AB  - Lakes and reservoirs are the main water resources for household, irrigation, and industrial use. Hence, it is necessary to control water pollution and have reliable information on water quality, which refers to its suitability for a particular purpose. The main objective of this study was to evaluate the suitability of water for drinking and irrigation purposes from ten artificial lakes on the territory of the Republic of Serbia. The physicochemical parameters were determined using standard analytical methods, whereas the optical emission spectrometry with inductively coupled plasma, ICP-OES, was used to determine the concentrations of 23 macro-, micro-, and trace elements in water. Health risk indices of drinking water and its suitability for irrigation purposes were evaluated. The results of physicochemical parameters, except for total organic matter, indicated that most samples were within the recommended values. Among analyzed elements, the concentration of Mg was elevated in the water of the lakes Srebrno and Prvonek. The results of health risk assessment clearly showed that there was no acute health risk (HQA < 1), whereas long-term risk (HQL) in the studied lakes was observed with respect to As (lakes Grlište and Srebrno), Mn (lakes Srebrno and Prvonek), Ni (Lake Vrutci), and Sr (Lake Grlište). The irrigation criteria indicated that the water from the examined lakes had satisfactory quality for this purpose, except for residual sodium carbonates (RSC). This criterion indicated low quality or unsuitability of the water in 7 lakes. The main outcomes provided valuable information on the suitability of water from the artificial lakes for intended uses.

Technical equipment with mechanization on medium-sized family farms

AB  - The work investigated the equipment of tractors, attachments and combines
in a medium-sized family farm. The research was conducted on the registered family
farm "Đurković" in the village of Čestin in the municipality of Knić. The farm cultivates
arable and forage crops for feeding dairy cows and fattening oxen on an area of 44 ha.
In the sowing structure, meadows are the most represented with 20 ha (45.45%),
alfalfa 5 ha (11.36%), silage maize 3 ha (6.83%) and perko 0.4 ha (0.91%). The farm
also grows barley on 2 ha, wheat on 1.5 ha, soybeans on 0.7 ha, oats on 0.4 ha, and
peppers for processing on 40 ares. The production process is carried out with three
tractors, 22 implements, a self-propelled combine for small grains and a combine for
silage. One tractor with an average engine power of 41.4 kV works 14.67 ha of
available land with 7.33 attachments. The total available power of the tractor engine is
129.43 kW, and the energy equipment of the farm is 2.94 kW/ha, which is the average
of family farms in Serbia. If the combine engine power for small grain and silage were
added, the energy equipment would increase to 7.85 kV/ha. Combines are underutilized
because they are used only for subsistence. The average age of mechanization is over
40 years, so replacement and purchase of new agricultural machinery is not possible.

AB  - The goal of the present research was to screen the antimicrobial activity of an ethanolic extract of Kitaibelia vitifolia against 30 multidrug-resistant (MDR) bacterial strains isolated from healthcare-associated infections. Minimum inhibitory concentrations (MICs) of the samples against the tested bacteria were determined using the microdilution method. MDR bacterial strains were characterized using standard biochemical tests and the commercial identification systems API 20 NE and API 20 E as: Klebsiella spp. (18 isolates-I); methicillin-resistant Staphylococcus aureus (MRSA)-3; Acinetobacter spp.-3; Pseudomonas aeruginosa-5; vancomycin-resistant Enterococcus (VRE)-1. The sensitivity of isolated bacterial strains was determined using the disc diffusion method against 25 commonly used antibiotics. The highest level of sensitivity to K. vitifolia extract was confirmed in 88.89% of Klebsiella spp. isolates, E. coli ATCC 25922, two strains of MRSA (1726, 1063), Acinetobacter spp. strain 1578, and VRE strain 30, like Enterococcus faecalis ATCC 29212 (MIC =< 2.44 μg/mL). The lowest sensitivity was exhibited by 75.00% of Acinetobacter spp. (strains 1577 and 6401), where the highest values for MICs were noted (1250 μg/mL). The results indicate that the extract of K. vitifolia could be a possible source for creating new, efficient, and effective natural medicines for combat against MDR strains of bacteria.

AB  - Pollination and temperature are predominant factors affecting the progamic phase of sexual plant reproduction. In light of climate change and the emergence of increasing temperatures, new knowledge is necessary to encourage fruit breeding programmes to develop cultivars adapted to these changes, as well as to find the best incompatibility relationships with the aim of achieving high fruit quality and yield. This research was conducted to reveal the effect of pollination treatments and temperature on the progamic phase and fruit set in three European plum (Prunus domestica L.) cultivars (‘Jojo’, ‘Hanita’ and ‘Katinka’) resistant/tolerant to Sharka virus using fluorescent microscopy. Reproductive parameters (flowering overlapping, pollen germination, number of pollen tubes in the upper part of the style and locule of the ovary, dynamics of pollen tubes growth and initial and final fruit set) were investigated in vivo under different pollination treatments (cross, open and self-pollination). The influence of different temperature regimes (20 °C, 23 °C and 26 °C) on the progamic phase was also observed under cross and self-pollination. The pollination treatments significantly influenced the number of pollen tubes in the style and ovary, as well as dynamics of pollen tubes in different regions of pistil. Pollen tubes showed better growth in different crossing combinations compared to open and self-pollination. Higher temperatures accelerated pollen tube growth and reduced the time they need to reach ovules. Generally, ‘Jojo’ appeared to be the best pollenizer among the examined cultivars, while ‘Katinka’ exhibited the best response of pollen tube growth to various temperature regimes. The differences observed between growth of the pollen tubes in each genotype-temperature combination revealed that certain crossing combinations were better adapted to higher temperatures so this can be taken into account as one of the adjustments to climate change. The ability of cultivars to respond to high temperatures in the progamic phase can also be helpful for breeding programs in developing new cultivars better adapted to different temperature conditions.

Techno-Functional Properties of Burgers Fortified by Wild Garlic Extract: A Reconsideration

AB  - The aim of this research was to examine the chemical properties of freshly squeezed wild garlic extract (FSWGE) and its use as an additive in burgers (BU). Technological and sensory properties of such fortified burgers (BU) were determined. LC-MS/MS analyses identified thirty-eight volatile BAC. Allicin prevalence (11.375 mg/mL) is the key parameter determining the amount of FSWGE added in raw BU (PS-I 1.32 mL/kg, PS-II 4.40 mL/kg, and PS-III 8.79 mL/kg). Minimum inhibitory concentrations (MIC) and minimum bactericidal concentration (MBC) values of the FSWGE and evaporated FSWGE (EWGE) were determined against the six microorganisms using a microdilution method. The data indicated that using FSWGE can result in a reduced risk of Serratia marcescens (MIC = 50 mg/mL; MBC = 60 mg/mL), Listeria monocytogenes (MIC = MBC = 90 mg/mL), Escherichia coli and Staphylococcus aureus (MIC = 90 mg/mL; MBC ≥ 100 mg/mL), and Salmonella enteritidis and Enterococcus faecium (MIC = 100 mg/mL; MBC > 100 mg/mL) in BU. Changes in antioxidant (AOX) capacity were followed during cold storage (up to 10 days) and freezing (90 days). It was shown that PS-III had the highest level of AOX capacity during the entire period of cold storage, revealing 8.79 mL FSWGE/kg BU as the most suitable effective concentration. Adding FSWGE did not negatively affect the technological and physico-chemical properties during both cold and freeze storage. Regarding sensory evaluation, modified BU received mostly higher scores compared to control. The results of this study have demonstrated the great potential of wild garlic extract usage in the creation of safe products with prolonged shelf life. © 2023 by the authors.

AB  - Meat manufacturers are nowadays in a very unenviable position. Both meat and meat products require the utilization of various additives due to their chemical composition. On the other hand, consumers demand fresh, additive-free, and high-quality products with extended shelf-life, which might be considered as healthier, even functional food. These facts push manufacturers and researchers in pursuit of modern technologies and supplements to meet these high demands. Since a high daily intake of sodium and fat might cause severe health issues, reducing these ingredients in meat products is the first task towards healthier food. Sodium can be reduced by ultrasound, high-pressure processing, pulsed electric field, and replacement of NaCl with KCl, calcium gluconate, calcium glycerophosphate, calcium lactate, and monosodium glutamate. The reduction of the fat content can be achieved through a decrease in the amount of fatty tissue in the inital mixture and/or replacement with non-lipid components, or by partial fatty tissue replacement with oils rich in polyunsaturated fatty acids. Utilization of plant proteins (soy, wheat gluten, pea, chickpea, lentil, potato, barley, oat, rice, etc.), mycoproteins or micro-algae proteins, plant fats (palm and coconut fat, canola, sunflower, soy and corn oil, etc.), and polysaccharides (starches, fibers), accompanied by a meat-like fibrous structure, resulted in delicious “meat” products, which are considered a healthier alternative to real meat. Growing interest in the replacement of potentially adverse synthetic meat additives favors the use of plant (herb, fruit and vegetable) extracts, as an endless source of bioactive substances with strong antioxidant and antimicrobial activities. These extracts can be used either in raw meat or meat products, as well as in the fodder. Reformulation strategies strengthen and ensure the willingness of consumers to pay a higher price for their own demands regarding the naturalness of synthetic, clean-labeled, additive-free meat products. After a gradual alignment with strategic national/international recommendations and legal/sub-legal frameworks, the added value of such meat products opens wide the door to new segments/entire markets.
