The influence of boar breed and applied method on the meat content

AB  - The aim of this study was to determine the influence of the applied method of the quality carcass in 201 descendants, both sexes (n=108 male castrated animals and n=93 females), of studied boar-sires. For the determination of the meat yield (JUS1) and the share of meat (JUS 2) in carcass sides, on the basis of the performed measurements, tables for meat pigs, which are an integral part of the Rulebook on the quality of slaughtered pigs and categorization of pork meat (OG SFRY, 1985), were used. Share of meat (EC 94 and EC 06) was determined on cooled left carcass sides by method of partial dissection (according to methodology recommended by EU-Walstra and Merkus, 1996). Research was carried out on pig farm and in experimental slaughterhouse of the Institute for Animal Husbandry, Belgrade-Zemun. Housing, care and nutrition of animals were in accordance to breeding technology in investigated herd. The average share of meat determined by the application of the Rulebook (JUS2) was 43.58% with a lower absolute variation compared to the EU regulation from 1994 (EC 94; 53.56%) and from 2006 (EC 06; 56.55%). The estimated lean meat content by the application of the Rulebook (JUS 2) was by 9.98% lower compared to the EC 94 regulation and by 12.97% lower compared to EC 06. If we are talking about the selection of offspring for breeding, if we consider only the estimated leanness, we see that within the Landrace (L) breed we have high and very significant (P lt 0.001) differences between the sires for the assessed meat content according to EC 94 and EC 06. By implementing new methods of assessment of lean meat content (EC 94 and EC 06), a higher share of meat (9.98% respectively 12.97%) was determined compared to the Rulebook (1985). This research indicates the necessity of changing the current method for the establishment of meat content of pigs in the Republic of Serbia.
AB  - Cilj ove studije bio je da se utvrdi uticaj primenjene metode kvaliteta trupa kod 201 potomka, oba pola (n = 108 kastriranih mukih grla i n = 93 ženskih), ispitivanih očeva nerastova. Za određivanje prinosa mesa (JUS1) i udela mesa (JUS 2) u polutkama, na osnovu izvršenih merenja, korićene su tabele za mesnate svinje, koji su sastavni deo Pravilnika o kvalitetu zaklanih svinja i kategorizaciji svinjskog mesa (SG SFRJ, 1985). Udeo mesa (EC 94 i EC 06) određen je na ohlađenim levim polutkama metodom delimične sekcije (prema metodologiji preporučenoj od strane EU - Walstra i Merkus, 1996). Istraživanje je sprovedeno na svinjarskoj farmi i u eksperimentalnoj klanici Instituta za stočarstvo Beograd-Zemun. Smeštaj, nega i ishrana životinja bili su u skladu sa tehnologijom uzgoja u ispitivanom zapatu. Prosečan udeo mesa utvrđen primenom Pravilnika (JUS2) iznosio je 43,58% sa nižom apsolutnom varijacijom u poređenju sa uredbom EU iz 1994. (EC 94; 53,56%) i iz 2006 (EC 06; 56,55%). Procenjeni sadržaj mesa primenom Pravilnika (JUS 2) bio je za 9,98% niži u odnosu na uredbu EC 94 i za 12,97% niži u odnosu na EC 06. Ako govorimo o izboru potomstva za uzgoj, ako uzmemo u obzir samo procenjenu mesnatost, vidimo da unutar rase L imamo visoke i veoma značajne (P  lt 0,001) razlike između očeva za procenjeni sadržaj mesa u skladu sa EC 94 i EC 06. Implementacijom novih metoda procene sadržaja mesa (EC 94 i EC 06), utvrđen je veći udeo mesa (9,98%, odnosno 12,97%) u poređenju sa Pravilnikom (1985). Ovo istraživanje ukazuje na neophodnost promene postojeće metode utvrđivanja sadržaja mesa svinja u Republici Srbiji.

Effect of breed of performance tested boars on ejaculate traits

AB  - The main objective of the study was to determine the influence of breed on the traits of boar ejaculate: ejaculate volume (VOL, ml), sperm concentration (CON, x106 sperm/ml), total sperm count in ejaculate (TNS, x109 spermatozoa), sperm motility in native ejaculate (MON, %), sperm motility after dilution (MOD, %) and number of doses produced (NPD). The aim was also to evaluate the correlation of the boar performance test traits: average life daily gain (g), backfat thickness measured in two locations (mm), depth of longissimus dorsi muscle (mm) and carcass meat content (%) with ejaculate traits. Total of 931 ejaculates of 36 boars during reproductive exploitation were analysed (16 Landrace boars and 20 Large White boars). The effect was assessed using the procedure of the general linear model of the statistical package SAS 9.1.3 (SAS Inst. Inc., 2002-2003). The model for analysis included the influence of breed, season and the linear regression influence of body weight at the end of the performance test. The correlation of the traits was determined by applying the Pearson's correlation coefficient. Most of the examined ejaculate traits (VOL, CON, MOD and NPD) varied under the influence of boar breed (p lt 0.01; p lt 0.001). Weight at the end of the test (p lt 0.05; p lt 0.01; p lt 0.001) affected all examined traits, except CON and TNS. A weak association was found between production performance and ejaculate traits.
AB  - Osnovni cilj istraživanja bio je da se utvrdi uticaj rase na osobine ejakulata nerasta: volumen ejakulata (VOL, ml), koncentracija sperme (CON, x106 spermatozoida/ml), ukupan broj spermatozoida u ejakulatu (TNS, x109 spermatozoida) pokretljivost spermatozoida u nativnom ejakulatu (MON, %), pokretljivost spermatozoida nakon razreĊenja (MOD, %) i broj proizvedenih doza (NPD). Cilj je bio i da se oceni povezanost osobina iz performans testa nerasta: proseĉan životni dnevni prirast (g), debljina slanine merena na dva mesta (mm), dubina dugog leĊnog mišića (mm) i sadržaj mesa u trupu (%) sa osobinama ejakulata. Analiziran je 931 ejakulat od 36 nerasta tokom reproduktivne eksploatacije (16 nerasta landrasa i 20 nerasta velikog jorkšira). Procena uticaja izvršena je primenom procedure opšteg linearnog modela statistiĉkog paketa SAS 9.1.3 (SAS Inst. Inc., 2002-2003). Model za analizu obuhvatao je uticaj rase, sezone i linearni regresijski uticaj telesne mase na kraju performans testa. Povezanost osobina utvrĊena je primenom Pirsonovog koeficijenta korelacije. Većina ispitivanih osobina ejakulata (VOL, CON, MOD i NPD) varirala je pod uticajem rase nerasta (p lt 0,01; p lt 0,001). Masa na kraju testa (p lt 0,05; p lt 0,01; p lt 0,001) uticala je na sve ispitivane osobine, osim na CON i TNS. IzmeĊu proizvodnih performansi i osobina ejakulata utvrĊena je slaba povezanost.

Effect of immunocastration on sex glands of male Mangulica (Swallow-bellied Mangalitsa) pigs

AB  - The objective of this research was to study the effect of immunocastration on the morphometric characteristics of sex glands in male Swallow-bellied Mangalitsa pigs. The study included 24 animals (13 entire and 11 immunocastrated males). The research focused on the following traits: age at slaughter (days), live weight at slaughter (kg), growth rate (kg day(-1)), and morphometric testicle traits (volume, cm(3); weight, g; length, width, thickness, and circumference, mm). The efficacy of immunocastration was determined based on androstenone and skatole levels in adipose tissue. The group of immunocastrated animals had higher body weight at slaughter (+18.8 kg) due to higher average daily live gain (+87 g). Immunocastration resulted in reduced morphometric measures of testes. The volumes and weight of testes/epididymes were reduced by 28.9-54.4 and 32.1-53.3%, respectively. Testis length and other size-related traits were significantly reduced by 17.4-27.6%. The linear regression effect of live body weight at slaughter within the immunocastrated group on testis measurements was not significant. Within the entire group of males, the increase of live body weight at slaughter by 1 kg had an effect on the increase of volume and weight of testes/epididymes by 0.55-2.24 cm(3) and 0.52-2.28 g, respectively. Other size-related testis traits increased by 0.04-0.55 mm for each kg of body weight. Immunocastration also resulted in 79.6% decrease in the weight of accessory sex glands. The present study is the first to demonstrate that immunocastration could be a method of choice for castration of the local fatty pig breed, Mangulica (Swallow-bellied Mangalitsa).

AB  - The interest in autochthonous meat products from local pig breeds managed in comprehensive, sustainable breeding programs is expanding in Europe. Dry fermented sausages in Serbia and other southern European countries are highly appreciated food specialties. It is, therefore, desirable that study attempts to improve the quality of food and the security of traditional, dry sausages will result in products that are of higher added value and have quality standards that best meet the needs of contemporary customers. Meat and meat products from traditional pig breeds usually have an excellent public and media reputation, and are often regarded as better than the meat and meat products of conventionally raised pigs and crossbreed pigs. Traditional, dry fermented sausages, with their characteristic chemical contents and sensory properties, can be produced with suitable proportions of meat and backfat from the indigenous Mangalitsa pig breed. These outcomes should hopefully encourage the sustainable breeding of endangered Mangalitsa pigs, as there are market opportunities for kulen and sremska sausages.

The nitrite content in domestic and foreign cooked sausages from the Serbian market

The quality of pork ham: Tissue yield depending on individual factors

AB  - The study included the progeny of three boar-sires breeds (SL-Swedish Landrace; LW-Large White and P-Pietrain). A total of 201 progeny of both sexes (93 female and 108 male castrated animals), originating from 16 boar-sires, were tested. The study included the progeny of 10 SL boar-sires (sires nuRWer: 1, 2, 3, 7, 8, 9, 15, 16, 17 and 18), progeny of 3 LW sires (sires nuRWer: 4, 5 and 6) and 3 P boar-sires (sires nuRWer 14, 19 and 20), born in four seasons (winter, spring, summer and autumn). Studies have shown that, with an mean weight of a warm carcass side of 81.20 kg, the highest mean values for ham weight (RW; 10.456 kg), mass of intermuscular fatty tissue (RINT; 0.477 kg), ham bone (RB; 0.837 kg) and muscle tissue RMT, 7,939 kg) have progeny of the sires of Pietrain breed (P) compared to SL and LW sires. In comparison to animals sired by SL and LW boars, the progeny of P sires had less skin and subcutaneous fat tissue (RSFT) by 30 and 549 grams. Studies have shown that we have progeny of sires 7 and 9 of SL breed which have the lowest LSMean values for the yield of skin and subcutaneous fat tissue (869 and 876 g), which is below the mean for breed by 364 and 357 g. In addition, when it comes to intermuscular fatty tissue, the lowest established value was recorded in the progeny of sire no. 8 of SL breed (182 g), which is by 220 g less than the general mean and by 132 g below the mean of the sire breed. The animals originating from sires n. 19 and 20 showed the highest weight of muscle tissue (RMT) (8.489 and 8.118 kg) in the ham, which is by 2.853 and 2.482 kg more meat compared to the progeny of sire no. 5 of LW breed. The total weight of the ham and the ham muscle yield were influenced by (P  lt 0.01 and P  lt 0.001) sire breed, sires within the breed, gender and season of birth. A very significant (P  lt 0.001) influence of the weight of warm carcass sides on the ham weight and tissue yield was determined.
AB  - Ispitivanjem su bili obuhvaćeni potomci tri rase nerasta-očeva (SL - švedski landras; LW - veliki jorkšir i P - pijetren). Ukupno je ispitano 201 potomak oba pola (93 ženska i 108 muška kastrirana grla) koji su vodili poreklo od 16 očeva-nerasta. Ispitivanjem su bili obuhvaćeni potomci 10 nerasta rase SL (očevi broj: 1, 2, 3, 7, 8, 9, 15, 16, 17 i 18), 3 nerasta rase LW (očevi broj: 4,5 i 6) i 3 nerasta rase P (očevi broj: 14, 19 i 20) rođeni u četiri godišnje sezone (zima, proleće, leto i jesen). Istraživanja su pokazala da, pri prosečnoj masi tople polutke od 81.20 kg, najveće prosečne vrednosti za masu buta (RW; 10,456 kg), masu intermuskularnog masnog tkiva (RINT; 0,477 kg), kostiju buta (RB; 0,837 kg) i mišićnog tkiva (RMT; 7,939 kg) imaju potomci očeva rase pijetren (P) u odnosu na očeve rase SL i LW. U odnosu na grla koja potiču od očeva SL i LW potomci očeva rase P imala su manje kože i potkožnog masnog tkiva (RSFT) za 30 i 549 grama. Grla koja potiču od očeva br. 19 i 20 imala su najviše mišićnog tkiva (RMT) (8,489 i 8,118 kg) u butu što je za 2,853 i 2,482 kg više mesa u odnosu na potomke nerasta br. 5 rase LW. Na ukupnu masu buta i prinos mišića u butu uticali su (P lt 0,01 i P lt 0,001) rasa oca, očevi unutar rasa, pol i sezona rođenja. Utvrđen je vrlo visoko značajan (P lt 0,001) uticaj mase toplih polutki na masu buta i prinos tkiva.

Influence of breed, season and gender on chemical composition and meat quality of pigs

AB  - The effect of breed, gender and the farrowing season on the variability of pork quality traits was examined in the present study. The observed properties were the pH value (pH45 and pH24) of the Longissimus dorsi muscle (LD) and Semimembranosus muscle (SM), the chemical composition (water, fat, ash and protein content), the water binding capacity, the colour and thickness of the LD fibres. In the present study, the influence (P lt  0.05) of the farrowing season for both measured pH values in SM was established, as well as significant influence (P lt  0.01) on pH24 in LD, while the other factors did not influence the pH of the muscles tested. The established difference in the mean values of water content in LD between fatteners SW and LWxSL (0.69%) was statistically very significant (P lt  0.001) while the influence of genotype and sex of fatteners was not determined for fat, ash and protein content. The genotype of fatteners influenced the ability to bind water (P lt  0.001) and the meat colour (P lt  0.05) while the muscle thickness was not affected (P> 0.05).

AB  - The objective of this study was to evaluate the influence of three supplementary diets on the nutritional quality of marketable common carp. Supplementary diets (Carp1-maize, Carp2-extruded and Carp3-pelleted feed) exhibited significantly different (p≤0.05) influences on the protein, lipids, moisture and ash content in market-sized carp. The most abundant saturated FA (SFA) was palmitic acid (C16:0), the most predominant monounsaturated FA (MUFA) was oleic acid (C18:1n-9), and the most abundant polyunsaturated FA (PUFA) was linoleic acid (C18:2n-6). The highest content of SFAs was established in Carp1 (24.57% and 1888.72 mg/100 g wet fillet). MUFAs were presented in the highest quantities (61.77%, I.e. 4854.91 mg/100 g wet fillet) in Carp1, and PUFA accounted the highest quantities (33.48%, I.e. 1763.01 mg/100 g wet fillet) in Carp3. The most nutritionally beneficial n-6/n-3 ratio was obtained in Carp2 (5.83). The results obtained in this study indicate that introducing supplementary diets containing extruded or pelleted feed instead of maize improved carp nutritional quality. PCA (principal component analysis) and LDA (linear discriminant analysis) of the FAs demonstrated that carp could be reliably classified based on their supplementary feed.

abstract = "The objective of this study was to evaluate the influence of three supplementary diets on the nutritional quality of marketable common carp. Supplementary diets (Carp1-maize, Carp2-extruded and Carp3-pelleted feed) exhibited significantly different (p≤0.05) influences on the protein, lipids, moisture and ash content in market-sized carp. The most abundant saturated FA (SFA) was palmitic acid (C16:0), the most predominant monounsaturated FA (MUFA) was oleic acid (C18:1n-9), and the most abundant polyunsaturated FA (PUFA) was linoleic acid (C18:2n-6). The highest content of SFAs was established in Carp1 (24.57% and 1888.72 mg/100 g wet fillet). MUFAs were presented in the highest quantities (61.77%, I.e. 4854.91 mg/100 g wet fillet) in Carp1, and PUFA accounted the highest quantities (33.48%, I.e. 1763.01 mg/100 g wet fillet) in Carp3. The most nutritionally beneficial n-6/n-3 ratio was obtained in Carp2 (5.83). The results obtained in this study indicate that introducing supplementary diets containing extruded or pelleted feed instead of maize improved carp nutritional quality. PCA (principal component analysis) and LDA (linear discriminant analysis) of the FAs demonstrated that carp could be reliably classified based on their supplementary feed.",

Sensory properties and fatty acids profiles of fermented dry sausages made of pork meat from various breeds

AB  - In this study, the parallel examinations on fatty acid profiles and sensory properties of fermented dry sausages are presented. Three types of kulen and sremska sausages were made, which varied depending on the percentage of meat and fat derived from different pig breeds: autochthonous (Swallow-Belly Mangalitsa and Moravka) and commercial (Swedish Landrace). In sausages made from meat of commercial pig breed, the highest cholesterol content was detected. However, sausage made from the Mangalitsa pork meat contained higher levels of monounsaturated fatty acid (MUFA) and unsaturated fatty acid (USFA), and lower saturated fatty acid levels (SFA). The level of polyunsaturated (PUFA) in sausage made of Landrace pork meat was significantly higher than levels in other types. These differences between fatty acids were mostly deriving by higher total n-6 PUFA content. In a sausage made of Mangulitsa meat, the values of atherogenic (IA) and thrombogenic (IT) health lipid indexes are lower. Kulen and sremska sausages made from the Mangalitsa pork meat was superior in terms of colour, odour, taste, after taste and overall acceptability. This study demonstrate that pig breed have an effect on the chemical content, fatty acids profiles and sensory properties of dry fermented sausages.

Carcass and pork quality traits of indigenous pure breeds (Mangalitsa, Moravka) and their crossbreads

AB  - Objective of this paper was to evalutte phenotypic variability of carcass side and pork quality traits of fatteners (male castrated and female heads). Investigation included 12 pigs per group of Mangalitsa (Genotype 1), Moravka (Genotype 2), cross-breed Mangalitsa with Moravka (Genotype 3) and cross-breed Moravka with Duroc boar (Genotype 4). Results show that Mangalitsa had lower daily gain (268 g) than other genotypes (p lt 0.001). The greatest difference for fat thickness was determined between Genotype 1 and Genotype 4. As expected, the thinnest fat and maximum value for gain and depth of Musculus longissimus (ML) had the Genotype 4. The highest value for the ML surface was found in Genotype 4(47.52 cm(2)) whereas for the same trait in Mangalitsa the lowest value was observed (24.16 cm(2)). Mangalitsa had significantly lower L*, a* and b* values of ML compared with all other groups (p lt 0.001). Considering the low production performance of indigenous pig breeds, crossbreeding with the Duroc breed will contribute a improvement of growth and carcass traits.

Correlation of litter size traits

AB  - Heredity and correlation of litter size traits were observed in 3693 litters, i.e. in 1622 daughters of two genotypes Swedish Landrace genotype - SL; and F1 ♀ SLxLW. The study included daughters (minimum ten daughters per sire) of 24 sires. Heritability estimates for the total number of piglets per litter in the first, the first two parities, and for all three parities was 0.174; 0.167 and 0.135. Heritability estimates for the number of piglets born alive were 0.181; 0.160 and 0.121, and for the weight of litter at birth 0.166; 0.174 and 0.150. On the other hand, very low heritability was determined for the number of weaned piglets, litter weight of piglets reared, individual weight of born and reared piglets, i.e. for the traits that are under greater influence of the environment (from 0.004 to 0.037). Phenotypic and genetic correlations ranged from weak to complete (rp = 0.021 to rp = 0.973 and rg=0.188 to rg=0.999, respectively). Analysis of the significance of correlations showed that the genetic correlations were statistically highly significant (P  lt 0.01).
AB  - Naslednost i međusobna povezanost osobina veličine legla praćene su za 3693 legla, odnosno kod 1622 kćeri dva genotipa švedski landras - ŠL; i F1 ♀ŠLxVJ. Ispitivanjem su obuhvaćene kćeri (minimalno deset kćeri po ocu) od 24 oca. Heritabiliteti za ukupan broj prasadi u leglu u prvom, prvom i drugom i za sva tri prašenja iznosio je 0,174; 0,167 i 0,135. AB  - The influence of storage on meat colour differences between free-range Swallow Belly Mangalitsa (MA, n = 19) and commercially reared Swedish Landrace (SL, n = 17) pigs, are investigated in the present study. Proximate composition analyses were done on fresh samples of M. longissimus thoracis (LT) and M. gluteus medius (GM), while pH values and colour quality attributes were determined on fresh cuts of the muscles (day 1) and after 3 and 6 days of vacuum storage at 4 +/- 1 degrees C. MA pork had a significantly higher share of intramuscular fat, a darker colour, a higher deoxymyoglobin (Mb) content and oxy / met (oxymyoglobin / metmyoglobin) ratio, higher pH(24h) values and a slower pH decline compared to the control SL group (P  lt  0.05). Greater changes in myoglobin forms during storage were observed in MA pork, which were reflected in a significant decrease in the content of Mb and an increase in the oxy / met ratio (P  lt  0.05). After 6 days of vacuum storage, higher pH(6d) values, a lower metmyoglobin (MetMb) content and a higher oxy / met ratio of MA pork lead to the conclusion that aged meat from free-range Swallow Belly Mangalitsa pigs had better colour quality compared to Swedish Landrace pigs.

AB  - The main objective of this study was to assess the variability of ejaculate properties: volume of ejaculate (VOL, ml), sperm concentration (CON, spermatozoa/ml), total sperm count (NT) and the number of doses produced (NPD) per ejaculate under the influence of season, boar and the interval between two mounts. Reproductive efficiency of boars was analysed based on the farrowing rate (FR). The study included 341 ejaculates from seven Large White boars. Impact assessment was carried out by applying the GLM procedure of the statistical package SAS 9.1.3. The average values of VOL, CON, NT, NPD and FR were: 244.28 ml, 203.77x106 spermatozoa/ml, 43.48x109 spermatozoa, 17.39 doses and 67.58%. Ejaculate properties varied under the influence of season (P lt 0.01, P lt 0.001). The interval between two mounts did not affect only the variability of CON. The difference between the best and worst boars was 91.99x106 spermatozoa/ml of ejaculate (P lt 0.001). During summer VOL ejaculate was the lowest (191.36 ml). The highest NPD (19.04 doses) was produced during the autumn months, and during the same period the highest concentration of sperm was recorded (242.16x106 spermatozoa/ml). Regardless of the differences in the farrowing rate between boars not being statistically significant (P=0.0882), it is necessary to perform the ranking and promptly identify boars with farrowing rate below average.
AB  - Osnovni cilj istraživanja bio je da se oceni varijabilnost osobina ejakulata: volumen ejakulata(VOL, ml), koncentracija sperme (CON, spermatozoida/ml), ukupan broj spermatozoida (NT) i broj proizvedenih doza (NPD) po ejakulatu pod uticajem nerasta, sezone i intervala izmedju dva skoka. AB  - The aim of this study was to examine variability in cholesterol content and fatty acid composition in musculuslongissimus (MLLT) of various genotypes of pigs. Out of 30 male castrated animals used in the trial, 20 were Mangalitsa pigs ( Swallow Belly - SBM and White - WM) while 10 were of the Swedish Landrace breed - SL. The representative of pig meat breeds, SL had significantly less cholesterol in MLLT compared to SBM and WM pigs. The total monounsaturated fatty acids (MUFA) and unsaturated fatty acids (USFA) content was higher in SBM and WM than in SL pigs (p lt  0.001).

Variability of libido and properties of boar ejaculate

AB  - The main objective of this study was to assess the variability of libido (duration of preparing to jump, T), the duration of ejaculation (E) and the properties of ejaculate: ejaculate volume (VOL), evaluation of density of ejaculate (DEN), evaluation of native sperm motility (NAT), evaluation of diluted sperm motility (DIL), as well as the number of doses produced per ejaculate (NPD) of boars reared under production conditions. The study included 8127 ejaculates of boars of the three breeds. Ejaculates were analysed during four annual seasons. Evaluation of variance was performed using mixed model. Average values of T, E, VOL, DEN, NAT, DIL and NPD were: 3.56 min, 6.09 min, 235.82 ml, 2.03, 3.98, 3.95 and 9.90 doses. Libido, ejaculation duration and characteristics of ejaculates varied under the influence of season, year, breed. All studied traits depended on the age of the boar when taking the ejaculate (P lt 0.001) except T and DEN (P>0.05). Differences in phenotypic property values were present between boars and between ejaculates and repeatability coefficient values for all studied traits ranged from 0.08 +/- 0.01 to 0.32 +/- 0.05. The association of the investigated boar traits was weak to strong (from -0.14 to 0.81; P lt 0.01 and P lt 0.001), with the exception of the association between T and NPD (P>0.05).

AB  - In this paper, the comparative investigations on chemical content, fatty acid profiles and sensory properties of traditional fermented dry kulen sausages are presented. Five types of kulen sausages were made, which varied depending on the percentage of meat and fat derived from different pig breeds: autochthonous (Mangalitsa and Moravka) and commercial (Swedish Landrace). Kulen sausages made from Mangalitsa and Moravka pork meat had the lowest moisture and protein content and the highest total amount of fat. Sausages made from the combination of Mangalitsa and Moravka meat were superior in terms of odor, taste, aftertaste and overall acceptability. The highest cholesterol content was found in sausages made from meat of the autochthonous pig breeds. However, sausages made from the meat of Mangalitsa pigs contained higher levels of monounsaturated fatty acid and unsaturated fatty acid, and lower saturated fatty acid levels. This research indicates that pig breed affects the chemical and sensory characteristics of traditional dry fermented sausages.

Fatty acid profile of m. longissimus dorsi of Mangalitsa and Moravka pig breeds

AB  - The objective of this study was to determine the chemical composition and fatty acid content in m. longissimus dorsi (MLD) of two indigenous pig breeds (ML - Swallow-belly Mangalitsa and M - Moravka) reared in free range farm conditions and fed complete mixtures used for commercial meat pig genotypes. The body mass of ML and M pigs at slaughter was, on average, 107.14 and 107.61 kg, respectively. In MLD of M pigs, more total fat was measured compared to ML breed (6.96 % compared to 5.10 %, P lt 0.05). Protein content in MLD of ML pigs was higher by +0.92 % (P lt 0.01) compared to M pigs. Male castrates of M pigs had more fat compared to gilts of the same breed (8.64 compared to 5.29 %), and the 3.35 % difference between mean values was statistically significant (P lt 0.05). The breed of pigs influenced the total saturated fatty acids (P=0.011) and mono-unsaturated fatty acid (P=0.003) contents, but not the content of polyunsaturated fatty acids (P=0.325). In the case of saturated fatty acids in the MLD of ML and M pigs, the most common were C16:0 (25.05 % and 25.53 %) and C18:0 (12.73 % and 14.40 %). The MLD of M pigs contained 1.67 % more stearic acid compared to ML pigs (P=0.004). Pigs of ML, compared to M pigs, had more C18:1cis-9 (+2.31 %), C16:1 (+0.49 %), C17:1 (+0.10 %) and less C20:1cis-11 (-0.25 %). The content of two essential fatty acids, C18:2n-6 and C18:3n-3, did not vary according to breed or sex of pigs (P>0.05). The n-6/n-3 ratio was higher than optimal (18.7 for breed ML and 13.7 for M).

abstract = "The objective of this study was to determine the chemical composition and fatty acid content in m. longissimus dorsi (MLD) of two indigenous pig breeds (ML - Swallow-belly Mangalitsa and M - Moravka) reared in free range farm conditions and fed complete mixtures used for commercial meat pig genotypes. The body mass of ML and M pigs at slaughter was, on average, 107.14 and 107.61 kg, respectively. In MLD of M pigs, more total fat was measured compared to ML breed (6.96 % compared to 5.10 %, P lt 0.05). Protein content in MLD of ML pigs was higher by +0.92 % (P lt 0.01) compared to M pigs. Male castrates of M pigs had more fat compared to gilts of the same breed (8.64 compared to 5.29 %), and the 3.35 % difference between mean values was statistically significant (P lt 0.05). The breed of pigs influenced the total saturated fatty acids (P=0.011) and mono-unsaturated fatty acid (P=0.003) contents, but not the content of polyunsaturated fatty acids (P=0.325). In the case of saturated fatty acids in the MLD of ML and M pigs, the most common were C16:0 (25.05 % and 25.53 %) and C18:0 (12.73 % and 14.40 %). The MLD of M pigs contained 1.67 % more stearic acid compared to ML pigs (P=0.004). Pigs of ML, compared to M pigs, had more C18:1cis-9 (+2.31 %), C16:1 (+0.49 %), C17:1 (+0.10 %) and less C20:1cis-11 (-0.25 %). The content of two essential fatty acids, C18:2n-6 and C18:3n-3, did not vary according to breed or sex of pigs (P>0.05). The n-6/n-3 ratio was higher than optimal (18.7 for breed ML and 13.7 for M).",

AB  - The aim of this trial was to investigate changes in chemical and physic-chemical parameters during the production of traditional Sremska sausage (dry fermented sausage) from pork of three pig breeds: Mangalitsa (MA), Moravka (MO) and Swedish Landrace (SL). Analyses of all variants of sausages were carried out after stuffing (day 0) and on production days 3, 7, 14 and 21. The reduction in moisture during production caused the increase in protein, fat and ash contents (p lt 0.001) in all three variants of sausages, were found to be within the range for this type of sausages. Higher fat content in MA and MO sausages compared to SL variant was most likely a result of the different chemical composition of the meat from pigs of autochthonous breeds. All three sausage variants had a similar final pH value, but the mildest drop of pH was determined in MA sausages. Pig breed significantly affected (p lt 0.05) all three indicators of oxidative changes (thiobarbituric acid value, peroxide value and free fatty acid content). It was found that they were higher in SL compared with MA and MO sausages and to significantly increase during the production process.
AB  - Cilj ovog ogleda bio je da se ispitaju promene tokom proizvodnje Sremske kobasice (suva fermentisana kobasica) na tradicionalan način od mesa tri rase svinja: Mangulica (MA), Moravka (MO) i Švedski Landras (SL). Analize svih varijanti kobasica su rađene nakon punjenja (dan 0) i nakon 3-, 7-, 14- i 21-og dana proizvodnje. Smanjenje udela vode tokom proizvodnje imalo je za posledicu povećanje udela proteina, masti i pepela u svim grupama (p lt 0,001), i bilo je karakteristično za ovaj tip kobasica. Utvrđen veći udeo masti kod MA i MO kobasica u poređenju sa SL varijantom, verovatno je posledica različitog hemijskog sastava mesa autohtonih rasa svinja. Sve tri varijante kobasica su imale sličnu finalnu pH vrednost, međutim, najblaži pad pH vrednosti tokom proizvodnje utvrđen je kod MA kobasica. Rasa svinja je imala značajan uticaj na parametre oksidativnih promena (broj tiobarbiturne kiseline, peroksidni broj i sadržaj slobodnih masnih kiselina). Utvrđeno je da su bili veći kod SL u odnosu na MA i MO grupu kobasica i da se značajno povećavaju tokom procesa proizvodnje.

Libido and ejaculate traits of performance tested boars

AB  - The main objective of this study was to score variability of fertility traits of boars as influenced by breed, age at first ejaculation/collection (AFE), the lean meat content (LM), lifetime average daily gain (ADG) and age of boars. The following fertility traits were analysed: libido, duration of ejaculation (DE), ejaculate volume (VOL), the density of the ejaculate (DEN) and sperm motility (MO) of boars. Boars' libido was assessed on the basis of duration of preparing to collection (DPC). The study included 7987 ejaculates from 105 boars of three breeds: Swedish Landrace (SL; n=34), Large White (LW; n=39) and Duroc (n=32). Impact assessment was carried out using the GLM procedure of the statistical package SAS 9.1.3 (SAS Inst. Inc., 2002-2003). Of all the traits analysed, only the DPC and VOL varied under the influence of all investigated impacts. Boars of SL and LW breeds demonstrated superiority in the trait VOL (+12.53 and +11.25 ml) compared to Duroc. Ejaculates of boars with AFE from 23 to 27 weeks had the highest VOL, but with the lowest qualitative properties. Contrary to the negative trend in the manifestation of libido, increase of LM and ADG indicated the trend of increasing DE and VOL. Boars with LM of 61% and higher had the highest VOL, and the differences in relation to the first and second class were +6.32 ml (P lt 0.01) and +5.18 ml (P lt 0.05), respectively. The ejaculate volume of the boars with the highest ADG compared to the other classes was higher (P lt 0.001) by 10.88 and 9.81 ml. Boars in different ADG classes produced ejaculate with differing qualitative property DEN. Correlations between production traits and fertility traits were negligible, and unlike the ADG, only the correlation between LM and DPC was statistically significant (P lt 0.001).

Heritability, phenotypic and genetic correlations of the growth intensity and meat yield of pigs

AB  - The five year study included two genotypes of gilts of performance tested gilts, Swedish landrace and crosses F1 generation SLxLY. Of total number (n=3600), 1709 animals were genotype SL and 1891 animals were genotype SLxLY. Measuring of back fat thickness in the loin part (FT1), between 3rd and 4th lumbar vertebrae, 7cm laterally to the back line; back fat thickness (FT2) and depth of the musculus longissimus dorsi (MLD) between the 3rd and 4th rib from the rear, 7cm laterally to the back line. Assessment of meat yield was done using the ultrasonograph apparatus Piglog 105. In regard to meat yield indicators, medium heritability values were established for FT1 h2=0.461, and high values for FT2 h2=0.639, and for meat yield h2=0.633. Low heritability was established for depth of MLD (h2=0.105), life daily gain (h2=0.110) and age at the end of test (h2=0.103). Established phenotypic correlations between fat thickness FT1 and FT2 were strong (rp=0.638); between fat thickness and meat yield very strong (rp=-0.880 to -0.895), and between fat thickness and MLD very weak and negative (rg=-0.103 to -0.216). Genetic correlations were stronger than phenotypic, so between fat thickness FT1 and FT2 the correlation was complete/full (rg=0.930), also between fat thickness and meat yield (rg=-0.979 to -0.982), whereas the correlation between fat thickness and MLD was strong and negative (rg=-0.627 to -0.653). Heritability values for fat thickness and meat yield show that these traits have high level of heritability and are transfered to the progeny, whereas the level and strength of their dependance show that by decreasing the fat thickness positive influences is exhibited on meat yield, and that by increasing of depth of MLD also the meat yield is increased.
AB  - Petogodišnjim istraživanjem su bila obuhvaćena dva genotipa nazimica švedski landras i melezi F1 generacije ŠLxVJ. Od ukupnog broja (n=3600) istraživanjem je obuhvaćeno 1709 grla genotipa ŠL i 1891 grla genotipa ŠLxVJ. Merenje debljine leđne slanine i dubine musculus longissimus dorsi (MLD) i procena mesnatosti je obavljeno ultrazvučnim aparatom Piglog 105. Za pokazatelje mesnatosti utvrđeni su srednji heritabiliteti za SL1 h2=0,461, a visoki za SL2 h2=0,639, i za mesnatost h2=0,633. Nizak heritabilitet utvrđen je za dubinu MLD-a (h2=0,105), životni dnevni prirast (h2=0,110) i za uzrast (h2=0,103). Variability of ejaculate volume and sperm motility depending on the age and intensity of utilization of boars

AB  - The main objective of this study was to evaluate the effect of age (A) and the intensity of the boars' utilization (s) on the phenotypic variability of ejaculate volume (VOL) and sperm motility (MO). The study included 274 ejaculates of Large White boars (LW). Boars were divided into six classes according the age when the ejaculate was taken (10-13, 14-17, 18-21, 22-25, 26-29 and ≥30 months). Semen samples were analyzed during four seasons (spring, summer, autumn, winter). The intensity of the use of boars was seen as the impact of the group (class) of intervals between two successful collections (I; ≤ 5 , 6, 7 , 8, 9-10, 11-13, 14-21 days). Data processing was performed using the GLM procedure using the statistical package SAS 9.1.3 (SAS Inst. Inc., 2002-2003). Average values of VOL, MO, I, A, were: 178.94 ml, 90.35%, 9.37 days and 655.93 days. The effect of boars on both studied sperm traits was highly significant (p lt 0.001). The volume of ejaculate varied under the influence of boar age (p lt 0.001) and season (p lt 0.01). The effect of I on VOL and MO was not significant (p>0.05). Traits VOL and MO varied (p lt 0.001) between boars which indicated the need for individual control of each of boars used for artificial insemination. The highest VOL was determined in boars at the age of 26 to 29 months, and the difference to the boars aged 10-13 months was 62.70 ml (p lt 0.001). No statistically significant differences in regard toVOL between boars older than 17 months (from class 3 to 6) were recorded. The highest differences between winter and spring period were determined in mean values of VOL (32.15 ml; p lt 0.01). In the winter period, boar ejaculate volume was lower than in the autumn (-26.57 ml) and the difference determined was statistically significant (p lt 0.05).
AB  - Osnovni cilj istraživanja bio je da se oceni uticaj starosti (A) i intenziteta korišćenja nerasta (I) na fenotipsku varijabilnost volumena ejakulata (VOL) i pokretljivosti spermatozoida (MO). Istraživanjem je bilo obuhvaćeno 274 ejakulata nerasta rase veliki jorkšir (LW). Nerasti su prema starosti kada je uzet ejakulat podeljeni u šest klasa (10-13, 14-17, 18-21, 22-25, 26-29 i ≥30 meseci). Ejakulati su analizirani tokom četiri godišnje sezone (proleće, leto, jesen, zima). Intenzitet korišćenja nerasta posmatran je kao uticaj grupe (klase) intervala između dva uspešna skoka (I; ≤5, 6, 7, 8, 9-10, 11-13, 14-21 dan). Nisu ustanovljene statistički značajne razlike VOL izmedju nerasta starijih od 17 meseci (od klase 3 do 6). Izmedju zimskog i letnjeg perioda godine utvrdjena je najveća razlika srednjih vrednosti VOL (32,15 ml; p lt 0,01). U zimskom periodu volumen ejakulata nerasta bio je manji nego u toku jeseni (-26,57 ml) i utvrdjena razlika je bila statistički značajna (p lt 0,05).

The effect of breed, boar and season on some properties of sperm

AB  - The main objective of this study was to assess the phenotypic variability of the ejaculate volume (VOL) and progressive sperm motility (MO) under the influence of breed, boar within breed and season. The study included 555 ejaculates of Danish Landrace (DL), Danish Large White (DLW) and Danish Duroc (DD) boars. The effect of boar was analyzed within the investigated breeds. The impact of the season was investigated as the influence of the month in which the ejaculate was taken. The model included a linear regression effect of boar age when the semen was taken. Data analysis was performed using the statistical package SAS 9.1.3 (SAS Inst. Inc.., 2002-2003). Impact assessment was carried out using the GLM procedure. The impact of all factors analyzed in both sperm traits was significant to highly significant, and the observed factors largely explain the phenotypic variability VOL compared to MO. The highest values were found in VOL of DL boar (3:58 ± 164.96 ml), and the MO of boar breed DLW (85.45 ± 0.94%). Boars DD had VOL and MO below the averages of all analyzed breeds. Between boars within studied genotypes differences were established (p  lt 0.05, p  lt 0.05, p  lt 0.01 p  lt 0.001) and a boar of DLW breed compared to all tested boars had the highest volume of ejaculate sperm with progressive motility of 90.47%. Volume, or mobility varied (p  lt 0.01 or p  lt 0.05) influenced by season, and in September and October boars had ejaculates with the VOL values above average and the lowest MO. Since most VOL and MO above the annual average in June, it was possible to get the highest number of doses per ejaculate with optimal reproductive/fertile ability.

The effect of gender and breed on some properties of pig meat

AB  - This study was conducted to investigate differences in characteristics of muscles from male and female fatteners from Mangalitsa and Swedish Landrace pig breed. The research was carried out on three muscles: m. longissimus thoracis et lumborum, m. gluteus medius and m. triceps brachii. Compared to the Swedish Landrace, it was found out that the meat of the Mangalitsa had considerably higher intramuscular fat content (p lt 0.05). The highest intramuscular fat content was determined in male fatteners of Mangalitsa in m. gluteus medius (6.81%) and the lowest in female fatteners of Landrace pig breed in the longissimus muscle (1.12%). As for technological quality of meat, after cooking, meat from Mangalitsa pig had greater cooking weight loss compared to Landrace and also lower shear force (SF) values for longissimus, but higher SF values for gluteus muscle. Gender had no statistically significant effect on technological meat quality. It can be concluded, on the base of the results, that the Mangalitsa pig, had favourable meat quality traits, which are very desired for production of traditional meat products of high quality.
AB  - Ovaj ogled je imao za cilj da ispita razlike u fizičko-hemijskim karakteristikama mišića između muških i ženskih tovljenika rase mangulica i švedski landras. Istraživanje je sprovedeno na tri mišića: longissimus thoracis et lumborum, gluteus medius i triceps brachii. U poređenju sa švedskim landrasom, meso mangulica je imalo znatno veći udeo intramuskularne masti (p lt 0,05). Najveći sadržaj intramuskularne masti utvrđen je kod muških tovljenika rase mangulica u gluteus medius-u (6,81%), a najniži ko ženskih tovljenika rase švedski landras u longissimus-u (1,12%). Što se tiče tehnološkog kvaliteta, meso mangulice je imalo veći gubitak mase tokom kuvanja u odnosu na meso landrasa i niže vrednosti sile sečenja (SF) za longissimus, ali veće vrednosti sile sečenja za gluteus mišić. Pol nije imao statistički značajan uticaj na parametre tehnološkog kvaliteta mesa. Na osnovu dobijenih rezultata može se zaključiti da meso mangulice ima veoma dobre parametre kvaliteta, a koji su poželjni pri proizvodnji tradicionalnih proizvoda od mesa.

Cholesterol and total fatty acid content in m. Longissimus dorsi of mangalitsa and Swedish landrace

AB  - The objective of this paper is to investigate variability in chemical composition, total fatty acid and cholesterol content in m. longissimus dorsi (MLD) of Mangalitsa, swallow-belly (LM) and white (BM), and Swedish Landrace pigs (SL). Compared to SL, the total fat content has been 14.2% higher in BM, while it has been 10.2% higher in LM. SL fatteners contained significantly less cholesterol in MLD compared to LM and BM (-13.6 and -14.8%, P  lt = 0.05). A higher percentage of SFA (+8.5 and +10.1%, P  lt = 0.05) and PUFA (+8.0 and +9.4%, P  lt = 0.05) has been established in MLD, originating from SL fatteners, compared to both Mangalitsa strains. The total MUFA content was higher in LM and BM than in SL (P  lt = 0.05). A phenotypic correlation between protein content and ashes with water content in MLD has been positive (0.81 and 0.88), while the correlation between water content and total fats has been found to be negative (-0.99). A negative phenotypic correlation between MUFA and SFA, as well as PUFA and MUFA (-0.97 and -0.98) has been established, statistically significant at the level of P  lt = 0.001. A positive phenotypic correlation between PUFA and SFA (0.90), statistically significant at the level of P  lt = 0.001, has been found.
