AB  - Diseases and mortality of dairy cows are significant problems from the aspect of welfare as well as the economy of production. Monitoring and analysis of health and welfare conditions on farms are important prerequisites for their improvement. This paper presents an analysis of health and welfare condition on dairy farms in Republic of Serbia. The study was conducted on 16 commercial farms with total number of 4833 milking cows of Simmental and Holstein Friesian rase. The evaluation of health and welfare indicators was done according to Welfare Quality (R) Assessment Protocol for Cattle. Results obtained in this study showed that largest share of farms was estimated as enhanced (56.25%) and acceptable (43.75%) in terms of overall health state. The incidences for majority of the diseases below the set alert thresholds indicated no severe risk for dairy cows' welfare on examined farms. The exceptions were determined incidences of laminitis (37.65%), dystocia (4.18%) and mortality rate (6.70%) which nevertheless corresponds to their growing trend in the dairy farming. Although health of skin was evaluated as acceptable almost every fifth cow had at least a portion of the skin without hair while the presence of skin lesions was much less common (6.49%). With high share of dehorned cows in herd (78.9%) another serious welfare risk is the common practice of dehorning without aesthetics and/or analgesics implementation. Analyzing indicators of health and welfare on Serbian dairy farms it could be assumed that the most important risks derived from poor housing conditions and management omissions.

AB  - The aim of this study was to analyze the overall welfare state on Serbian dairy farms, as well to suggest measures for its improvement. The assessment was done according to Welfare Quality® Assessment Protocol for Dairy Cows on 16 selected commercial farms in which the cows of Simmental and Holstein-Friesian breeds were reared (N=4833). Welfare state on each farm was evaluated by relevant measures that indicated insurance of appropriate feeding, housing, health and behavior as basic principles of welfare. Overall score (0-100 points) enabled finally categorization of farms into one of four welfare category (not classified, acceptable, enhanced and excellent).Based on results, half of the farms were assigned to acceptable, and other half to enhanced welfare category. Housing conditions on the majority of farms (63%) were assessed as unacceptable (≤20 points) due to poor hygiene and discomfort. Cows were kept tied continuously on more than one third of farms which together with lack of pasture (17 days/year on average) restricting their comfort and freedom of movement. This may be also linked to low scored behavioral insurance (32points), especially inability to express its natural forms (6.7 points).Health condition was estimated as acceptable, but endangered welfare by high incidence of laminitis (38%), distocya (4.2%) and mortality (6.7%). Commonly performed dehorning procedure (79%) without anesthetic/analgesic application caused pain and stress in affected animals. Overall assessment score (2.5/5) showed the need for improvement in all areas of dairy cows' welfare, especially in terms of their housing and management.
AB  - Cilj ovog istraživanja bio je da se analizira stanje dobrobiti na mlečnim farmama u Srbiji, kao i da se predlože mere za njegovo unapređenje. Ocena stanja dobrobiti obavljena je putem Protokola za ocenu kvaliteta dobrobiti mlečnih krava na 16 odabranih komercijalnih farmi na kojima su gajene krave simentalske i holštajn-frizijske rase (N=4833). Stanje dobrobiti na svakoj od farmi procenjivano je na osnovu relavantnih pokazatelja koji ukazuju na stepen obezbeđenja odgovarajuće ishrane, uslova držanja, zdravlja i ponašanja kao osnovnih principa dobrobiti. Ukupan skor (0-100 poena) omogućio je konačnu kategorizaciju farmi u jednu od četiri kategorije stanja kvaliteta dobrobiti (nezadovoljavajuću, prihvatljivu, odgovarajuću i odličnu). Prema rezultatima istraživanja, jedna polovina farmi svrstana je u kategoriju prihvatljivog, a druga polovina farmi u kategoriju odgovarajućeg kvaliteta dobrobiti. Uslovi držanja su na većini farmi (63%) ocenjeni nezadovaljavajuće (≤20 poena) zbog loše higijene i diskomfora. Na više od trećine farmi krave su držane vezano tokom cele godine, što udruženo sa slabom primenom ispaše (17 dana/godini prosečno) značajno ograničava njihov komfor i slobodu kretanja. Zdravstveno stanje u proseku je ocenjeno kao prihvatljivo, ali su visoka incidenca laminitisa (38%), otežanih telenja (4.2%) i mortalitet (6.7%) prepoznati kao glavni činioci rizika po dobrobit. Uobičajena praksa izvođenja obezrožavanja (79%) bez primene anestetika/analgetika na farmama u Srbiji uzrok je bola i stresa kod životinja. Prosečan skor celokupno ocenjene dobrobiti (2.5/5) ukazuje na potrebu za unapređenjem u svim segmentima obezbeđenja dobrobiti mlečnih krava, posebno menadžmenta i uslova držanja.

Effect of non-genetic factors on standard lactation milk performance traits in simmental cows

AB  - The effect of systematic and continuous environmental factors on milk performance traits over standard lactations in 2805 Simmental cows was evaluated using the general linear model. The systematic factors included the effect of farm or breeding area, calving season, year of birth, season of birth, lactation group and their interactions. The continuous factor analysed was the effect of age at first conception. The effect of farm, lactation group and calving season on standard lactation milk performance was found to be highly significant (P lt 0.01), excepting the effect of calving season on milk fat percent in standard lactations which showed statistical significance (P lt 0.05). The interactions between year and season of birth, farm and calving season, and farm and lactation group had a highly significant effect (P lt 0.01) on all performance traits studied. Age at first conception, as a continuous factor, had a highly significant effect (P lt 0.01) on milk yield and milk fat percent, and a non-significant effect on milk fat yield. The model used to correct the performance traits over standard lactations for the effect of systematic factors was highly significant (P lt 0.01). The variance of the model accounted for 20.06 and 37.31% of the total variance of milk fat yield and milk fat percent, respectively. The resulting coefficients of determination (R-2) ranged from 0.20 for milk fat yield to 0.37 for milk fat percent.

AB  - Agriculture of the Republic of Serbia is going through significant reforms in legislation and agricultural policy, during this EU preaccession period, in order to comply to one of the most important EU policies - Common Agricultural Policy (CAP). The potential and tradition of Serbia in production of beef, on one hand and EU market needs on the other, impose the need for timely preparations from the legislative and technological aspect and human resources. Present study gives the review of major legislative regulations and main parameters of SEUROP beef classification system in sense of definition, presentation and categorization of carcass, as well as criteria in conformation evaluation and fat cover of the carcass.
AB  - Poljoprivreda Srbije u pretpristupnom periodu EU, prolazi kroz značajne reforme zakonodavstva i agrarne politike kako bi se prilagodila jednoj od najznačajnijih EU politika- Zajedničkoj poljoprivrednoj politici. Potencijal i tradicija naše zemlje u proizvodnji junećeg mesa sa jedne i potrebe tržišta EU sa druge strane, nameću potrebu za blagovremenim obavljanjem priprema u zakonodavnom, tehničkom i kadrovskom smislu. SEUROP standard je koncipiran da omogući 'zajednički EU jezik' koji opisuje kvalitet junećih trupova kao i analitiku baze podataka o životinjama, rezultatima klasifikacije i cenama što je od velikog značaja za primenu različitih mera podrške na tržištu unije. Obzirom da ovaj sistem podržava isplatu odgajivačima prema kvalitetu trupova, ovo je i važan instrument kojim se podstiče rad na unapređenju genotipova, ishrane i tehnologije u govedarstvu. U radu je dat pregled najvažnijih zakonskih regulativa i osnovnih parametara SEUROP klasifikacije junećeg mesa u smislu definicije, prezentacije i kategorizacije trupa kao i kriterijuma u oceni konformacije i prekrivenosti trupa lojem.

abstract = "Agriculture of the Republic of Serbia is going through significant reforms in legislation and agricultural policy, during this EU preaccession period, in order to comply to one of the most important EU policies - Common Agricultural Policy (CAP). The potential and tradition of Serbia in production of beef, on one hand and EU market needs on the other, impose the need for timely preparations from the legislative and technological aspect and human resources. Present study gives the review of major legislative regulations and main parameters of SEUROP beef classification system in sense of definition, presentation and categorization of carcass, as well as criteria in conformation evaluation and fat cover of the carcass., Poljoprivreda Srbije u pretpristupnom periodu EU, prolazi kroz značajne reforme zakonodavstva i agrarne politike kako bi se prilagodila jednoj od najznačajnijih EU politika- Zajedničkoj poljoprivrednoj politici. Potencijal i tradicija naše zemlje u proizvodnji junećeg mesa sa jedne i potrebe tržišta EU sa druge strane, nameću potrebu za blagovremenim obavljanjem priprema u zakonodavnom, tehničkom i kadrovskom smislu. SEUROP standard je koncipiran da omogući 'zajednički EU jezik' koji opisuje kvalitet junećih trupova kao i analitiku baze podataka o životinjama, rezultatima klasifikacije i cenama što je od velikog značaja za primenu različitih mera podrške na tržištu unije. Obzirom da ovaj sistem podržava isplatu odgajivačima prema kvalitetu trupova, ovo je i važan instrument kojim se podstiče rad na unapređenju genotipova, ishrane i tehnologije u govedarstvu. U radu je dat pregled najvažnijih zakonskih regulativa i osnovnih parametara SEUROP klasifikacije junećeg mesa u smislu definicije, prezentacije i kategorizacije trupa kao i kriterijuma u oceni konformacije i prekrivenosti trupa lojem.",

AB  - U radu je ispitivan odnos između prinosa mleka i sledećih osobina plodnosti: indeks osemenjavanja [IO], servis period [SP], uzrast pri teljenju [UT], međutelidbeni interval [MI] i masa teladi pri rođenju [MTR]. Ispitivanja su se odnosila na mlečne krave evropskog tipa crno-belih goveda koje se intenzivno oplemenjuju genima holštajn-frizijske rase. Za analizu je korišćen Metod najmanjih kvadrata - LSMLMW (HARVEY, 1990), fiksni model. Srednje vrednosti opšteg proseka za indeks osemenjavanja, servis period, uzrast pri teljenju, međutelidbeni interval i masu teladi pri rođenju su: 2,00; 98,78; 1088,08 ; 376,70 i 36,40, respektivno. Control of brown rat (Rattus norvegicus) on a dairy farm in Serbia

AB  - Rattus norvegicus is a synanthropic species living almost exclusively around facilities for keeping domestic animals. This three-year research focused on options for reducing economic damage caused by this rodent species in stables for heavy milking cows by testing preparations with active substances of various origin. It involved an environmentally friendly product based on sodium selenite 0.1%, a cholecalciferol-based natural product 0.75%, as well as anticoagulant rodenticides containing the active substances bromadiolone 0.005% and brodifacoum 0.005%. These preparations were formulated as granules, plate bait or grain bait. The environmentally friendly sodium selenite product achieved 76.2% efficacy in the first year of research, 70% in the second, and 67.5% in the third. The synthetic products based on bromadiolone and brodifacoum demonstrated high efficacy in all of the three experimental years and in all three formulations. The cholecalciferol rodenticide had 71.4% efficacy in the first year, 68% in the second, and 67.7% in the third. The data show that the environmentally safe product had a lower efficacy due to high rodent abundance and inadequate epidemiological conditions existing on the farm of heavy milking cows, while the bromadiolone and brodifacoum-based products achieved high efficacy.
AB  - Rattus norvegicus gotovo uvek živi u objektima namenjenim za gajenje domaćih životinja i kao sinanotropna vrsta prisutan je u čovekovoj najbližoj okolini. Predmet naših trogodišnjih istraživanja je alternativa smanjenja ekonomskih šteta koju pričinjava ovaj glodar u stajama farmi visoko-mlečnih krava, primenom preparata na bazi aktivnih materija različitog porekla. U eksperimentima je korišćen ekološko prihvatljivi preparat na bazi natrijum-selenita (0,1%), preparat prirodnog porekla na bazi holekalciferola (0,75%) i antikoagulantni rodenticidi na bazi bromadiolona (0,005%) i brodifakuma (0,005%). Primenjeni preparati su formulisani u obliku granula, obloženog i zrnastog mamka. Ekološko prihvatljivi preparat na bazi natrijum-selenita je ispoljio efikasnost od 76,2% u prvoj godini istraživanja, u drugoj 70% i u trećoj godini 67,5%. AB  - In order to have a more precise description of dairy farm structure and characteristics of dairy production systems, as well as to assess possibilities for improving production and farming conditions in which milk production is organized, a survey based research was directed at a select group of farms across the Serbia. 1180 questionnaires have been mailed to farmers whose farms are registered for either cattle or mixed production. Questionnaire was divided into 6 sections: general information of the farm, agricultural and structural information, zootechnical information, sanitary and veterinarian information, information about education and extension, and information on the perspectives of future farming. About 59% of analyzed farms have size up to 20 ha, with average size of about 10 ha. On the other hand, about 55% farms raises up to 15 cows and heifers with average of 6 heads per farm, while 3% of farms have more than 200 cows and heifers. Over 86% of surveyed farmers intend to expand existing farm production, mainly by increasing the number of animals, stricter selection and improvement of the conditions for feeding, housing, care and milking. About 75% of farmers have expressed a positive expectation from future membership of Serbia in EU, although these expectations are not clearly defined.
AB  - U cilju preciznijeg opisa strukture mlečnih farmi i karakteristika sistema za proizvodnju mleka, kao i procene mogućnosti za unapređenje proizvodnje i farmskih uslova u kojima se proizvodnja mleka organizuje, sprovedena je anketa među poljoprivrednim proizvođačima (farmerima) širom Srbije. Ukupno je poslato 1180 anketa farmerima čije su farme registrovane za govedarsku ili mešovitu proizvodnju. Upitnik koji je poslat farmerima sastojao se iz 6 delova i obuhvatao je opšte informacije o farmi, poljoprivredne i strukturne informacije, zootehničke informacije, sanitarne i veterinarske aspekte proizvodnje, edukaciju i savetodavstvo, kao i perspektive budućeg poslovanja. Oko 59% analiziranih farmi ima veličinu do 20ha, sa prosekom od oko 10ha. Sa druge strane, na oko 55% farmi odgaja se do 15 krava i junica, sa prosekom od 6 grla po farmi. Preko 86% anketiranih farmera namerava da proširi postojeću proizvodnju i to uglavnom povećanjem broja životinja, strožijom selekcijom roditeljskih parova, kao i unapređenjem uslova ishrane, smeštaja i nege. Oko 75% anketiranih farmera izrazilo je pozitivna očekivanja od budućeg članstva Srbije u EU, iako ta očekivanja nisu uvek jasna ili precizno definisana.

AB  - The objective of the work was to evaluate the effect of conditioning time (during 14 days of ageing at +4°C) on physicochemical properties of two cattle skeletal muscles. Investigations were conducted on the m. longissimus dorsi (n=9) and m. gluteus medius (n=9) of Domestic Spotted breed. Muscle analyses were carried out 1st, 7th and 14th day post mortem, during storage at +4°C. Colour (CIE L*a*b*values, Hue and Chroma), cooking loss, shear force, water-holding capacity (WHC), pH value and sensory characteristics were determined in all meat samples. M. longissimus dorsi samples aged for 14 days were characterized by higher degree of lightness (L*) and chroma (C*) values, more of red colour (higher a*) and of yellow (higher b*), while m. gluteus medius colour changes during storage was not found to be significant. Over the 14 day conditioning period, tenderness (expressed as shear force) of the evaluated muscles improved significantly (p lt 0.05), it ranged from 11.50 kg/cm2 (1st day) to 5.00 kg/cm2 (14th day) for m. longissimus dorsi and from 9.81 kg/cm2 (1st day) to 5.10 kg/cm2 (14th day) for m. gluteus medius muscle. Cooking loss and WHC increased significantly over storage time (p lt 0.05) in both meat samples, while changes in pH values were insignificant. Sensory analyses revealed deterioration in flavour (smell and taste) and improvement in tenderness of roasted meat samples during storage.
AB  - Cilj ovog istraživanja je bio da se ispita efekat vremena kondicioniranja (tokom 14 dana zrenja na +4°C) na fizičko-hemijske karakteristike dva mišića junadi. Ispitivanja su obavljena na m.longissimus dorsi (n=9) i m. gluteus medius (n=9) junadi domaće šarene rase. Analize mišića su rađene prvog, sedmog i četrnaestog dana od dana klanja, tokom skladištenja na +4°C. U svim uzorcima mišića je utvrđena boja (CIE L*a*b*, Ho i C*vrednosti), kalo kuvanja, sila sečenja, sposobnost vezivanja vode, pH vrednost i senzorna analiza. Nakon skladištenja od 14 dana uzorci m. longissimus dorsi su imali viši stepen svetloće (L*) i hroma vrednosti (C*), veći udeo crvene (više a*) i žute boje (više b*), dok u uzorcima m. gluteus medius nije utvrđena statistički značajna promena u parametrima boje. Tokom 14 dana skladištenja, mekoća mesa (izražena kao sila sečenja) se značajno poboljšala (p lt 0.05), od 11.50 kg/cm2 (prvog dana) do 5.00 kg/cm2 (četrnaestog dana) za m. longissimus dorsi i od 9.81 kg/cm2 (prvog dana) do 5.10 kg/cm2 (četrnaestog dana) za m. gluteus medius. AB  - Defined geographic area with their specifity regarding unique plant species and autochthonous breeds - Sjenica and Pirot Pramenka, among traditional cheese-making practice of local community, are prerequisite for protection of denomination of geographic origin of Sjenica cheese and Pirot kachkaval. Sjenica cheese belongs to the group of soft, white cheeses in brine and it is produced as autochthonous product made of sheep milk, on the territory of Sjenica-Pester Plateau. Pirot kachkaval is firm cheese of steamed curdle produced from mix of sheep and cow milk (1:2 ratio) on the territory of Stara Planina Mountain. These are geographical areas where production takes place in village households/farms and on mountains in summer cottages (katun, bacija), which is characteristic of craft dairy processing. Specific traits of traditional manufacturing of Sjenica cheese and Pirot kachkaval derive from climatic conditions, characteristic grass associations of the specific mountain region and milk from autochthonous populations (Sjenica and Pirot sheep). In order to maintain the traditional manufacturing technology of these native products and to have organized production, it is necessary to protect the geographical origin of these products.

AB  - In this paper, the effect of different systems of crossing of sheep: two-breed (PxW) and three-breed (PxWxIDF) on production results - body weight and average daily gain of lambs weaned at the age of 60 days and fattened to age of 120 days, was investigated. Also, the effect of crossing on consumption and conversion of food and nutrients was monitored. Study was carried out on the Experimental sheep farm of the Institute for Animal Husbandry, Belgrade-Zemun, and following breeds were used in the crossing: Pirot Pramenka (P), Wurttemberg (W) and Ile de France (IDF). Pirot Pramenka was used as the maternal basis, while Wurttemberg rams were used as sires, and as terminal breed, Ile de France rams were used. Results have shown that the three-breed crosses of F1 generation, compared to two-breed crosses, obtained higher body gain for 19.23% with lower food intake for 5.19%, during fattening period lasting from 60th to 120th day of age. Regarding feed conversion ratio, they used per 1 kg of body gain 29.61% less hay and 20.82% less concentrate feeds. Positive biological effect exhibited in three-breed crosses (PxWxIDF) is consequence of individual heterosis and maternal heterosis.
AB  - U radu je ispitivan uticaj različitih sistema ukrštanja ovaca: dvorasnog (PxW) i trorasnog (PxWxIDF), na rezultate u pogledu mase tela i prosečnog dnevnog prirasta jagnjadi zalučene sa 60 dana i tovljene do 120 dana uzrasta. Takođe su praćeni efekti ukrštanja na konzumiranje i konverziju hrane i hranljivih materija. Istraživanja su obavljena na eksperimentalnoj farmi ovaca Instituta za stočarstvo Beograd-Zemun, a za ukrštanje su korišćene sledeće rase ovaca: pirotska pramenka (P), virtemberg (W) i Il de frans (IDF). Rezultati su pokazali da su trorasni melezi u odnosu na dvorasne, u tovu od 60. do 120. dana uzrasta ostvarili za 19.23% veći prirast i za 5.19% manje konzumiranje hrane. U pogledu konverzije hrane, po kg prirasta su utrošili za 29.61% manje sena i za 20.82% manje koncentrata. Pozitivan biološki efekat koji se ispoljio kod meleza (PxWxIDF) je posledica korišćenja heterozisa individue i heterozisa majke.

Some aspects of improvement of grassland production for grazing of sheep

AB  - Grasslands represent significant natural resource with important role in economy and ecology of every country. Properly cultivated and utilized grasslands provide cheap and high quality food for sheep, which they easily transfer into milk and meat. However, extensive management has caused degradation of pasture areas. Improvement of production of forage plants on pastures is achieved by using melioration measures, primarily fertilization. Fertilization is important also from the aspect of increase of yield and quality of forage plants. The effect of application of fertilizer depends on the present plant species in the mixture. Application of nitrogen mineral fertilizers in mixtures reduces the nitrogen fixating abilities of leguminous species, which leads to the diminishing of their competitive abilities and favouring of the grass component in the mixture. Use of excessive quantities of N fertilizer in plants causes the accumulation of nitrates, as a unfavourable quality parameter in plant tissues, which can have harmful effect on animal health. Therefore, attention should be focused on application of N fertilizers, which should be harmonized with the plant requirements, so that used quantities are not excessive and harmful. Objective of this paper is to point out the significance of fertilization as one of the most important melioration measures.
AB  - Travnjaci su značajan prirodni resurs koji ima važnu ulogu u ekonomiji i ekologiji svake zemlje.Pravilno negovani i iskorištavani ,travnjaci obezbeđuju jeftinu i kvalitetnu hranu za ishranu ovaca koju one uspešno transformišu u mleko i meso. Međutim, ekstenzivno gazdovanje je uslovilo degradaciju pašnjačkih površina.Unapređenje proizvodnje krme na pašnjacima se postiže primenom meliorativnih mera, u prvom redu đubrenja. Đubrenje ima značajan uticaj na povećanje prinosa i kvaliteta krme. Efekat primene đubriva zavisi od prisutne biljne vrste u smeši. Primena azotnih mineralnih đubriva u smešama, smanjuje azotofiksatorne sposobnosti leguminoznih vrsta, što dovodi do slabljenja njihovih konkurentnih sposobnosti i favorizovanja travne komponente u smeši. Upotreba prevelikih količina N đubriva kod biljaka izaziva nagomilavanje nitrata, kao nepoželjnog parametra kvaliteta u biljnim tkivima, koji mogu da imaju štetno dejstvo na zdravstveno stanje životinja. Iz tih razloga treba pokloniti veliku pažnju primeni N đubriva, koja treba da bude u skladu sa potrebama biljaka, kako upotrebljene količine ne bi bile prevelike i štetne. Cilj ovog rada je bio da ukaže na značaj đubrenja kao jedne od najvažnijih meliorativnih mera.

abstract = "Grasslands represent significant natural resource with important role in economy and ecology of every country. Properly cultivated and utilized grasslands provide cheap and high quality food for sheep, which they easily transfer into milk and meat. However, extensive management has caused degradation of pasture areas. Improvement of production of forage plants on pastures is achieved by using melioration measures, primarily fertilization. Fertilization is important also from the aspect of increase of yield and quality of forage plants. The effect of application of fertilizer depends on the present plant species in the mixture. Application of nitrogen mineral fertilizers in mixtures reduces the nitrogen fixating abilities of leguminous species, which leads to the diminishing of their competitive abilities and favouring of the grass component in the mixture. Use of excessive quantities of N fertilizer in plants causes the accumulation of nitrates, as a unfavourable quality parameter in plant tissues, which can have harmful effect on animal health. Therefore, attention should be focused on application of N fertilizers, which should be harmonized with the plant requirements, so that used quantities are not excessive and harmful. Objective of this paper is to point out the significance of fertilization as one of the most important melioration measures., Travnjaci su značajan prirodni resurs koji ima važnu ulogu u ekonomiji i ekologiji svake zemlje.Pravilno negovani i iskorištavani ,travnjaci obezbeđuju jeftinu i kvalitetnu hranu za ishranu ovaca koju one uspešno transformišu u mleko i meso. Međutim, ekstenzivno gazdovanje je uslovilo degradaciju pašnjačkih površina.Unapređenje proizvodnje krme na pašnjacima se postiže primenom meliorativnih mera, u prvom redu đubrenja. Đubrenje ima značajan uticaj na povećanje prinosa i kvaliteta krme. Efekat primene đubriva zavisi od prisutne biljne vrste u smeši. Primena azotnih mineralnih đubriva u smešama, smanjuje azotofiksatorne sposobnosti leguminoznih vrsta, što dovodi do slabljenja njihovih konkurentnih sposobnosti i favorizovanja travne komponente u smeši. Upotreba prevelikih količina N đubriva kod biljaka izaziva nagomilavanje nitrata, kao nepoželjnog parametra kvaliteta u biljnim tkivima, koji mogu da imaju štetno dejstvo na zdravstveno stanje životinja. Iz tih razloga treba pokloniti veliku pažnju primeni N đubriva, koja treba da bude u skladu sa potrebama biljaka, kako upotrebljene količine ne bi bile prevelike i štetne. Cilj ovog rada je bio da ukaže na značaj đubrenja kao jedne od najvažnijih meliorativnih mera.",

AB  - This study examines the impact of two-breed (PXW) and three- breed (PxWxIDF) system of sheep crossing on the results in terms of yield and quality of meat of lambs, weaned at 60 days of age and fattened up to 120 days of age. Study was carried out on the experimental sheep farm of the Institute for Animal Husbandry, Belgrade-Zemun, and the following breeds of sheep were used for crossing: Pirot pramenka (P) Württemberg (W) and Ile de France (IDF). As maternal basis the Pirot Pramenka and two breed crosses were used, and as improvement breed - Ile de France rams. Pre-slaughter body mass of two-breed and three-breed crosses was: 32.63 and 34.48 kg. Values of dressing percentage warm carcass with head and offal were: 59.0 and 58.4%. The share of the category I meat on analogue treatments was: 37.07: 37.48%, meat of category II: 33.98: 32.41%, and the meat of category III - 28.69: 26.87%. Meat to bone ratio was: 2.3:1 in two- breed crosses, whereas in the three-breed crosses it was 2.7:1. MLD surface was 11:49 and 11:45 cm2. Regarding the chemical and technological characteristics, there were no significant differences among the treatments (P> 0.05).
AB  - U radu je ispitivan uticaj dvorasnog (PxW) i trorasnog (PxWxIDF) sistema ukrštanja ovaca na rezultate u pogledu prinosa i kvaliteta mesa jagnjadi zalučene sa 60 dana i tovljene do 120 dana uzrasta. Istraživanja su obavljena na eksperimentalnoj farmi ovaca Instituta za stočarstvo Beograd-Zemun, a za ukrštanje su korišćene sledeće rase ovaca: Pirotska pramenka (P), Virtemberg (W) i Ile de France (IDF).Kao materinska osnova korišćeni su Pirotska pramenka i dvorasni melezi, a kao oplemenjivači - ovnovi Ile de France. Ishrana grla krmnim smešama je bila grupna i po volji, dok je količina sena ograničena i ravnopravno distribuirana. Na kraju ogleda, radi utvrđivanja prinosa i kvaliteta mesa, izdvojeno je i žrtvovano ukupno 18 grla (po 9 iz svake grupe).Statistička obrada dobijenih podataka je izvršena koršćénjem programa Stat.Soft, Inc (2003) STATISTICA (data analysis software system), version 6, primenom standardnih matematičko-statističkih metoda. Telesna masa pred klanje meleza iz dvorasnog i trorasnog sistema ukrštanja je iznosila: 32.63 i 34.48 kg.Vrednosti randmana toplog trupa sa glavom i iznutricama su iznosile: 59.0 i 58.4%.Udeo mesa I kategorije na analognim tretmanima je iznosio: 37.07 : 37.48%, mesa II kategorije: 33.98: 32.41%, dok je meso III kategorije bilo zastupljeno sa 28.69 : 26.87%. Odnos mesa prema kostima je bio: 2.3:1 kod dvorasnih meleza, dok je kod trorasnih iznosio 2.7: 1. Površina MLD je iznosila 11.49 i 11.45 cm2.U pogledu hemijskih i tehnoloških osobina, nije bilo značajnih razlika između ispitivanih tretmana (P>0.05).

AB  - The effect of interaction between the farm and calving season, as well as the farm and group of lactations on milk performance traits (milk yield, yield of milk fat, 4% fat corrected milk and milk fat content) was analyzed on sample of 2805 Simmental cows with total 9718 standard lactations, housed on dairy farm 'Zlatiborski suvati' on Zlatibor (578 cows and 1968 lactations), dairy farm of the Agricultural holding Dobričevo in Ćuprija (964 cows and 3237 lactations) and dairy animals housed on family farms/households in the region of Kotraža (1263 cows and 4513 lactations). The significance of the effect of interaction between the farm and calving season, as well as interaction between the farm and group of lactations on all milk performance traits was very high (P lt 0.001), which justified their inclusion into models for assessment of the breeding value of dairy cows. The share of variance of interactions in total variance of milk performance traits in standard lactations was low (below and around 4%), which clearly indicated even more systematic factors and their interactions which influence the total variability of observed traits of milk performance of cows in standard lactations.
AB  - Uticaj interakcije farme i sezone telenja kao i farme i grupe laktacija na osobine mlečnosti (proizvodnja mleka, mlečne masti, 4% mast-korigovanog mleka i sadržaj mlečne masti) analizirano je kod 2805 krava simentalske rase sa ukupno 9718 standardnih laktacija koje su bile smeštene na farmi muznih krava 'Zlatiborski suvati' na Zlatiboru (578 krava i 1968 laktacija), farmi muznih krava na Poljoprivrednom dobru Dobričevo u Ćupriji (964 krava i 3237 laktacija) i području Kotraže na individualnim gazdinstvima (1263 krava i 4513 laktacija). Značajnost uticaja interakcija farme i sezone telenja, kao i interakcije farme i grupe laktacija na sve osobine mlečnosti standardnih laktacija bila je vrlo visoka (P lt 0.001), što opravdava njihovo uključivanje u modele za ocenu priplodne vrednosti muznih krava. Udeo varijanse interakcija u ukupnoj varijansi osobina mlečnosti standardnih laktacija bio je nizak (ispod i oko 4%), što jasno ukazuje na još veliki broj sistematskih faktora i njihovih interakcija koji utiču na ukupnu varijabilnost posmatranih osobina mlečnosti krava u standardnim laktacijama.

AB  - Evaluation of conformation and fat cover of beef carcasses has great importance in modern systems of carcass quality evaluation. In this way, adequate price is achieved for every classified carcass side according to market demand. In this paper, the effect of experimental crossing of Domestic Simmental breed with Charolais and Limousine breed (N=96) on conformation and fat cover was investigated. Evaluation was carried out on the whole carcass and partially for certain parts of carcass according to special evaluation pattern/form (1-5). In regard to evaluation of carcass conformation, statistically significant differences (p lt 0,01) were established between crosses and Domestic Simmental breed. Crosses with Charolais achieved the highest score for conformation (3,94), the highest score for round conformation (3,77) and shoulder (4,06). Considerably more fat tissue on outside of the carcass was determined in Domestic Simmental breed (3,44) compared to crosses with Charolais (3,27). Presence of fat in pelvic cavity was more expressed in Charolais (3,34) and Limousine crosses (3,28), with better score for covering of kidneys (3,50 and 3,53) compared to Domestic breed (3,17).
AB  - Ocena konformacije i prekrivenosti junećih trupova lojem ima veliki značaj u savremenim sistemima ocene kvaliteta trupova. Na ovaj način postiže se odgovarajuća cena za svaku klasiranu polutku prema zahtevima potrošača. U ovom radu ispitivan je uticaj eksperimentalnog ukrštanja domaće simentalske rase sa šarole i limuzin rasom (N=96) na konformaciju i prekrivenost junećih trupova lojem. Ispitivanje je obuhvatilo ocenu pomenutih osobina na celim trupovima kao i parcijalno na određenim delovima trupova a prema odgovarajućoj linearnoj skali ocene (1-5). U odnosu na ocenu konformacije trupova utvrđene su statistički značajne razlike (p lt 0,01) između meleza i domaće simentalske rase. Melezi Šarolea postigli su najbolju ocenu konformacije trupova (3,94), konformacije buta (3,77) i plećki (4,06). Značajno više masnog tkiva na spoljašnjem delu trupa utvrđeno je kod domaće simentalske rase.(3,44) u poređenju sa melezima Šarolea (3,27). Prisustvo masti u karličnoj šupljini bilo je izraženije kod Šarole (3,34) i Limuzin meleza (3,28), sa boljom ocenom prekrivenosti bubrega (3,50 and 3,53) u odnosu na domaću simentalsku rasu (3,17).

Presence of fat in pelvic cavity was more expressed in Charolais (3,34) and Limousine crosses (3,28), with better score for covering of kidneys (3,50 and 3,53) compared to Domestic breed (3,17)., Ocena konformacije i prekrivenosti junećih trupova lojem ima veliki značaj u savremenim sistemima ocene kvaliteta trupova. Na ovaj način postiže se odgovarajuća cena za svaku klasiranu polutku prema zahtevima potrošača. U ovom radu ispitivan je uticaj eksperimentalnog ukrštanja domaće simentalske rase sa šarole i limuzin rasom (N=96) na konformaciju i prekrivenost junećih trupova lojem. Ispitivanje je obuhvatilo ocenu pomenutih osobina na celim trupovima kao i parcijalno na određenim delovima trupova a prema odgovarajućoj linearnoj skali ocene (1-5). U odnosu na ocenu konformacije trupova utvrđene su statistički značajne razlike (p lt 0,01) između meleza i domaće simentalske rase. Melezi Šarolea postigli su najbolju ocenu konformacije trupova (3,94), konformacije buta (3,77) i plećki (4,06). Značajno više masnog tkiva na spoljašnjem delu trupa utvrđeno je kod domaće simentalske rase.(3,44) u poređenju sa melezima Šarolea (3,27). Prisustvo masti u karličnoj šupljini bilo je izraženije kod Šarole (3,34) i Limuzin meleza (3,28), sa boljom ocenom prekrivenosti bubrega (3,50 and 3,53) u odnosu na domaću simentalsku rasu (3,17).",

AB  - The subject of this research was to determine the effect of the housing system on quality of welfare of dairy cattle in Serbia. Study was realized on six farms, capacity of 30 to 900 cows, with loose and tie housing system. Assessment of the welfare quality parameters was done by using the Welfare Quality® Assessment Protocol for Cattle, 2009. Results of the research show that the welfare quality of dairy animals is under the significant effect of housing system, and that loose system has the advantage when it comes to comfort around resting, easy of movements and health condition of cows. Share of not lame cows (81%) and cows with no lesion (86%) was significantly higher (p lt 0.01) in loose system. Indicator values: duration of lying down movements (6.53 sec), lying down movements with collisions (18.7%) and lying outside lying area (28.4%) in tie system were significantly higher (p lt 0.01) compared to loose system indicating the inadequacy of the housing and lack of comfort. Analysis of indicators associated with cow hygiene (dirty legs and udder) and diseases (dystocia) points to significant gaps in management in both housing systems which represent significant threat to cow welfare quality.
AB  - Predmet ovog istraživanja bilo je utvrđivanje uticaja sistema držanja na kvalitet dobrobiti mlečnih krava u Srbiji. Ispitivanje je obavljeno na šest farmi, kapaciteta od 30 do 900 krava, sa slobodnim i vezanim sistemom držanja. Ocena parametara kvaliteta dobrobiti obavljena je korišćenjem Welfare Quality® Assesment Protocol for Cattle, 2009. Rezultati istraživanja pokazuju da se kvalitet dobrobiti mlečnih krava nalazi pod značajnim uticajem sistema držanja kao i da slobodni sistem ima prednost kada su u pitanju udobnost/komfor tokom /ležanja, lakoća kretanja i zdravstveno stanje krava. Udeo krava bez znakova šepavosti (81%) i krava bez lezija/povreda (86%) bio je signifikantno veći (p lt 0.01) u slobodnom sistemu. Vrednosti indikatora: pokreti krave tokom leganja (6.53 sec), pokreti krave tokom leganja gde dolazi do kolizije sa drugim grlima (18.7%) i ležanje izvan površina za ležanje (28.4%) u vezanom sistemu su signifikantno veće (p lt 0.01) u odnosu na slobodni i ukazuju na neadekvatnost smeštaja i nedostatak komfora. Analiza indikatora vezanih za higijenu krava (prljave noge i vime) i bolesti (distocia) ukazuje na značajne propuste menadžmenta u oba sistema držanja, koji ozbiljno ugrožavaju kvalitet dobrobiti krava.

AB  - Objective of this research was to determine the slaughter properties and carcass composition of carcass sides derived from young cattle of Domestic Spotted breed, of pre-slaughter weights of 500 (group A) and 600 kg (group B). Heavier cattle had higher share of kidney fat in carcass, whereas the share of offals showed no significant differences. Statistically significant difference was registered only in share of toungue (P lt 0.05), that was higher in cattle of group A. Share of extra/premium (tenderloin), I category (round) and II category (loin, back, shoulder) showed no significant differences between groups of cattle. Statistically significant difference (P lt 0.05) was established in the share of III category carcass parts. Share of forearm and chest was significantly higher in lighter cattle (3.55% and 7.95%) compared to heavier animals (2.89% and 6.33%), whereas the share of subshoulder was considerably lower in group A (6.89%) compared to cattle of group B (9.73%). Data obtained by dissection of main carcass side parts differed significantly in regard to the share of muscle tissue in round and belly, that was significantly higher in cattle of group A (P lt 0.05). Share of fat tissue (subcutaneous and intermuscular) was higher in cattle of group B in almost all carcass side parts, however, statistically significant difference between groups was determined only in round, back, neck and subshoulder. Also, share of bones in chest differed statistically significantly (P lt 0.05) and it was higher in group A (20.09%) compared to cattle of group B (15.52%).
AB  - Cilj ovog istraživanja bio je da se utvrde klanične osobine i sastav polutki junadi domaće šarene rase, zaklanih pri dostizanju prosečne težine od 500 (grupa A) i 600 kg (grupa B). Teža junad su imala veći udeo bubrežnog loja u trupu, dok se udeo iznutrica nije značajno razlikovao. Statistički značajna razlika je pronađena samo u udelu jezika (P lt 0.05), koji je bio veći kod junadi grupe A. Udeo delova ekstra (biftek), I kategorije (but) i II kategorije (slabine, leđa, plećka) nisu se značajno razlikovali između grupa junadi. AB  - In this paper, principles of traditional production and main characteristics of Sjenica cheese and Pirot kachkaval are presented. Sjenica cheese belongs to the group of soft, white cheeses in brine and it is produced as autochthonous product made of sheep milk, on the territory of Sjenica-Pester plateau. Pirot kachkaval is firm cheese of steamed curdle produced from mix of sheep and cow milk (1: 2 ratio) on the territory of Stara Planina Mountain. These are geographical areas where production takes place in village households/farms and on mountains in summer cottages (katun, bacija), which is characteristic of craft dairy processing. Specific traits of traditional manufacturing of Sjenica cheese and Pirot kachkaval derive from climatic conditions, characteristic grass associations of the specific mountain region and milk from autochthonous populations (Sjenica and Pirot sheep). In order to maintain the traditional manufacturing technology of these native products and to have organized production, it is necessary to protect the geographical origin of these products.

Effects of different protein sources of diet on yield and quality of lamb meat

AB  - The results obtained in the study of the effects of different protein sources in diet on fattening parameters, yield and quality of meat from weaned lambs are presented in this study. Experiment was conducted on 60 lambs of MIS population, weaned at the age of 60 days and divided into three groups. The effect of use of three concentrate mixtures which differed in regard to protein source: sunflower meal (I), soybean meal (II) and fish meal (III), was studied. Average daily gain of lambs on treatments I, II and III was: 0.169, 0.205 and 0.227 kg. Conversion of dry matter (kg/kg gain) on analogue treatments was: 4.54, 3.71 and 3.30; of energy (MJ NEM/kg): 33.77, 29.37 and 26.25; of total proteins (g/kg): 732, 596 and 549; of PDIN (g/kg): 502, 414 and 381; of PDIE (g/kg): 480, 425 and 396. Values of the yield of warm carcass with offal according to treatments I, II and III were: 58.70, 58.02 and 57.42%. Share of I category meat on analogue treatments was: 37.27, 37.35 and 37.51%, meat of II category: 33.9, 32.67 and 32.83%, whereas meat of III category was present in the following percentages 27.78, 29.59 and 29.10%. Surface of MLD in lambs on treatments I, II and III was: 11.47, 13.09 and 13.86 cm(2). With regards to chemical and technological parameters of MLD, as well as morphological composition of carcass side, no significant difference between investigated treatments were established (P>0.05).

Opportunities and challenges for sustainable sheep production in Serbia

AB  - This paper analyzes the present state of sheep farming in Serbia and provide guidance for sustainable development in the future. It also discusses the challenges of the modern age that may affect the viability of sheep production. Today in Serbia grows less than 1.5 million sheep. In terms of breed structures, most of the population makes indigenous Pramenka sheep (80%), while the remaining 20% are: Tsigai, Merinolandschaf, Ile de France, Pirot improved, Mis sheep, and other less important population, as well as the crossbreed with foreign and local domestic sheep. However, due to the intense process of industrialization, from the second half of the twentieth century until today there is a trend of depopulation, demographic discharge of the village, which has resulted in reducing the farms so that the number of sheep in the past two decades fell by about 30%. The greatest reduction in the number of sheep registered in the nineties. After stabilization, a large decrease in the number of sheep was followed by the 2010th year and by 6% compared to 2008 year. Genetical improvement is significantly increased level of production of all species of domestic animals. However, animals selected for high and efficient production are exposed to greater risk. This primarily refers to the physiological and immunological problems, but would generally be said that all this leads to distortion of harmony between the organism and the environment and the repercussions on the molecular level. Sustainable development of sheep breeding in Serbia must be kept in mind this reality. New challenges facing the sheep breeding of Serbia, stems from a political orientation toward membership in the European Union. Sheep Serbia must find its place in this new challenge.
AB  - Ovaj rad analizira sadašnje stanje ovčarstva u Srbiji i daje smernice za održivi razvoj u budućnosti. On takođe raspravlja o izazovima modernog doba koji mogu uticati na održivost ovčarske proizvodnje. Srbija danas raspolaže sa nešto manje od 1,5 miliona ovaca. U pogledu rasne strukture, većinu čini pramenkalokalne autohtone ovce, dok preostalih 15- 20% su: Cigaja, Merinolandschaf, Ile de France, Pirotska oplemenjena, novo proizvedena Mis ovca, i druge manje važne populacije, kao i melezi sa inostranim rasama. Međutim, zbog intenzivnog procesa industrijalizacije, od druge polovine dvadesetog veka do danas postoji trend smanjenja seoskog stanovništva i pražnjenja sela, što je rezultiralo smanjenjem farmi, tako da je broj ovaca u poslednje dve decenije opao za oko 30%. Najveći pad broja ovaca registrovan je tokom devedesetih. Posle stabilizacije, veliki pad u broju ovaca je usledio 2010. godine za 6% u odnosu na 2008. godinu. Genetsko unapređenje je poslednjih decenija znatno povećalo nivo proizvodnje svih vrsta domaćih životinja. Međutim, životinje selekcionisane za visoku i efikasnu proizvodnju izloženi su većem riziku. Ovo se prvenstveno odnosi na fiziološke i imunološke probleme, ali bi se generalno moglo reći da je sve to dovelo do narušavanja harmonije između organizma i sredine i posledica na molekularnom nivou. Održivi razvoj ovčarstva Srbije mora imati u vidu ovu realnost. Novi izazovi sa kojima se suočava ovčarstvo Srbije, proističu i iz političke orijentacije ka članstvu u Evropskoj uniji. Zbog svih pomenutih razloga ovčarstvo Srbije mora naći svoje pravo mesto u svetlu novih izazova.

Regression analysis of milk production traits in Simmental cows

AB  - The relationship between milk production traits over whole lactations was evaluated across three generations of Simmental cows, i.e. between daughters, dams and grand dams, by a phenotypic regression analysis with whole lactation traits in the daughter generation being used as the dependent variables (x1), and those in the dam and grand dam generations being used as the independent variables (x2 and x3). The results were obtained from a sample of 1170 daughters and as many dams and grand dams. The significance of the partial regression coefficients b2 and b3 was separately evaluated by a t-test. An analysis of variance was used to estimate the significance of the simultaneous effect of the production traits of dams and grand dams on the milk production achieved in the daughter generation. The calculated value of the partial regression coefficients for the whole lactation production traits across three generations (grand dams, dams and daughters) and their statistical significances determined by the t and F tests, as well as the regression equations used, suggested that the effect of the grand dam generation on the milk production traits in granddaughters was substantially lower than the effect of dams. The calculated partial regression coefficients (b2 and b3) were positive and statistically very significant (P lt 0.01), excepting the regression coefficients b3 for lactation length and b2 for milk fat content that were not statistically significant (P>0.05). A very significant change (P lt 0.01) was observed in all production traits in the daughter generation as simultaneously affected by the traits in the dam and grand dam generations.
AB  - Povezanost osobina mlečnosti u punim laktacijama analizirana je između tri generacije krava simentalske rase, odnosno između kćerki, majki i baba, fenotipskom regresionom analizom u uslovima kada su osobine punih laktacija u generaciji kćerki posmatrane kao zavisno (x1), a osobine punih laktacija u generaciji majki i baba kao nezavisno promenljive (x2 i x3). Rezultati su dobijeni na uzorku od po 1170 kćerki, majki i baba. Pojedinačno ispitivanje značajnosti delimičnih regresionih koeficijenata b2 i b3 izvršeno je t-testom, a analizom značajnosti istovremenog uticaja proizvodnih osobina majki i baba na ostvarenu proizvodnju kod kćerki izvršena je metodom analize varijanse. Na osnovu izračunate vrednosti delimičnih regresionih koeficijenata za proizvodne osobine celih laktacija kroz tri generacije (babe, majke i kćerke) i njihove statističke značajnosti određene t i F testom, kao i jednačina regresije konstatovano je da je uticaj generacije baba na proizvodnju unuka znatno manji u odnosu na uticaj kojeg imaju majke. Svi izračunati delimični koeficijenti regresije (b2 i b3) bili su pozitivni i statistički vrlo značajni (P lt 0.01), izuzimajući koeficijent regresije b3 kod trajanja laktacije i b2 kod sadržaja mlečne masti koji nisu bili statistički značajni (P>0.05). Značajnost promena svih posmatranih proizvodnih osobina u generaciji kćerki pri istovremenom uticaju tih osobina iz generacije majki i baba bila je vrlo visoka (P lt 0.01).

AB  - The paper presents review of authors' own and other's results representing the effects of nutritional factors in order to overcome health problems of the people. In general we are presenting the effects and benefits of consuming organically bound selenium and omega-3 fatty acids. The purpose of this article is to show how to overcome the problems related a big amount of additive and other substances presented in human food, aero pollution, radiation and permanent stress in everyday life, which induce a lot of different diseases. This is the enough reason to develop special programme for producing 'designer milk', 'designer meat' or 'functional food' with purpose to preventing, reducing and healing those diseases. The purpose of this program is not only to keep a whole population in good health, but at the same time this kind of nutrients has a great comparative benefits for export our food in the west countries.
AB  - Nekretanje, zagađeni vazduh i voda, velika količina aditiva i rezidue pesticida u hrani karakteristike su urbanog načina života i oni deluju destruktivno na naš organizam. Takođe, oksidativni stres kao deo normalnog metabolizma oslobađa veliku količinu slobodnih radikala koje organizam često nije sposoban da neutrališe, dovodi do najtežih bolesti koje poprimaju razmere epidemije. U ovakvim uslovima življenja nauka pronalazi načine kako da putem hrane, pre svega osnovnih životnih namirnica mleka i mesa, popravi njen kvalitet, obogaćujući je pojedinim elementima koji su od vitalnog značaja za naše zdravlje, a time utiče i na prevenciju bolesti i usporavanje procesa starenja. Jedan od načina je i korišćenje funkcionalne hrane koja po definiciji predstavlja hranu koja pored osnovne hranljive vrednosti treba da sadrže i takve sastojke koji utiču na popravljanje opšteg zdravstvenog stanja pa i lečenja mnogih bolesti. U radu je na revijalan način predstavljen značaj organski vezanog selena i omega-3 masnih kiselina u mleku i mesu dobijenih od životinja u čije obroke se uključuju ove materije koje se izlučuju u njihove proizvode. Selen i omega-3 masne kiseline su od esencijalnog značaja ne samo za ljude već i za životinje, tako da jednovremeno značajno popravljaju njihove zdravstvene, produktivne i reproduktivne performanse.

The purpose of this program is not only to keep a whole population in good health, but at the same time this kind of nutrients has a great comparative benefits for export our food in the west countries., Nekretanje, zagađeni vazduh i voda, velika količina aditiva i rezidue pesticida u hrani karakteristike su urbanog načina života i oni deluju destruktivno na naš organizam. Takođe, oksidativni stres kao deo normalnog metabolizma oslobađa veliku količinu slobodnih radikala koje organizam često nije sposoban da neutrališe, dovodi do najtežih bolesti koje poprimaju razmere epidemije. U ovakvim uslovima življenja nauka pronalazi načine kako da putem hrane, pre svega osnovnih životnih namirnica mleka i mesa, popravi njen kvalitet, obogaćujući je pojedinim elementima koji su od vitalnog značaja za naše zdravlje, a time utiče i na prevenciju bolesti i usporavanje procesa starenja. Jedan od načina je i korišćenje funkcionalne hrane koja po definiciji predstavlja hranu koja pored osnovne hranljive vrednosti treba da sadrže i takve sastojke koji utiču na popravljanje opšteg zdravstvenog stanja pa i lečenja mnogih bolesti. U radu je na revijalan način predstavljen značaj organski vezanog selena i omega-3 masnih kiselina u mleku i mesu dobijenih od životinja u čije obroke se uključuju ove materije koje se izlučuju u njihove proizvode. Selen i omega-3 masne kiseline su od esencijalnog značaja ne samo za ljude već i za životinje, tako da jednovremeno značajno popravljaju njihove zdravstvene, produktivne i reproduktivne performanse.",

AB  - Results of the effect of direct and indirect selection of quantitative traits of fertility and milk performance of first calving cows of Simmental breed in Serbia are presented. Investigation of genetic parameters of heritability (additive genetic variance in total phenotypic variability of quantitative traits) and analysis of milk traits was done in four breeding regions and several tenths of farms where 3980 daughters of 32 sires were housed and reared. Results of analysis were obtained by application of mathematical-statistical data analysis, using mixed models (Harvey, 1990). Mathematical-statistical analysis of data was done using linear methods, i.e. method of least squares (LS method). Based on obtained results it was established that bulls-sires and several paragenetic factors caused no significant variation of fertility traits in relation to general average (P lt 0.01). Quantitative milk traits of first calving cows, under the influence of breeding region, had significantly higher deviation from the general average (**P lt 0.01). Significant deviations (*P lt 0.05) were caused by year of calving on milk yield and yield of milk fat (4765.0 kg and milk fat 3.86%). Established heritability coefficients for reproductive traits were following: .102, .051 and .088, and milk traits .297, .207 and .197).
AB  - Najbrojnija populacija goveda u Republici Srbiji pripada Simentalskoj rasi (oko 500.000 plotkinja ili više od 80%). Ako se imaju u vidu tekuće promene u genetskom poboljšanju goveda i veoma velikom napretku u tehnologijama reprodukcije, očigledno da će se sadašnji programi morati menjati i poboljšavati. S obzirom na to, da je ekonomski značaj reproduktivnih i osobina mlečnosti visok neophodno je poznavanje pojedinih faktora koji utiču na plodnost i mlečnost krava, a oni se dele na genetske i paragenetske. Uspeh u poboljšanju plodnosti genetskim putem je dosta ograničen niskim vrednostima heritabiliteta, što ne znači da geni ne deluju na ovu osobinu, već da je vrednost aditivne genetske varijacije mala. Naslednost, odnosno proučavanje aditivne genetske varijanse u ukupnoj fenotipskoj varijabilnosti kvantitativnih osobina, predstavlja deo najvažjnijih istraživanja sa gledišta stvaranja populacije goveda visokih genetskih potencijala i odabiranja roditeljskih parova budućih generacija. Vrednosti koeficijenata naslednosti za osobine plodnosti su pod uticajem različitih faktora, kao što su: genotip životinje, uzrast, intenzitet selekcije, metod odgajivanja, ambijentalni uslovi i dr. Cilj ovih istraživanja je bio da se ispitaju važniji genetski parametri plodnosti i mlečnosti, odnosno naslednosti ovih kvantitativnih osobina radi izbora pravca i daljeg oplemenjivanja ove populacije. Prikupljeni podaci za analizu potiču iz četiri regiona - odgajivačka područja u Srbiji. Istraživanja su uključila 3980 krava - prvotelki simentalske rase, kćeri 32 bika - oca, koje su oteljene u periodu od šest godina (2002-2007). Sva ispitivana grla (krave - prvotelke) su držana vezano i slobodno u posedu privatnih farmera (od 8 do 65 grla po farmi) i bila su standardno hranjena, a razlike su bile u količini, odnosu i kvalitetu kabaste i koncentrovane hrane (područje gajenja). Matematičko-statistička analiza podataka obavljena je primenom mešovitog modela najmanjih kvadrata (LS-Least Squares) primenom programa najmanjih kvadrata (LSMLMW), Harvey, (1990). Različiti broj individua u pojedinim klasama kao i postojanje više uticaja (područje, godina telenja, sezona telenja, bikovi očevi) koji su delovali na ispoljavanje ispitivanih osobina, uslovio je analizu u kojoj je korišćen metod najmanjih kvadrata. Bikovi-očevi i niz paragenetskih uticaja nisu prouzrokovali značajno variranje osobina plodnosti u odnosu na opšti prosek (P lt 0.01). Kvantitativne osobine mlečnosti krava prvotelki su pod uticajem odgajivačkog područja imale visoko značajno odstupanje od opšteg proseka (**P lt 0.01). Značajna odstupanja (P lt 0.05) je izazvala godina telenja na prinos mleka i mlečne masti. Godišnje doba početka laktacije krava obuhvaćenih našim istraživanjem pokazuje značajna odstupanja prinosa mleka i mlečne masti u odnosu na opšti prosek (P lt 0.01). Tako su junice oteljene u februaru , martu i aprilu imale značajno i visoko značajno više mleka i mlečne masti u odnosu na one koje su se otelile u drugim mesecima u godini. Ustanovljeni koeficijenti heritabiliteta reproduktivnih svojstava koji su dobijeni našim istraživanjem su imali niske vrednosti i bili su nižeg nivoa u odnosu na one koje su dobili Petrović et al. (1998, 2001, 2006). Rezultati naslednosti osobina mlečnosti dobijeni našim istraživanjima su bili viši u odnosu na koeficijente za iste osobine koje su objavili Panić and Vidović (2006), niži u odnosu na rezultate istraživanja Petrović et al. (1999) and Kapš and Špehar (2004) a u saglasnosti sa koeficijentima heritabiliteta koje su u turskoj populaciji simentalskih goveda ustanovili Ulek and Tekun (2006).

Simmental cattle breed in different production systems

AB  - The paper gives the analysis on the state in population of Simmental cattle reared in Europe with a special review on the state in Simmental cattle in our country which makes about 80 % total cattle fund in Serbia, and is characterized by a negative trend in the number of cattle, as well as by a low average milk production per cow. The most important results obtained by both domestic and foreign authors by means of various methods of improving Simmental breed and its raising in different systems have been shown. The directions for improving Simmental cattle according to the productive directions have been analyzed. Possible methods of improving the Simmental cattle in our country have been pointed out, which should be in accordance with already existing genetic potential of each actual population, its purpose (registered breeding stock, production breeding stock), as well as with the market needs for cow milk, milk products and meat (primarily beef meat, for export). A special emphasis has been given to the importance of organizing the production of meat in the cow-calf system in which Simmental breed, following the model of many European countries, should have good performance also in our country, if the same production should be organized in deserted hilly and mountainous regions. In this way we could contribute to more significant increase in overall beef production, and to reactivate unused natural resources as well.
AB  - Analizirano je stanje u populaciji simentalskih goveda koja se gaje u Evropi, sa posebnim osvrtom na stanje simentalske rase kod nas, koja u poslednje dve decenije čini između 80 i 85 % ukupnog fonda goveda Srbije, a koju prati negativni trend brojnosti (veličini populacije), kao i niska prosečna proizvodnja mleka po kravi. Analizirani su pravci oplemenjivanja simentalskih goveda u skladu sa smerovima proizvodnje. Ukazano je na moguće metode oplemenjivanja simentalske rase kod nas, koje bi morale biti u skladu sa postojećim genetskim potencijalom svake konkretne populacije, njenom namenom (matični zapati, proizvodni zapati), kao i u skladu sa potrebama tržišta za kravljim mlekom i mlečnim proizvodima. Kao metod oplemenjivanja simentalske rase kombinovanog smera proizvodnje do sada je više primenjivan metod selekcije u čistoj rasi. Metod meliorativnog ukrštanja simentalske rase sa crvenim holštajnom je značajno manje u primeni i više ga sprovode odgajivači proizvodnih zapata goveda simentalske rase. Poseban akcenat je dat značaju organizovanja proizvodnje mesa u sistemu krava-tele, gde bi simentalska rasa po uzoru na mnoge evropske zemlje i kod nas dala dobre rezultate, ako bi se ista proizvodnja organizovala u napuštenim brdskim i planinskim područjima. Na ovaj način bi se moglo doprineti značajnijem povećanju ukupne proizvodnje junećeg mesa, kao i aktiviranju neiskorišćenih prirodnih resursa, što bi predstavljalo strateški interes države. U cilju povećanja ekonomičnosti u proizvodnji u sistemu krava-tele, neophodno je postizanje maksimalne plodnosti, iz kog razloga bi trebalo redovno primenjivati indukciju i sinhronizaciju estrusa. Sezonu telenja treba planirati u skladu sa konkretnim klimatskim prilikama na konkretnom području, a sve u cilju maksimalnog korišćenja perioda vegetacije (paše) od strane krava i teladi.

AB  - Results of the effect of direct and indirect selection on quantitative properties of milk production of first calving Simmental cows in Serbia, are presented in the paper. Analysis of quantitative phenotypic parameters was carried out in four breeding regions and certain number of smaller farms where 1319 daughters of 13 bull sires were reared. Results of the analysis were obtained by application of mathematical-statistical data analysis, using mixed models (Harvey, 1990). Mathematical-statistical analysis of data was carried out using linear methods with fixed effect, through method of least squares (LS method), and for evaluation of bull breeding value mixed model of random bull sire effect was used (BLUP method). Based on obtained results it was established that analyzed breeding region has statistically highly significantly (**P lt 0.01.) caused deviations of production phenotypes from general average. Season and year of calving (*P lt 0.05.) have caused significant variations of production properties. .
AB  - U radu su prikazani rezultati efekata direktne i indirektne selekcije kvantitativnih svojstava mlečnosti krava-prvotelki simentalske rase goveda u Srbiji. Analiza kvanitativnih fenotipskih parametara je obavljena u četiri odgajivačka područja i na više desetina manjih farmi na kojima je držano i gajeno 1319 kćeri, 13 bikova-očeva. Rezultati analize su dobijeni primenom matematičko-statističke analize podataka, korišćenjem mešovitih modela (Harvey, 1990). Matematičko-statistička analiza podataka je obavljena korišćenjem linearnih metoda sa fiksnim uticajem, preko metoda najmanjih kvadrata (LS metod) a za ocenu priplodne vrednosti bikova korišćen je mešoviti model slučajnog uticaja oca (BLUP metod).Na osnovu dobijenih rezultata ustanovljeno je da je odgajivačko područje statistički analizirano visoko značajno (**P lt 0.01.) prouzrokovalo odstupanja proizvodnih fenotipova od opšteg proseka. Sezona telenja i godina (*P lt 0.05.) su prouzrokovali značajna variranja proizvodnih osobina. Rezultati odstupanja osobina proizvodnosti pod uticajem godine telenja ukazuju na pozitivne tendencije u povećanju prinosa mleka . Značajna odstupanja (P lt 0.05) je izazvala godina telenja i na prinos mleka i mlečne masti. Godišnje doba početka laktacije krava obuhvaćenih našim istraživanjem pokazuje visokoznačajna odstupanja prinosa mleka i mlečne masti u odnosu na opšti prosek (P lt 0.01). Tako su junice oteljene u februaru , martu i aprilu imale značajno i visoko značajno više mleka i mlečne masti u odnosu na one koje su se otelile u drugim mesecima u godini. Interakcija odgajivačkog područja i sezone telenja je prouzrokovala visoko značajna odstupanja prinosa mleka (**P lt 0.01), međutim nije bilo statističkih značajnih variranja sadržaja mlečne masti. Prema analizi negativnih i pozitivnih BLUP rešenja (priplodne vrednosti) za prinos 4%MKM formirana je ocena ranga prema kojoj je bik broj 13. najbolje ocenjen, a bik-otac br.9 bio je rangiran na poslednje mesto. Krave - prvotelke obuhvaćene našim istraživanjem proizvele su 4868 kg mleka sa 183.03 kg mlečne masti , odnosno 3.76% mle. mast i 4693kg 4%MKM. Rezultati dobijeni nasim istraživanjima su značajno viši u odnosu na rezultate o mlečnosti iste rase (Lazarevic R. i sar., 1986). viši od onih koje je ustanovio Petrovic M.M. i sar. (1997 i 2006). Dobijeni rezultati su u saglasnosti sa onima koje su dobili Petrović M.D. i sar. (2005) i Pantelić i sar.(2008). Naši rezultati su pokazali da postoji pozitivan genetski trend u smislu kvantitaivnih osobina mlečnosti domaćih somentalskih krava. Poredeći naše rezultate i rezultate napred navedenih autora može se zaključiti da se prinos mleka simentalskih krava (matični zapat) u Srbiji godišnje uvećava za najmanje 100 kg mleka po kravi (zavisno od genetike, područja, odnosno tehnologija ishrane i držanja).

AB  - The effect of systematic factors on production traits over complete lactations was investigated in 2,805 Simmental cows born in 1982 and onwards. The cows were housed at three farms in different areas: at the Zlatiborski Suvati dairy farm, Zlatibor, at the Dobricevo Agricultural Farm, Cuprija and at private farms in the region of Kotraze. The systematic factors (farm, calving season, lactation groups, group (year x season of birth), farm x calving season and farm x lactation group interactions) and age at first conception had statistically highly significant (P lt 0.001) effects on all complete lactation traits, with the exception of the effect of calving season on complete lactation duration (P lt 0.05) and milk-fat content (P>0.05). No statistically significant effect was produced by age at first conception on complete lactation duration and milk-fat content (P>0.05). Determination coefficients ranged from 0.100 in complete lactation duration to 0.361 in milk-fat content.
AB  - Ispitivanje uticaja sistematskih faktora na ispoljenost proizvodnih osobina celih laktacija obavljeno je kod 2805 krava simentalske rase rođenih od 1982. godine pa na dalje. Krave su smeštene na tri farme, odnosno područja: farmi muznih krava 'Zlatiborski suvati' na Zlatiboru, Poljoprivrednom dobru Dobričevo u Ćupriji i području Kotraže na individualnim gazdinstvima. Sistematski faktori (farma, sezona telenja, grupe laktacija, grupa (godina x sezona rođenja), interakcije farma x sezona telenja i farma x grupe laktacija) i uzrast pri prvoj oplodnji statistički su vrlo visoko značajano (P lt 0.001) uticali na sve osobine punih laktacija, izuzimajući uticaj sezone telenja na trajanje punih laktacija (P lt 0.05) i sadržaj mlečne masti (P>0.05). Uzrast pri prvoj oplodnji nije statistički značajno uticao na trajanje celih laktacija i sadržaj mlečne masti u njima (P>0.05). Koeficijenti determinacije kretali su se od 0.100 kod trajanja celih laktacija do 0.361 kod sadržaja mlečne masti.
