Pomological and technological properties of plum cultivars grown in different regions of Serbia

Abstract
This paper encompasses the three-year results of the comparative investigation of biophysical and biochemical fruit properties of important plum cultivars (Čačanska rodna, Stenli, Požegača) grown in different regions of Serbia (Beograd, Valjevo, Kragujevac and Aleksandrovac). Total content of soluble solids, sugars (total and inverted), acids, fruit weight and juiciness with a goal to select the row material of the highest quality for making geographically protected jam from certain cultivars, were investigated. Results obtained in this study contribute to a proper zonation of plum cultivars.
U radu su prikazani rezultati trogodišnjih proučavanja pomoloških i tehnoloških karakteristika plodova tri standardne sorte šljive: Stenli Čačanska rodna i Požegača, koji su kao sirovina namenjeni za proizvodnju pekmeza Uzorci plodova za ispitivanje uzimani su iz četiri regiona Srbije Beograd, Valjevo, Kragujevac i Aleksandrovac, koji se razlikuju po svojim klimatskim i zemljišnim karakteristikama. Plodovi su brani u optimalnoj zrelosti, a zatim su određene vrednosti sledećih pokazatelja: masa ploda randman mesa ploda, rastvorljiva suva materija, ukupna suva materija, ukupne kiseline, ukupni šećeri, invertni šećeri. Dobijeni rezultati pokazuju da se sve tri ispitivane sorte uspešno mogu koristiti za spravljanje pekmeza zahvaljujući svojim dobrim tehnološkim osobinama. I gajenje šljive u različitim regionima može imati uticaja na veći ili manji sadržaj šećera od čega direktno zavisi kvalitet proizvedenog pekmeza.
