Sensory Evaluation of Pralines Containing Different Honey Products

AB  - In this study, pralines manufactured by hand were evaluated sensorially. These pralines were obtained from dark chocolate containing 60% cocoa components, filled with Apis mellifera carnica Poll drone larvae, blossom honey and a blossom honey/pollen mixture from the protected region of Stara Planina-Eastern Serbia (a specific botanical region). The objectives of this study were investigations related to the use of sensory analysis for quality assessment of new functional products with potential benefits for human health, in particular of desserts based on dark chocolate pralines filled with different bee products characterized by a specific botanical and geographic origin, as well as of their storage properties and expected shelf life. Sensory quality (appearance, texture, odor and taste were evaluated by a group of experienced panelists immediately after the production (day 0), and then after 30, 90 and 180 days of storage under ambient conditions (temperature 18-20 degrees C). The results were statistically analyzed by the two-factorial analysis of variance (MANOVA) and with the LSD-test. It is possible to conclude that the storage time and composition of dark chocolate pralines containing different honey-bee products have statistically highly significant (p  lt  0.01) influence on the sensorially evaluated properties of pralines.

Morphometric characteristics and nectar potential of Ocimum basilicum L. var. genovese (Lamiaceae) in relation to microclimatic and edaphic environmental factors

AB  - BACKGROUND:  and Purpose: Ocimum basilicum L. var genovese was grown from seed in selected soil types (eutric cambisol, fluvisol and humoglay) in order to analyse its morpho-physiological flower preference and morphometric characteristics of aerial parts in relation to microclimatic conditions and physico-chemical soil properties. Materials and methods: The soil texture was analyzed using the "pipette method", concentration of CaCO3 was determined using the volumetric method and percentage of humus and carbon was detected using Tiurin's method. Electrometric method was used for chemical reaction of soil. The amount of nectar per flower was assessed using microcapillary method. Morphometric analysis comprised measurements of plant height, length and width of leaf internode length, petiole length and leaf number. Results and conclusions: Considering the whole flowering period, the most luxuriant growth and the highest intensity of secretion was recorded on eutric cambisol. Results of morphometric analysis showed that statistically significant difference existed between the plants on eutric cambisol and humoglay (p lt 0.05). With respect to diurnal dynamics of nectar secretion, a pattern with a single daily peak was recorded, irrespective of the type of soil Daily maximum was recorded at 8 am on eutric cambisol (0.104 mu l/flower), and at 10 am on fluvisol (0.166 mu l/flower) and humoglay (0.103 mu l/flower). After reaching the highest values, secretion had decreasing tendency toward evening, and minimal nectar amount was sampled at 6 pm in all soil types (0.006-0.016 mu l). Surprisingly, on nectar collecting day in June, the highest total daily nectar amount per flower was measured on humoglay (0.351 mu l) and the lowest on eutric cambisol (0.288 mu l). Air humidity and evaporation were positively and temperature negatively correlated with diurnal dynamics of nectar production in all soil types.

Melliferous flora of the meadow community Festuco-Hordeetum secalinii R. Jov. 1957 in the Velika Morava river valley

AB  - Melliferous potentials of the meadow association Festuco-Hordeetum secalinii R. Jov in the Velika Morava River valley were investigated in order to determine its significance for bee pasture. By analyzing the presence and contribution of melliferous species in the investigated community, and by determining the intensity of nectar production of each melliferous species, the coenotic coefficient of nectar production, representing the melliferousness of a plant community (Ccnp), was obtained. The percentage of melliferous species in the investigated phytocoenosis reached 54.78%. Regarding its high Ccnp (49.26), the phytocoenosis has a great melliferous potential and could be considered as a very significant bee pasture, especially in summer periods.
AB  - Istraživanje medonosnog potencijala mezofilne livadske zajednice Festuco-Hordeetum secalinii R. Jov, u cilju određivanja njenog značaja za pčelinju pašu, obuhvatilo je prikaz medonosne flore, kao i procenu zastupljenosti i intenziteta medenja pojedinačnih vrsta. Medonosni potencijal fitocenoze procenjen je izračunavanjem cenotičkog koeficijenta netarske produkcije (Ccnp), koji predstavlja proizvod vrednosti intenziteta medenja svake medonosne vrste (Inp) i njihove brojnosti i pokrovnosti. Od ukupno 115 vrsta koje pripadaju navedenoj fitocenozi, 49 vrsta su medonosne, što predstavlja 54,78%. S obzirom da više od polovine ovih vrsta pripada kategoriji odličnih i vrlo dobrih medonoša, a cenotički koeficijent nektarske produkcije (Cknp) je iznosio 49,26, zajednica Festuco-Hordeetum secalinii se može smatrati kvalitetnom dopunskom pčelinjom pašom, značajnom za kontinuirani razvoj i pripremu pčelinjeg društva za korišćenje neke od nastupajućih glavnih paša.
