Abstract
Onion is very important vegetable worldwide. In terms of global yearly production of nearly 47 million tons, onion is on third place, just behind tomatoes and cabbage. It is highly valued vegetable for its flavor and nutritional value. It can be eaten in fresh condition as salad, boiled or mixed with other dry vegetables as a spice for dishes. Whatever the final purpose of onion is, storage systems and storage quality are of great importance. This paper gives an analysis of basic requirements for quality onion storage. Based on these facts design conceptions of onion storage and technical systems analysis are given. Some thoughts on onion presto rage preparation and manipulation are given, concerning the fact that these can be of great influence on storage process.
Crni luk predstavlja jednu od značajnijih povrtarskih kultura kako u svetu tako i kod nas. Prema svetskoj godišnjoj proizvodnji od 47 miliona tona proizvodnja crnog luka je na trećem mestu, odmah iza paradajza i kupusa. Visoko je cenjen zbog svoje nutritivne vrednosti i ukusa. Koristi se u svežem stanju kao salata, kuvan ili u smeši sa suvim povrćem kao začinski dodatak jelima. Bez obzira na krajnju namenu crnog luka, način i kvalitet njegovog uskladištenja su od izuzetnog značaja. U radu su analizirani tehnološko-tehnički uslovi kvalitetnog uskladištenja crnog luka. Na osnovu ovih parametara prikazane su osnovne koncepcije skladišnog prostora i izvršena analiza tehničkih sistema. Razmatrane su priprema i manipulacija crnim lukom neposredno pred uskladištenje, koje mogu značajno uticati na uspešnost postupka uskladištenja.
