-diketonato complexes of nickel(II) and iron(III). The mechano-chemical activation of the complex precursors was used to ensure the increase in the reaction activity and consequently reduce thermal decomposition temperature. The prepared sample was thoroughly characterized by X-ray powder diffraction, FT-IR spectroscopy, scanning electron microscopy (SEM) coupled with electron dispersive spectroscopy (EDS), and transmission electron microscopy (TEM). X-ray powder diffraction and FT-IR confirmed the spinel phase of the investigated powder. SEM and TEM revealed the ultrafine nature of nanosized polygonal particles, with a pronounced agglomeration effect. The capacity for electrocatalytic applications was examined using cyclic voltammetry (CV) and electrical impedance spectroscopy (EIS). Electrocatalytic measurements pointed out that the addition of 5% of nickel ferrite as a modifier to carbon paste electrode caused a current increase and a decrease of the EIS semicircle. Further increase in the amount of the modifier decreased heterogeneity of the electrode surface and served as excellent sensor for the detection of gallic acid in the concentration range from 1 to 10 µM with the detection limit of 0.27 µM. This unambiguously indicated the significant improvement in electrode transfer rate and better characteristics of the diffusion layer. © 2022, Pleiades Publishing, Ltd.

AB  - Research background. Considering the importance of consumption of berry fruits with
proven health-beneficial properties and difficulties in quality control of products of specific botanical and geographic origin, a fingerprint method was developed, based on advanced data analysis (pattern recognition, classification), in order to relate the variability
of nutrients in the selected cultivars to primary metabolite profile.
Experimental approach. Forty-five samples of genuine berry fruit cultivars (strawberry,
raspberry, blackberry, black currant, blueberry, gooseberry, chokeberry, cape gooseberry
and goji berry) were characterized according to chromatographic profiles of primary metabolites (sugars, lipids and fatty acids) obtained by three chromatographic techniques
(high-performance thin-layer chromatography, gas chromatography coupled to mass
spectrometry, and high-performance anion-exchange chromatography with pulsed amperometric detection).
Results and conclusions. Comprehensive analysis allowed monitoring and identification
of metabolites belonging to polar lipids, mono-, di- and triacylglycerols, free fatty acids,
free sterols, sterol esters, mono- to heptasaccharides and sugar alcohols. Chemical fingerprint of berry seeds showed the uniformity of primary metabolites within each fruit species, but revealed differences depending on the botanical origin. All three chromatographic methods provided a discriminative, informative and predictive metabolomics
methodology, which proved to be useful for chemotaxonomic classification.
Novelty and scientific contribution. A novel methodology for the identification of bioactive compounds from primary metabolites of natural products was described. The proposed untargeted metabolite profiling approach could be used in the future as a routine
method for tracing of novel bioactive compounds. The knowledge of metabolite composition obtained in this study can provide a better assessment of genotypic and phenotypic differences between berry fruit species and varieties, and could contribute to the development of new breeding programs.

AB  - Blueberries, which are recognized by their colored fruits and exquisite flavor and taste, are a great source of bioactive substances with potential functional properties. For the purpose of this study, the blueberry cultivars ‘Duke’, ‘Chandler’ and ‘Bluecrop’ were picked at four different times. The aim of the study was to compare the cultivars and determine the best time for picking fruits for table consumption and to produce berries that can be used as functional foods with elevated levels of bioactive compounds. According to principal component analysis (PCA), the most influential traits for distinguishing different times of harvest in the ‘Duke’ cultivar were sorbitol, glucose, sucrose, and turanose; for the cultivar ‘Chandler’, they were caffeic acid, aesculetin, and quercetin; for the ‘Bluecrop’, they were fructose, maltose, radical scavenging activity, and quercetin. Blueberry fruits aimed for table consumption were those harvested in the first two pickings of the cultivar ‘Duke’, in the first and third of the ‘Bluecrop’, and in the third picking time of the cultivar ‘Chandler’, due to the highest fruit size and very high level of sugar (mostly glucose and fructose). ‘Duke’ berries from the second and third harvest (high level of total phenolic content, radical scavenging activity, total anthocyanins, aesculin, quercetin, and isorhamnetin), ‘Chandler’ from the first and third (the highest p-hydroxybenzoic acid, aesculetin, caffeic acid, phloridzin, kaempferol, kaempferol 3-O-glucoside, quercetin 3-O-rhamnoside, rutin, and quercetin) and ‘Bluecrop’ from the third harvest (highest level of total phenolics, radical scavenging activity, quercetin, rutin, quercetin 3-O-glucoside, kaempferol, quercetin 3-O-rhamnoside, kaempferol 3-O-glucoside, and isorhamnetin) had the highest levels of health-promoting compounds. © 2022 by the authors.

AB  - This study presents a detailed characterization of 27 honey samples from the Tara Mountain region in Serbia using different comprehensive techniques and methods. The types of the honey samples were defined as monofloral (4 samples), honeydew (5 samples) and polyfloral (18 samples) honey based on determined polyphenol content, antioxidant activity, electrical conductivity and melissopalynological analyses. Physicochemical parameters such as pH (4.13–4.94), diastase activity (24.20–41.70 DN), acidity (14.60–29.70 meq/kg), content of 5-(hydroxymethyl)furfural (in range below 5, up to 16.90 mg/kg), sucrose (0.20–3.90 g/100 g), and moisture content (15.01–19.23%) confirmed the required quality of the honey samples. Sensory analysis revealed honey characteristics favorable to consumers. Analyses of 19 phenolic compounds using ultra-high-performance liquid chromatography with a diode-array detection and triple quadrupole mass spectrometry (UHPLC-DAD-MS/MS) revealed six phenolic acids and 13 other compounds from the group of flavonoids and their glycosides. In all the samples the highest content was determined for p-coumaric acid, followed by caffeic acid and pinocembrin. Besides total phenolic content and radical scavenging activity, antimicrobial activity was also examined. Most honey samples showed bactericidal activity against Staphylococcus aureus and bacteriostatic activity against Escherichia coli, while none of the honey samples inhibited the growth of Candida albicans. Chemometric analyses were applied for an in-depth study of the results to further evaluate the characteristics of the honey samples studied. Principal component analysis (PCA) was used for assessing the differences in physicochemical parameters, polyphenols content and antioxidant capacity between honey samples. AB  - Using modern analytical techniques, a comprehensive study of the chemical composition of fruits from apple cultivars grown in Western Norway during 2019 and 2020 was done. Metals, sugars, organic acids, antioxidant tests, and polyphenol content have been observed. In all investigated samples, the most dominant sugars were glucose, fructose, and sucrose. Among 11 tested organic acids, the dominant was malic acid, followed by citric and maleic acid. The most common metal was potassium, followed by magnesium and zinc. The quantification of polyphenols showed that among the 11 quantified polyphenols, chlorogenic acid, quercetin 3-O-rhamnoside, quercetin 3-O-glucoside, quercetin, and phlorizin were the most abundant. A detailed study of the polyphenolic profile of nine investigated apple samples provided 30 identified polyphenolic compounds from the class of hydroxybenzoic and hydroxycinnamic acids, flavonoids, and dihydrochalcones. In addition to the identified 3-O-caffeoylquinic acid, its two isomers of 5-O-caffeoylquinic acid and three esters were also found. Present polyphenols of the tested apples provided significant data on the quality of Norwegian apples, and they contribute to the distinguishing of these apple samples. AB  - The peach stones and kernels are easily available biowaste which could be useful for the extraction of nutritionally important compounds such as fatty acids. Except in industry, characterization of stones and kernels could be useful in pomology to describe different cultivars, and for selecting new parents in a breeding program. A total of 25 samples of stones and kernels from various peach cultivars that differed in origin and ripening time, but growing in the same climatic conditions, were characterized by fatty acids composition and physical properties. This work confirmed that unsaturated fatty acids (oleic and linoleic fatty acids) were the most represented in peach kernel oil and their content depended of peach genotype. Additionally, the fatty acids in combination with length, weight, and moisture of peach kernels could be used as a parameter of authenticity assessment. This research may contribute for the peach cultivar discrimination and recommendation of cultivars/genotypes with high kernel quality which could be used for the extractions of oil rich in unsaturated fatty acids and further use in food, pharmaceutical and cosmetic industry. The analyses of rutin and quercetin content in honey were performed by high-performance liquid chromatography (HPLC) with ultraviolet (UV) detection. The content of rutin and quercetin in the flower was also determined to check the quality of the herbal drug used, as well as to evaluate the effectiveness of the extraction.ResultsThe extraction of rutin and quercetin, in a honey sample using 10% of the Sophora flower, stored at room temperature, for 40 days, was the most intense one (150.24 mg/kg of rutin and 1338.93 mg/kg of quercetin). Sophora flower corresponds to the pharmacopoeia requirements for the quality of an herbal drug. The concentrations of rutin and quercetin in acacia honey were 0.08 and 0.14 mg/kg, respectively. The concentration of rutin in honey from the melliferous pasture of the Sophora flower was 0.40 mg/kg, while quercetin was below the detection limit (0.1 mg/kg).ConclusionsHoney, enriched with rutin and quercetin from Sophora flower, had sensory acceptability and pleasant taste and aroma.
