AB  - The paper presents the results of a two-year study of the influence of different vine loads with fertile buds on the agrobiological, economic and technological characteristics of the Cardinal variety. The research was carried out in the vineyard of the Biotechnical Faculty in Podgorica subregion. Four different vine loads with fertile buds were applied: 8, 12, 16 and 18 buds. The results of the research showed that the applied loads had a significant impact on the examined parameters of the Cardinal variety. The obtained results on the average yield of grapes show that the lowest value of this parameter was the variant with a load of 8 buds-1.45 kg m-2, while the highest grape yield was recorded for the variant with a load of 16 buds (2.03 kg m-2). V1 variant had the highest average bunch (386 g) and berries (7g) weight, while V4 had the smallest bunch (285 g) and berries (5.95 g) weight. The quality of the grapes also varied significantly under the influence of the vine load. The highest sugar content in must was recorded in the variant with a load of 8 buds-15.79%, and the lowest in the variant with 18 buds-14.30%. The acid content did not differ significantly between the tested variants. V4 variant had the highest-4.30 g/l, and V1 and V3 variants-4.05 g/l measured the lowest acid content. © 2023, University of Montenegro. All rights reserved.

Characteristics of newly created grapevine varieties Vožd and Vladun

AB  - This paper presents the most important morphological and production-technological characteristics of newly created grapevine varieties Vožd and Vladun, intended for the production of red wines. The newly created varieties were compared with the standard variety Cabernet Sauvignon during the three-year period of testing (2015-2017) in the relation studied properties. The variety Vožd obtained from the crossing combination Začinak x Prokupac, and the variety Vladun from the crossing combination Merlot x Župski Bojadiser. The investigated varieties differed considerably in terms of some morphological traits and represents unique genotypes. The newly recognized varieties have a hermaphrodite type of flower, dense bunch, globose berry shape and blue black color of berry skin. The yield, bunch weight, bunch length and bunch width were higher at both varieties than for the standard variety. The Vožd variety had a yield of 1.29 kg/m2 and a bunch weight of 174.3 g, and the Vladun variety had a yield of 0.87 kg/m2 and a bunch weight of 153.7 g. For the standard variety the grape yield was 0.78 kg/m2 and the bunch weight was 134.0 g. The content of sugar and total acids in the must of the Vožd variety was 20.5% and 6.5 g/l, while for the Vladun variety it was 21.8% and 6.0 g/l respectively. Wine of both varieties was drinkable, harmonious, with a specific varietal of smell and taste and contained 12.1 vol. % of alcohol (Vožd variety), or 12.6 vol. % of alcohol (Vladun variety). Due to the many positive features of the grapes and wines from the Vožd and Vladun varieties, their spread to the production vineyards of Serbia is expected.

EFFECT OF EARLY BERRY THINNING AND GIRDLING ON GRAPE QUALITY OF CV. VICTORIA

AB  - The research was carried out at University of Belgrade Faculty of Agriculture experimental station “Radmilovac” on table grape Victoria cv with aim to improve grape quality and with consideration the introduction of these ampelographic measures in regular grapevine growing.
The research included two treatments of berry thinning (thinning bunch tip - BtT and first lateral wink -BtW), girdling (G) and control (C). Combined effect of berry thinning and girdling were not examined. The following features were examined: fertility and yield, bunch and berry dimensions, bunch and berry structure, sugar content and total acidity.
The thinning treatments did not have significant effect on uvometric parameters and grape quality, but they improved the yield by 41.7% (BtW) and 51.4% (BtT) in comparison to the control. It can be explained by bad fruit set influenced by unfavourable meteorological conditions during flowering in control treatment. Berry thinning achieves a better fruit set. Berry thinning should be applied as a regular ampelographic measure according to weather conditions during flowering phonological stage.
Results confirm the positive influence of girdling. The yield was increased by 88,34% compared to control, berries had a higher diameter (for about 1mm with respect to control), fruit set and bunch mass were in higher level against other treatments, sugar content (17,00%), total acidity (5,75 g/L) were improved too.
Girdling can be introduced as a regular ampelographic measure in the table cultivars vineyards, in order to obtain higher yields and better quality of table grape.

Influence of Different Defoliation Timings on Quality and Phenolic Composition of the Wines Produced from the Serbian Autochthonous Variety Prokupac (Vitis vinifera L.)

AB  - The variety Prokupac is the dominant variety in the vineyards of Southern Serbia, which produces quality wines of characteristic and unique tastes. In the agroecological conditions of the Prokuplje vine district, the influence of manual defoliation on the phenolic profile of the wine produced from the variety Prokupac was examined. Four experimental treatments with different timings of manual defoliation were applied: early defoliation—treatment I, early defoliation— treatment II, late defoliation—treatment III and the control. The phenolic profile of the wine was determined for the three treatments of defoliation and the control treatment. Additionally, a multivariate analysis was applied on the obtained results, together with already published data (grape seeds and skins phenolic profiles). Identification and quantification of the phenolic compounds was performed using ultra-high-performance liquid chromatography (UHPLC) with an ultraviolet multi-diode detector (DAD) and mass detector with three analyzers—triple quadrupole (QQQ). Based on the obtained results, it was determined that there are significant differences between the experimental treatments in the content of individual polyphenols, total polyphenols and the antioxidant capacity. Twenty (20) phenolic compounds were identified in the wine samples of the experimental treatments. Defoliation significantly affected the variations of the contents of phenolic acids and flavonoids. In treatment III, the highest content of gallic acid was obtained, while the treatments with early defoliation did not differ in relation to the control sample. Early defoliation in treatments I and II had an effect on the phenolic composition of the wine by favoring the accumulation of flavonol, while the content of hydroxycinnamic acid and total anthocyanins (TAC) was higher in treatment III. The TAC increases with later defoliation. The wines obtained by the defoliation treatments did not show higher antioxidant activity compared to the control sample. A principal component analysis resulted in clustering of the samples based on the phenolic components characteristic for each group of samples.

AB  - Characterisations of thirty grapevine varieties (Vitis vinifera L.) from the experimental vineyard ‘Radmilovac’ were conducted using a large number of OIV descriptors and eight highly polymorphic microsatellite loci. The ampelographic description contained 45 features. Molecular characterisation of selected microsatellite loci was performed using capillary electrophoresis fragment analysis. Dendrograms based on ampelographic and genetic data resulted in three groups of varieties. Qualitative ampelographic characteristics tended to manifest significant differences. The most common deviation among varieties within the group was in the characteristic OIV 051 (colouration of the upper side of a young leaf). Genetic characterisation of SSR markers through analyses of a large number of varieties contributes to better organisation of grapevine collections and simpler identification of varieties, as well as data exchange. When identifying the varieties, the results of the DNA analysis should be combined with the ampelographic descriptors, in order to select grapevine varieties with desirable viticultural and oenological traits. Integration of the obtained genetic data with the ampelographic data is of utmost importance for accurate identification of the varieties and offers a significant means for the preservation and use of the varieties.

AB  - The aim of this study was to study the impact of crop load on the yield and grape quality of ‘Merlot’ and ‘Vranac’ (Vitis vinifera L.) in Trebinje vineyard. The crop load levels studied in this trial were 9 buds (V1) and 12 buds (V2) per vine at each variety trained on Lenz-Moser bilateral cordon system. The impact was determined by measurements of yield per vine and grape quality characterized by the contents of total soluble solids, titratable acidity, total phenolics, total flavonoids and by total antioxidant capacity. V2, compared to the V1, showed the potential for increasing grape yield only for Merlot variety under experimental conditions. The results of this study also showed a positive correlation between total phenolics/flavonoids and total antioxidant capacity of grape berries in both varieties, regardless of crop loads applied.

Influence of vine loads with fertile buds on grape yield and quality of variety ŽiŽak in podgorica vineyard area

AB  - Results of a two-year study of the influence of different vine loads with fertile buds on elements of grape yield and quality of Žižak grape variety are presented in this paper. The research was conducted in the Podgorica sub region, at the Lješkopolje site. Four different vine loads with fertile buds were applied: 14 buds, 18 buds, 20 and 24 buds per vine. The results of this research show that the applied loads significantly influence the examined parameters of the autochthonous variety Žižak. The highest percentage of developed and fertile shoots, as well as the average number of flowers per bud, had a variant with load of 14 buds. The relative coefficient of yielding in all examined load variants had mean values. In terms of the number of flowers per fertile shoot in the two-year average, variants with a load of 18 and 14 buds (1.44 and 1.39) stood out. The highest yield of grapes in the two-year average had the variant with a load of 24 buds-3.60 kg/vine, while the highest bunch weight had the variant V1-185 g. The quality of grapes also varied significantly under the influence of the vine load with fertile buds. The highest sugar content in must had variant with a load of 18 buds (22.32%), while the highest acid content (6.27g/l) was recorded in the variant with 24 buds per vine.

An insight into chemical composition and bioactivity of 'Prokupac' red wine

AB  - Autochthonous variety 'Prokupac' (Vitis vinifera L.) red wines with the addition of selected aromatic herbs (Artemisia absinthium, Cinnamomum zeylanicum, Glycyrrhiza glabra and Pimpinella anisum L.) were evaluated for chemical composition and biological activity. Furthermore, their polyphenolic profiles were determined by HPLC-DAD. While total phenolic (TPC) and flavonoid (TFC) contents, along with antioxidant activity, were significantly higher in all examined wine samples, the content of total anthocyanins was decreased, compared to a pure 'Prokupac' wine, used as the control one. On the other hand, 'Prokupac' wines with the addition of cinnamon (S. zeylanicum) and wormwood (A. absinthium) displayed highest antioxidant (EC50, 0.021 +/- 0.001 mg/mL) and antibacterial (Enterococcus faecalis, MIC/MBC 15.63/62.50 mu L/mL) activities, respectively. The study showed that 'Prokupac' wine with the addition of cinnamon was significantly enriched both with TPC and TFC, compared to control wine (p  lt  0.05), which may contribute to its market potential.

AB  - The influence of leaf area and various variants of manual defoliation on the phenolic profile of the Prokupac variety grape berry were investigated in the agroecological conditions of southern Serbia. The following four trial variants of manual defoliation were assessed: Early defoliation-variant I (flowering stage, 50% open flowers); early defoliation-variant II (grape size 3-5 mm); late defoliation-variant III (onset of grape ripening, veraison); and control (no defoliation). The first six leaves of each primary shoot were removed from all defoliated vines. The greatest assimilation area of primary and lateral shoots during the study was observed in the control, i.e., the trial variant with no defoliation. Defoliation significantly decreased the grape yield of the all three defoliated variants in regard to the control. The phenolic profile of the three variants and control was established by analyzing the grape seeds and skin. Based on the collected results for the Prokupac variety, significant differences between the trial variants were established regarding the content of phenols and total polyphenols, as well as radical scavenging activity. Defoliation variants showed a significant effect on the total phenols content of grape skin. In all defoliation variants, as well as in the control, high amounts of ellagic acid were measured. Resveratrol was identified only in grape skin samples of the control variant. The removal of leaves increased the concentration of phenolic compounds in variants where early defoliation was applied. The highest total anthocyanins content was found in 2015 in variant I, where leaves were removed during the full flowering stage.

AB  - Grape brandy, known as Lozovaa', is one of the most produced alcoholic beverages in the Republic of Serbia. Muscat cultivars are highly priced in grape brandy manufacturing. Among the numerous factors, cultivar-specific characteristics have a significant influence on its quality and aroma profile. Pectolytic enzymes play a part in increasing intensity of the prefermentative aroma by hydrolysis of terpenic glycosides, from which the compounds that contribute to the aroma of brandy are released. In this study, grape brandy samples were produced from five Muscat table grapevine cultivars (Vitis vinifera L.) namely, Early Muscat, Radmilovac Muscat, Banat Muscat, Italia Muscat, and Muscat Hamburg, with the addition of pectolytic enzyme in two different concentrations or without it (control). A total of 58 volatile aroma compounds were detected by means of combined gas chromatographic-mass spectrometric (GC/MS) method. Ethyl esters of C-8-C-18 fatty acids (21) and terpene (16) compounds were considerably more abundant in all grape brandy samples compared to the other volatile compounds identified. Pectolytic enzyme, positively affected terpenes content in the brandy of all studied cultivars. The similarities between brandy samples produced from Muscat Hamburg (MH) and other Muscat cultivars may be attributed to the parentage of MH to those cultivars.

Wines were made from four clones of Prokupac variety (PR1, 40/1, PR6 and PR7) by application of different periods of maceration duration (1, 5 and 10 days). The effects of different species of selected wine yeasts and glucosidase enzymes on the quantity of resveratrol and TPC in wine made from PR6 variety were also investigated. The content of trans-resveratrol varied from 0.27 mg/L to 1.46 mg/L. The highest content of resveratrol was determined in Prokupac clone PR6, and the lowest in PR7 clone. An increase in resveratrol and TPC content was observed in all clones when the duration of maceration was prolonged. Wine produced by application of b enzyme preparation and 299 yeast had the highest concentration of total resveratrol (4.23 mg/L). The TPC was the highest in the wine made by combined application of yeast 299 and OE enzyme. The obtained results showed that by adequate selection of varieties, prolonged duration of maceration, application of appropriate species of yeast and enzyme preparations, it is possible to increase the content of resveratrol and other phenolic compounds in wine.
AB  - Cilj ovog istraživanja bio je da se ispita uticaj različitih klonova autohtone srpske sorte Prokupac kao i postupak vinifikacije na sadržaj transi cisrezveratrola i sadržaj ukupnih polifenola (SUP) u vinima. Vina su proizvedena od četiri klona sorte Prokupac (PR1, 40/1, PR6 i PR7) primenom različitih dužina trajanja maceracije (1, 5 i 10 dana) za svaki klon. Takođe je ispitivan uticaj različitih izabranih kvasaca i enzimskih preparata glikozidaza na sadržaj rezveratrola i SUP u vinima proizvedenim od klona PR6. Sadržaj transi cisrezveratrola je određen HPLC metodom sa UV detektorom uz prethodnu tečno čvrstu ekstrakciju (SPE). Određivanje SUP je urađeno metodom po FolinČokalteu. Sadržaj transrezveratrola je bio od 0,27 mg/L do 1,46 mg/L. Najviši sadržaj rezveratrola je bio u klonu PR6 dok je najniži PR7. Povećanje sadržaja rezveratrola i SUP je primećeno kod svih klonova kada je maceracija duže trajala. Vino proizvedeno primenom enzimskog preparata glikozidaza b i kvasca 299 je imalo najviši sadržaj ukupnog rezvertrola (4,23 mg/L). Najviši SUP je bio u vinima proizvedenim primenom enzimskog preparata glikozidaza OE i kvasca 299. Dobijeni rezultati ukazuju da je izborom odgovarajućeg klona, dužine maceracije, primene odgovarajućeg kvasca i enzimskog preparata moguće povećati sadržaj rezveratrola i drugih fenolnih jedinjenja u vinu.

AB  - Growing interest in Serbia in adaptation of viticulture to climate change emerged from a recorded positive impact of summer increased draught on domestic wine quality. Another motivation is that viticulture has been recognized as one of the fastest developing agricultural sectors in Serbia and, to contain its growing potential, it is crucial to provide basis for its future sustainable development. Prioritization and implementation of adaptation measures in practice require reliable assessment of climate projections. For climate change impact assessment is used high resolution multi-model ensemble of nine regional climate models simulations, bias corrected, with two most probable future scenarios of GHG emissions RCP4.5 and RCP8.5, for the period 2016-2100. Analysis has been done for the near future, mid-century and end of the century periods. The periods are defined according to the IPCC 5th Assessment Report, which enables comparison of climate change impacts with a wider region, and preferably motivate future international collaboration and knowledge exchange.

The aim of this study was to: examine the variability of morphological traits within the clone collection, calculate the correlation among characteristics, detect associations among clones, identify the most useful variables for discrimination among clones and recommend clones suitable for further exploitation. Statistical analysis was performed based on the average values obtained from a three year long period. Relationship among the traits was presented with a correlation analysis which was done by using Pearson correlation coefficients. Cluster analysis was performed by applying Ward's method and Euclidean distances. The overall mean values showed high level of morphological variability. The highest level of variation was found in the number of berry seeds. Based on cluster analysis clones divided into three clusters I, II and III which include 7, 12 and 6 clones, respectively. Maximum Euclidean distance was observed between the clones 42/2 and 43/8, and minimum distance was observed between the clones 40/8 and 43/7. Parameters with high discriminating values were those related to bunch and berry size and structure. Most clones are perspective for further investigation and vine production, clones 40/4, 41/1 and 43/8 have large bunches and can be recommended as consummation grape.

AB  - organic production is a process that develops a viable and legitimate agricultural ecosystems. The link between man, agriculture and local environmental conditions, provides quality food for people, plants and animals in a healthy environment. There are a few basic principles and ideas that explain the production of organic food in the ecosystem. The organic viticulture production in which there is a balance between environmental conditions, varieties and methods of cultivation. The two main factors that determine the choice of location concepts and establishing assortments. Organic viticulture is widespread mainly in the Mediterranean countries of Europe such as Italy, France and Spain. The Mediterranean climate with hot, dry summers and constant air currents limiting the development of pests and diseases on grapevines. The same concept can be seen in California, USA and South Africa. In the wine-growing countries with humid climates apply to another concept of organic viticulture, and that is the use of varieties resistant to pests and diseases. In Romania, Germany, Hungary, Switzerland and northern France are represented interspecific hybrids and new resistant varieties. In the north-east of America, on the border with Canada, grown varieties Vitis labrusca and Vitis species in the south rotundifolia. However, in these humid regions is crucial in the selection of sites with appropriate climatic and soil conditions. The choice of suitable climatic conditions is important for conventional viticulture in order to get the best quality of grapes and wine.
AB  - Organska proizvodnja je proces koji razvija održive i opravdane agroekosisteme. Povezanost čoveka, poljoprivrede i lokalnih ekoloških uslova, pruža kvalitetnu hranu za ljude, biljke i životinje u zdravoj životnoj sredini. Postoji nekoliko osnovnih principa i ideja koji objašnjavaju proizvodnju organske hrane u ekosistemu. Organsko vinogradarstvo je proizvodnja u kojoj postoji ravnoteža između ekoloških uslova, sorte i načina kultivacije. Dva osnovna faktora koji određuju koncepte su odabir lokacije i utvrđivanje sortimenata. Organsko vinogradarstvo je široko rasprostranjeno uglavnom u mediteranskim zemljama Evrope kao što su Italija, Francuska i Španija. Mediteranska klima sa toplim i suvim letima i stalnim vazdušnim strujama ograničava razvoj bolesti i štetočina na vinovoj lozi. Isti koncept se ogleda u Kaliforniji, SAD-u i Južnoj Africi. U vinogradarskim zemljama sa humidnom klimom primenjuje se drugi koncept organskog vinogradarstva, a to je primena otpornih sorata na bolesti i štetočine. U Rumuniji, Nemačkoj, Mađarskoj, Švajcarskoj i Severnoj Francuskoj zastupljeni su interspecies hibridi i nove otporne sorte. Na severo-istoku Amerike, na granici sa Kanadom, gaje se sorte vrste Vitis labrusca, a na jugu vrste Vitis Rotundifolia. Međutim, u ovim humidnim oblastima presudan je izbor lokacije sa odgovarajućim klimatskim i zemljišnim uslovima. Izbor pogodnih klimatskih uslova je važan i za konvencionalno vinogradarstvo kako bi se dobili najbolji kvalitet grožđa i vina.

The link between man, agriculture and local environmental conditions, provides quality food for people, plants and animals in a healthy environment. There are a few basic principles and ideas that explain the production of organic food in the ecosystem. The organic viticulture production in which there is a balance between environmental conditions, varieties and methods of cultivation. The two main factors that determine the choice of location concepts and establishing assortments. Organic viticulture is widespread mainly in the Mediterranean countries of Europe such as Italy, France and Spain. The Mediterranean climate with hot, dry summers and constant air currents limiting the development of pests and diseases on grapevines. The same concept can be seen in California, USA and South Africa. In the wine-growing countries with humid climates apply to another concept of organic viticulture, and that is the use of varieties resistant to pests and diseases. In Romania, Germany, Hungary, Switzerland and northern France are represented interspecific hybrids and new resistant varieties. In the north-east of America, on the border with Canada, grown varieties Vitis labrusca and Vitis species in the south rotundifolia. However, in these humid regions is crucial in the selection of sites with appropriate climatic and soil conditions. The choice of suitable climatic conditions is important for conventional viticulture in order to get the best quality of grapes and wine., Organska proizvodnja je proces koji razvija održive i opravdane agroekosisteme. Povezanost čoveka, poljoprivrede i lokalnih ekoloških uslova, pruža kvalitetnu hranu za ljude, biljke i životinje u zdravoj životnoj sredini. Postoji nekoliko osnovnih principa i ideja koji objašnjavaju proizvodnju organske hrane u ekosistemu. Organsko vinogradarstvo je proizvodnja u kojoj postoji ravnoteža između ekoloških uslova, sorte i načina kultivacije. Dva osnovna faktora koji određuju koncepte su odabir lokacije i utvrđivanje sortimenata. Organsko vinogradarstvo je široko rasprostranjeno uglavnom u mediteranskim zemljama Evrope kao što su Italija, Francuska i Španija. AB  - This study presents the effect of some B vitamins and mineral nitrogen on yeast growth rate and the rate of the alcoholic fermentation of wine must, as well as on the amount of some wine components produced as by-products of the alcoholic fermentation of sugar. Thiamine, pantothenic acid and pyridoxine were added to the pasteurised sulphured must both as a sterile solution, each at a concentration of 1mg/l, and as a mixture. Secondary ammonium phosphate was added at a concentration of 0.8gl(-1) of must. The experiment showed that the addition of thiamine, the vitamin mixture and ammonium phosphate stimulated yeast growth and the course of the alcoholic fermentation of must, leading to an increased production of glycerine and volatile acids in the wine produced, whereas the supplementation with pantothenic acid and pyridoxine did not substantially enhance wine yeast growth, the fermentation process and the amount of must by-products.

AB  - A study was conducted during three years (2009 - 2011) to evaluate the cropping potential and quality of the grape variety Cabernet franc cultivated in the Trstenik vine growing region. The data obtained showed that Cabernet franc can be successfully grown under the environmental conditions of the Trstenik vine growing region as it produced good yields of high quality grape. Over the three-year period, the average yield per hectare was about 10 t, with the sugar and total acids contents being 200 g l-1 and 6.9 g l-1 respectively, suggesting optimum growing conditions for this variety in the study region.
AB  - U uslovima trsteničkog vinogorja u periodu 2009 do 2011. godine ispitivan je rodni potencijal i kvalitet grožđa sorte Kaberne fran. Rezultati pokazuju da se sorta Kaberne fran može uspešno gajiti u agroekološkim uslovima trsteničkog vinogorja. Sorta je iskazala dobru rodnost i dobar kvalitet grožđa. Prosečan prinos po hektaru u trogodišnjem periodu kretao se oko 10 t, sadržaj šećera bio je 200 g l-1 dok je ukupnih kiselina bilo 6,9 g l-1, što znači da je ispitivana sorta imala optimalne uslove za gajenje u ovom vinogorju.

Effect of alcoholic fermentation on the quality of grape brandies

AB  - Grape brandy is a product obtained by fermentation and distillation of crushed grapes of cultivated grapevine Vitis vinifera. Grape brandy quality depends on many factors such as: grapevine varieties, climate, soil, time and method of distillation, storage methods and other distillates. The grapevine variety 'Neoplanta' grown in the experimental field of the PD 'Center for Viticulture and Enology' in Niš was used in the experiment. Tests were performed in the laboratory of the Centre. Healthy grapes of harvest maturity were squashed by a stalk-removing electric crusher. Fermentation was performed in plastic containers in the presence of the indigenous microflora of wine yeasts. This paper presents the influence of pH and inorganic nitrogen added to the fermentation medium on the content of volatile components and concentrations of higher alcohols.
AB  - Lozovača ili lozova rakija predstavlja proizvod koji se dobija fermentacijom i destilacijom celog kljuka grožđa plemenite vinove loze Vitis vinifera. Kvalitet rakije lozovače zavisi od velikog broja faktora: sorte vinove loze, klime, zemljišta, vremena i načina destilacije, načina čuvanja destilata i dr. Za realizaciju ovog eksperimenta korišćeno je grožđe sorte vinove loze 'Neoplanta' koja se gaji na oglednom imanju PD 'Centar za vinogradarstvo i vinarstvo' u Nišu. Ispitivanja su izvedena u laboratorijskim uslovima Centra. Zdravo i tehnološki zrelo grožđe je izmuljano električnom muljačom koja odvaja peteljke. Fermentacija celokupnog kljuka grožđa je izvršena u plastičnim vrionim posudama u prisustvu autohtone mikroflore vinskih kvasaca. U radu je prikazan uticaj pH vrednosti i neorganskog azota dodatog u fermentacionu smešu na sadržaj isparljivih komponenti i koncentraciju viših alkohola.

AB  - This paper was aimed at characterizing the wine obtained from Oblacinska, a native sour cherry cultivar. To the best of our knowledge, this is the first paper with the most comprehensive information on chemical characterization of Oblacinska sour cherry wine. The chemical composition was characterized by hyphenated chromatographic methods and traditional analytical techniques. A total of 24 compounds were quantified using the available standards and another 22 phenolic compounds were identified based on the accurate mass spectrographic search. Values of total phenolics content, total anthocyanin content, and radical scavenging activity for cherry wine sample were 1.938 mg gallic acid eqv L-1, 0.113 mg cyanidin-3-glucoside L-1, and 34.56%, respectively. In general, cherry wine polyphenolics in terms of nonanthocyanins and anthocyanins were shown to be distinctive when compared to grape wines. Naringenin and apigenin were characteristic only for cherry wine, and seven anthocyanins were distinctive for cherry wine.

AB  - The grape yield per vine of cv. Cabernet Sauvignon (Vitis vinifera L.) was evaluated on the basis of digital image processing of vine part. Digital camera was mounted on tripod and used for taking photos of 1 x 1 m portions of canopy. The Adobe Photoshop software was used to analyse image for the colour counting of the blue pixels of grape in the quadrant region. The actual yield was obtained from the photographed vines by hand harvesting of sampled portions. Linear regression was used for calculation of the correlation between blue pixels and grape weight. The relatively strong relationship between blue pixels and grape weight (R2=0.91) was obtained. Based on these results, we can recommend this simple technique for yield forecasting.
AB  - U radu je prikazan metod procene prinosa grožđa po čokotu na osnovu primene analize nekih elemenata digitalne fotografije. Za analizu su korišćene kolor digitalne fotografije čokota vinove loze (Vitis vinifera L.) sorte Kaberne sovinjon na kojima je obuhvaćen deo sa zonom grozdova. Fotografisanje je izvršeno neposredno pred berbu grožđa, tako što je digitalna kamera montirana na tripod ispred rama koji je označavao zonu od 1 × 1 m2 i kojim je obuhvaćena cela zona grozdova jednog čokota. Za obradu snimljene fotografije korišćen je Adobe Photoshop program uz pomoć kojeg je izvršeno prebrojavanje svih tačaka i plavih tačaka (piksela) u označenom kvadratu. Odmah po izvršenom fotografisanju ispitivanog čokota, obrani su svi grozdovi i izmerena je njihova masa. AB  - Climate projections obtained from the coupled regional climate model EBU-POM (Eta Belgrade University - Princeton Ocean Model) driven by the Intergovernmental Panel on Climate Change Special Report on Emissions Scenarios (SRES), showed that the vineyard regions of Serbia tend to become warmer and dryer toward the end of 21st century. To evaluate how Serbian viticulture could be affected by a projected climate regime, several climatic variables and agro-climatic indices describing the suitability of a particular area for grapevine production were calculated, after a statistical bias correction was applied to the daily temperature and precipitation data from EBU-POM outputs. Comparison between climatic variables and agro-climatic indices for the reference period 1961-1990 and predicted values for the 2001-2030 period (under the SRES A1B scenario) and the 2071-2100 period (under the SRES A2 scenario) was made for 18 climatological stations placed mostly within, but also outside traditional viticultural regions. According to the obtained change trends it is likely that no significant disturbances in Serbian viticulture will occur over the next few decades, but considerable changes are expected by the end of the 21st century. Warmer and prolonged growing season with greater heat accumulation and longer frost-free period with decline in frost frequency would likely affect the yield and ripening potential of grapes and induce shifts in varietal suitability and wine styles. Projected changes may bring on the need for additional vineyard irrigation, but also open up the possibility that marginal and elevated areas, previously too cool for cultivation of grapevines, become climatically suited for viticulture.

Current list of table grape varieties and clones

AB  - List of table grape varieties which are actual for growing in Serbia are very traditional. Reason for that is probably relative small consumption of table grape, which are 4-5 kg per population. There is no professional or scientific justification. Large number of table grape varieties and clones of standard varieties had been created in the world and in us in last 20 years. Many grapevine varieties and clones had been imported in Serbia, and new varieties were created here in recent years. All this contributes to the higher quality and quantity offer of table grapes. If favorable ecological conditions have been added to this fact, we will have increased both production and consumption of table grape. The clones of standard table grape varieties: Afuz ali (966 and ISV 9), Muscat Hamburg (206 and 932), Muscat of Alexandria (308), Sultanina (919) and etc., with its features surpass population of varieties. Also, imported varieties: Matilda, Victoria, Michel Pallieri, Black Magic, Velika, Lival, Prima, Danlas and etc., supplemented varieties with different periods of maturation. Our new quality table grape varieties as Demir kapija, Karmen, Srbija, Lasta, etc., are found place in the standard production. Enriched grapevine list will affect that on both better production and consumption of table grape.
AB  - Sortiment stonih sorti koje se trenutno masovnije gaje u Srbiji je dosta tradicionalan. Verovatno tome doprinosi i relativno mala potrošnja stonog grožđa (svega 4-5 kg / stanovniku). Za to nema ni stručnog ni naučnog opravdanja. U poslednjih 20 godina u Svetu i kod nas stvoren je veliki broj novih stonih sorti i selekcionisan veliki broj klonova standardnih sorti. Ako se ovome dodaju i povoljni ekološki uslovi naših vinogorja svi su izgledi da ćemo imati povećanu proizvodnju i potrošnju stonog grožđa. Klonovi standardnih sorti: Afuz-ali (klon 966 i ISV 9), Muskat hamburg (klon 206 i 932), Aleksandrijski muskat (klon 308), Sultanina bela (klon 919) i dr., svojim osobinama nadmašuju populaciju sorti. Takođe, introdukovane sorte Matilda, Victoria, Michel Pallieri, Black magic, Velika, Lival, Prima, Danlas i dr., dopunjuju sortiment različitog perioda sazrevanja. Naše novije vrlo kvalitetne stone sorte Demir kapija, Karmen, Srbija, Lasta i dr., već su našle mesto u sortimentu. AB  - Grapevine growing of table varieties is very interesting, specially in Grocka vineyard area. Agroecological conditions of this vineyard area obtained regular and high results and satisfactory grape quality of table varieties of early ripening periods. The paper study the agribiological and commercial characteristics of new table varieties (Erli muskat, Radmilovački muskat i Banatski muskat). Investigation results show that the average grape yield portion of table grape, which is intend to market, and grape quality, gives important differences between varieties.
AB  - Ekološki uslovi većine vinogorja u Srbiji omogućavaju redovnu i visoku rodnost, kao i dobar kvalitet grožđa stonih sorti različitog perioda sazrevanja, a naročito ranog perioda sazrevanja. U radu su ispitivane agrobiološke karakteristike sledećih stonih sorti (Erli muskat, Radmilovački muskat i Banatski muskat). Dobijeni rezultati pokazuju da su ispitivane sorte pokazale izvesne razlike u pogledu pokazatelja rodnosti, prosečnog prinosa, kvaliteta grožđa i udela tržišno vrednog grožđa u ukupnom prinosu.

The influence of the size of vine living area to the characteristics of cultivar Cabernet Sauvignon

AB  - The paper shows the results of several years of testing the influence of the size of vine living area and the degree of vine loading with fruitful buds to the most important agrobiological and economic and technological characteristics of cultivar Cabernet Sauvignon. The results confirm beyond any doubt that the increase of vine living area is directly proportional to the increase of vegetative and fruitful potential of individual vines. Smaller vine living area (smaller distances between plantings) decreases fruitfulness of individual vines, and increases grape yield per 1ha. Better grape quality is obtained with larger vine area.
AB  - U radu su prikazani rezultati višegodišnjih ispitivanja uticaja veličine životnog prostora čokota i stepena opterećenja čokota rodnim okcima na najvažnija agrobiološka i privrednotehnološka svojstva sorte Kaberne Sovinjon. Rezultati nedvosmisleno potvrđuju da se povećanjem životnog prostora čokota povećavaju pokazatelji vegetativnog i rodnog potencijala pojedinačnih čokota. Smanjeni životni prostor čokota (manji razmak sadnje) smanjuje rodnost pojedinačnih čokota, a povećava prinos grožđa po 1ha. Bolji kvalitet grožđa dobija se pri većem životnom prostoru čokota.

Commercial and technological characteristics of new introduced interspecies grapevine hybrids

AB  - Results obtained by examining the most important commercial and technological characteristics for five introduced table grapevine cultivars, interspecies hybrids (Frumoasa, Rusmol, Vitjan, Vostorg and Kodrijanka) are represented in this paper. Cultivars were reciprocal compared. Obtained results showed considerable variation in respect of examined characteristics, but contemporary showed ability for successful growing in Grocka-vineyards-area conditions, and in other vineyards-area with the similar agro ecological conditions.
AB  - U radu su predstavljeni rezultati ispitivanja najvažnijih privredno tehnoloških osobina za pet introdukovanih stonih sorti interspecies hibrida (Frumoasa, Rusmol, Vitjan, Vostorg i Kodrijanka). Sorte su međusobno upoređivane. Dobijeni rezultati pokazuju znatna variranja u pogledu ispitivanih karakteristika, ali istovremeno ukazuju na mogućnost uspešnog gajenja u uslovima gročanskog vinogorja kao i drugim vinogorjima sličnih agroekoloških svojstava.
