AB  - Sturgeon aquaculture is economically important in many countries, for both meat and caviar production. Sturgeon is the common name for 27 species of fish belonging to the family Acipenseridae. Among them, only the sterlet (Acipenser ruthenus) and the Siberian sturgeon (Acipenser ba-erii) completes the lifecycle in fresh water. In Serbia, in the last few years, aquaculture enterprises have shown more interest in farming these fish species. Also, the importance of sturgeon aquaculture grows due to the rapid decrease of wild populations caused by overfishing, water pollution and destruction of habitat. The development of sturgeon aquaculture activities has been accompanied by the disease outbreaks, and possibility of the emergence and rapid dissemination of several infectious disease agents may represent serious problem in sturgeon aquaculture. Several viral, bacterial , fungal and parasitic diseases have been reported worldwide. Due to the limited knowledge about epizootiology and disease control methods, infectious diseases may represent a major challenge in sturgeon aquaculture. Moreover, none of the diseases reported in sturgeon are regulated in the World Organization for Animal Health (OIE) or European Union (EU) legislations. Due to the increasing interest in sturgeon aquaculture in Serbia present study is focused on the most important pathogens that may represent a threat to sturgeon aquaculture in Serbia.
AB  - Akvakultura jesetre ima veliki ekonomski značaj u brojnim zemljama, kako za dobijanje mesa tako i za proizvodnju kavijara. Jesetra je uobičajeno ime za 27 vrsta riba koje pripadaju porodici Acipenseridae. Među njima, samo kečiga (Acipenser ruthenus) i sibirska jesetra (Acipenser baerii) pro-vode ceo životni ciklus u slatkoj vodi. Poslednjih godina, u Srbiji postoji veća zainteresovanost za uzgoj ovih vrsta riba. Značaj akvakulture jesetre raste zbog brzog opadanja njihovog broja u prirodi, izazvanog prekomernim izlivom, zagađenjem voda i uništavanjem staništa. Razvoj akvakulture jesetre je praćen pojavom bolesti, a mogućnost pojave i brzog širenja uzročnika zaraznih bolesti može predstavljati ozbiljan problem. Više virusnih, bakterijskih, gljivičnih i parazitskih bolesti je uočeno širom sveta. Zbog ograničenih podataka o epizootiologiji i metodama kontrole bolesti, zarazne bolesti mogu predstavljati veliki izazov u akvakulturi jesetri. Šta više, nijedna od bolesti utvrđenih kod jesetri nije regulisana od strane Svetske organizacije za zdravlje životinja (OIE) niti zakonodavstva Evropske unije (EU). Zbog sve većeg interesovanja za akvakulturu jesetre u Srbiji, u ovom radu je ukazano na najvažnije patogene koji mogu predstavljati pretnju za zapate jesetre u akvakulturi.

AB  - The intensive aquaculture remains the world's fastest growing sector producing food of animal origin. In fact, it is the only animal food-producing sector growing faster than the human population, and provides an acceptable supplement to and substitute for wild fish. A number of cyprinid diseases have emerged globally and their study has become increasingly important. The expansion of aquaculture, which has relied heavily on the movement of animals and farming species new to aquaculture, has been paralleled with disease emergence. In the last few years several emerging or re-emerging fish diseases have been detected in cyprinid fish populations in Serbia. In this paper, the authors overview the major viral threats for cyprinid fishes in Serbia.
AB  - Nа svеtskоm nivоu, intеnzivnа аkvаkulturа је nајbržе rаstući sеktоr zа prоizvоdnju hrаnе živоtinjskоg pоrеklа. Štа višе, tо је јеdini sеktоr kојi rаstе bržе оd lјudskе pоpulаciје i оbеzbеđuје znаčајnu dоpunu i zаmеnu izlоvlјаvаnju ribа iz оtvоrеnih vоdа. Nа žаlоst оvај trеnd је prаćеn pојаvоm brојnih bоlеsti ciprinidа nа glоbаlnоm nivоu. Еkspаnziја аkvаkulturе, kоја sе u vеlikој mеri оslаnjа nа trgоvinu i prоmеt ribа, uklјučuјući i vrstе kоје rаniје nisu kоrišćеnjе u аkvаkulturi је dоvеlа i dо istоvrеmеnоg širеnjа pаtоgеnа. U pоslеdnjih nеkоlikо gоdinа u pоpulаciјi ciprinidnih ribа u Srbiјi оtkrivеnо је nеkоlikо nоvih bоlеsti, а uоčеnа је i pоnоvnа pојаvа rаniје prisutnih bоlеsti. U оvоm rаdu аutоri prеzеntuјu nајznаčајniје nоvе i prеtеćе bоlеsti ciprinidа u Srbiјi.

AB  - The objective of this study was to evaluate the influence of three supplementary diets on the nutritional quality of marketable common carp. Supplementary diets (Carp1-maize, Carp2-extruded and Carp3-pelleted feed) exhibited significantly different (p≤0.05) influences on the protein, lipids, moisture and ash content in market-sized carp. The most abundant saturated FA (SFA) was palmitic acid (C16:0), the most predominant monounsaturated FA (MUFA) was oleic acid (C18:1n-9), and the most abundant polyunsaturated FA (PUFA) was linoleic acid (C18:2n-6). The highest content of SFAs was established in Carp1 (24.57% and 1888.72 mg/100 g wet fillet). MUFAs were presented in the highest quantities (61.77%, I.e. 4854.91 mg/100 g wet fillet) in Carp1, and PUFA accounted the highest quantities (33.48%, I.e. 1763.01 mg/100 g wet fillet) in Carp3. The most nutritionally beneficial n-6/n-3 ratio was obtained in Carp2 (5.83). The results obtained in this study indicate that introducing supplementary diets containing extruded or pelleted feed instead of maize improved carp nutritional quality. PCA (principal component analysis) and LDA (linear discriminant analysis) of the FAs demonstrated that carp could be reliably classified based on their supplementary feed.

Determination of Niclosamide and its Metabolites in Liver and Muscles of Common Carp (Cyprinus carpio) Fingerlings

AB  - BACKGROUND: Niclosamide is a medication used to treat tapeworm infestation in animals and humans. It is also lampricide and molluscicide, and can be used in in agriculture as a pesticide. In the treatment of parasitic diseases in fish, niclosamide can be used as bath or mixed with the feed. Its most important use in common carp (Cyprinus carpio) is for the treatment of Bothriocephalus acheilognathi, which is a very common parasite in this fish species. The aim of this study was to determine the concentrations of niclosamide (NIC) and its metabolite 2-chloro4-nitro aniline (CNA) and 5-chloro salycilic acid (CSA) in the liver and muscles of common carp fingerlings. Materials, Methods & Results: The fish for the experiment were obtained from Kapetanski Rit fish pond, and were acclimated to test conditions at 20.5 +/- 1 degrees C. Common carps with an average mass of 60 +/- 10 g were treated with niclosamide in concentration of 2 g/kg of feed during five consecutive days. The experiment was performed in two treatments: one control and niclosamide, in three replications. Each group contained of 30 fish, in 120 L polyethylene tanks. At the end of the treatment, the levels of niclosamide residues were determined using a high performance liquid chromatography (HPLC) analysis during over 13 days. The mean values of niclosamide and CNA concentrations in the muscles ranged from 27.7 mu g/kg starting from the first day to  lt  0.5 mu g/kg on the 11th day and 14.2 mu g/kg from the first day to  lt  1 mu g/kg on the 9th day. The CSA metabolite in muscles were  lt  1 mu g/kg during throughout the entire study. The niclosamide concentration in the liver were found to be 51.5 (30.2-61.8) mu g/kg the first day and decreased proportionally to  lt  0.5 mu g/kg on the13th day. CNA level in the liver of treated Common Carps amounted to 170.1 (157-181) mu g/kg on the first day and continuously declined until the 13th day when recorded values were  lt  1 mu g/kg. The CSA concentrations in the liver reached a maximum level of 11.5 (10.1-12.8) mu g/kg on the 7th day and fell to  lt  1 mu g/kg on the 13th day. Discussion: Niclosamide use in fish is questionable, primarily due to the possible toxic effects on some aquatic organisms. In Serbia, niclosamide preparation for use in aquaculture, has been produced by Veterinarski zavod Subotica since 1984 when it was registred for the first time. Niclosamid degradation mechanism showed that the metabolism of niclosamide resulted in two main metabolites CNA and CSA. Withdrawal of niclosamide and its residues in the liver and muscle in the present investigation lasted from 9 to 13 days. This decrease in residues concentrations is expected and depends primarily on several factors such as the length and concentration of drug with which the fish is treated, biotransformation, excretion and decomposition of used drug. Niclosamide and CNA were proportionally decreased during the withdrawal time, while the CSA value increased to the seventh day although the fish during this period no longer consumed food with niclosamide, after which the value then decreased until the end of its elimination. This is also not unexpected because it is known that liver and gallbladder is a major organ for collection, storage and elimination of chemical residues. Although the treated fish received 2 mg of the niclosamide per g of feed for five consecutive days results obtained in this study indicate that the maximal residues concentrations were much lower than doses of niclosamide that each fish absorbed into the body. Data obtained during this study provided information about the concentration and withdrawal times of niclosamide and its residues CNA and CSA in the liver and muscles of common carp treated orally.

abstract = "BACKGROUND: Niclosamide is a medication used to treat tapeworm infestation in animals and humans. It is also lampricide and molluscicide, and can be used in in agriculture as a pesticide. In the treatment of parasitic diseases in fish, niclosamide can be used as bath or mixed with the feed. Its most important use in common carp (Cyprinus carpio) is for the treatment of Bothriocephalus acheilognathi, which is a very common parasite in this fish species. The aim of this study was to determine the concentrations of niclosamide (NIC) and its metabolite 2-chloro4-nitro aniline (CNA) and 5-chloro salycilic acid (CSA) in the liver and muscles of common carp fingerlings. Materials, Methods & Results: The fish for the experiment were obtained from Kapetanski Rit fish pond, and were acclimated to test conditions at 20.5 +/- 1 degrees C. Common carps with an average mass of 60 +/- 10 g were treated with niclosamide in concentration of 2 g/kg of feed during five consecutive days. The experiment was performed in two treatments: one control and niclosamide, in three replications. Each group contained of 30 fish, in 120 L polyethylene tanks. At the end of the treatment, the levels of niclosamide residues were determined using a high performance liquid chromatography (HPLC) analysis during over 13 days. The mean values of niclosamide and CNA concentrations in the muscles ranged from 27.7 mu g/kg starting from the first day to  lt  0.5 mu g/kg on the 11th day and 14.2 mu g/kg from the first day to  lt  1 mu g/kg on the 9th day. The CSA metabolite in muscles were  lt  1 mu g/kg during throughout the entire study. The niclosamide concentration in the liver were found to be 51.5 (30.2-61.8) mu g/kg the first day and decreased proportionally to  lt  0.5 mu g/kg on the13th day. CNA level in the liver of treated Common Carps amounted to 170.1 (157-181) mu g/kg on the first day and continuously declined until the 13th day when recorded values were  lt  1 mu g/kg. The CSA concentrations in the liver reached a maximum level of 11.5 (10.1-12.8) mu g/kg on the 7th day and fell to  lt  1 mu g/kg on the 13th day. Discussion: Niclosamide use in fish is questionable, primarily due to the possible toxic effects on some aquatic organisms. In Serbia, niclosamide preparation for use in aquaculture, has been produced by Veterinarski zavod Subotica since 1984 when it was registred for the first time. Niclosamid degradation mechanism showed that the metabolism of niclosamide resulted in two main metabolites CNA and CSA. Withdrawal of niclosamide and its residues in the liver and muscle in the present investigation lasted from 9 to 13 days. This decrease in residues concentrations is expected and depends primarily on several factors such as the length and concentration of drug with which the fish is treated, biotransformation, excretion and decomposition of used drug. Niclosamide and CNA were proportionally decreased during the withdrawal time, while the CSA value increased to the seventh day although the fish during this period no longer consumed food with niclosamide, after which the value then decreased until the end of its elimination. This is also not unexpected because it is known that liver and gallbladder is a major organ for collection, storage and elimination of chemical residues. Although the treated fish received 2 mg of the niclosamide per g of feed for five consecutive days results obtained in this study indicate that the maximal residues concentrations were much lower than doses of niclosamide that each fish absorbed into the body. Data obtained during this study provided information about the concentration and withdrawal times of niclosamide and its residues CNA and CSA in the liver and muscles of common carp treated orally.",

As would be expected, many viral pathogens can affect this group. The most pathogenic of these are the rhabdoviruses, a reovirus and three herpesviruses. Cyprinid herpesviruses can cause significant economic losses in aquaculture, and some of these viruses are oncogenic. The three herpesviruses are closely related but cause distinctly different diseases. Fish pox, caused by cyprinid herpesvirus 1 (CyHV-1), is one of the oldest known fish diseases, being recorded as early as 1563. It takes the form of a hyperplastic, epidermal papilloma on common carp. Cyprinid herpesvirus 2 (CyHV-2) is causative agent of herpesviral hematopoietic necrosis (HVHN). The herpesvirus was first isolated from cultured goldfish in Japan. It causes a severe epizootic but no external clinical signs were apparent on affected fish. One of the most economically important and researched viral diseases of carp is koi herpesviral disease caused by cyprinid herpesvirus 3 (CyHV-3). The aim of this paper is to present the current knowledge on herpesvirus diseases of the cyprinids.
AB  - Ciprinide, najveća poznata familija riba, koja obuhvata šaranske vrste riba, je rasprostranjena širom sveta, sa mnogim vrstama koje imaju veliki ekonomski značaj u akvakulturi. Kao što bi se moglo očekivati, mnogi virusi mogu delovati na ovu grupu, među kojima su od najvećeg značaja pripadnici familija rabdovirusa, reovirusa i herpesvirusa. Herpesvirusi ciprinida mogu izazvati značajne ekonomske gubitke u akvakulturi, a neki od njih virusa su onkogeni. Iako su veoma srodni herpesvirusi ciprinida izazivaju različite bolesti sa veoma različitim karakteristikama. Boginje riba, koje izaziva herpesvirus 1 (CyHV-1), je jedno od najstarijih poznatih bolesti riba, utvrđeno još 1563. godine. Ovo oboljenje se po pravilu ispoljava u vidu hiperplastičnih papilomatoznih promena epiderma šarana. Herpesvirus 2 (CyHV-2) je uzročnik herpesvirusne hematopoezne nekroze (HVHN). Ovaj virus je prvi put izolovan iz zlatnih ribica u Japanu. Kao posledica delovanja uzročnika dolazi do pojave značajnih epizootija bez izraženih kliničkih znakova kod obolelih riba. Jedno od ekonomski najznačajnijih virusnih oboljenja šarana je koi herpesviroza izazvana ciprinim herpesvirusom 3 (CyHV-3). Cilj ovog rada je da se predstave aktuelna saznanja o oboljenjima ciprinida izazvanih herpesvirusima.

AB  - U ovom radu razmatrane su promene grupa masnih kiselina (zasićenih, mononezasićenih, polinezasićenih n-3 i n-6, kao i njihovog odnosa n-3/n-6) u zavisnosti od sadržaja lipida u mesu šarana sa dve vrste prihranjivanja (ekstrudirane hrane i kukuruza). Vrsta korišćene hrane značajno je uticala na sadržaj lipida deponovanih u tkivu ribe. Korelacija lipida sa sastavom masnih kiselina pokazala je, da se sa povećanjem sadržaja lipida u mesu šarana, masnokiselinski sastav značajno menjao: povećavale su se mononezasićene masne kiseline, sa dominantnom oleinskom kiselinom (18:1n-9), a istovremeno smanjivale n-3 i n-6 polinezasićene masne kiseline. Istraživanja koja su prikazana u ovom radu su ukazala na opravdanost prihranjivanja šarana ekstrudiranom hranom u cilju poboljšanja kvaliteta mesa ribe.

AB  - Organohlorni pesticidi (OCP) su grupa jedinjenja široko zastupljena u prirodi a samim tim i u hrani koju konzumiramo. Da bismo za proizvod rekli da je bezbedan za upotrebu neophodno je da sadržaj OCP-a u njemu bude manji od maksimalno dozvoljenih vrednosti koje su propisane važećim Pravilnikom. Identifikacija ove grupe jedinjenja se vrši gasnom hromatografijom sa masenim detektorom. Priprema uzoraka za analizu sa brzom QuECHERS metodom obezbeđuje da za kratko vreme, pouzdano ekstrahujemo analite od interesa. U našoj studiji ispitivali smo sadžaj 19 organohlornih pesticida u filetima oslića, ribljem proizvodu popularnom u našoj zemlji. Ispitivanja su pokazala da se koncentracija OCP-ova u ovim proizvodima nalazi znatno ispod maksimalno dozvoljenih koncentracija. Organohlorni pesticidi se akumuliraju u hrani i okruženju što izaziva zabrinutost zbog potencijalnih rizika po ljudsko zdravlje kao i zbog narušavanja ekološke ravnoteže (Kartalovic et al, 2015). U predhodnim decenijama organohlorni pesticidi su se koristili širom sveta kako bi unapredili poljoprivrednu proizvodnju. Globalna upotreba ove grupe jedinjenja je od 1950. godine dovela je do povećanja njihove potrošnje i do pedeset puta, paralelno sa rastom stanovništva (Nath, 2013). U našoj studiji ispitivali smo slučajno izabrane uzorke iz marketa. Uzorci su do ispitivanja čuvani u orginalnom pakovanju u skladu sa  preporukom proizvođača. Na osnovu ispitivanja 18 uzoraka zaključeno je da je sadržaj organohlornih pesticida znatno niži od maksimalno dozvoljenih koncentracija u ribi, koje su propisane važećim Pravilnikom Republike Srbije. Opseg koncentracija OCP-a se kretao od 0.0065-0.0097 mg/kg.
Generalno, svi pesticidi su toksične supstance dizajnirane da ubiju štetočine sa svojim otrovnim ili štetnim efektima. Direktno ili indirektno pesticidi mogu ući u ljudsko telo kroz lanac ishrane i konačno, mogu prouzrokovati različite efekte na ljudsko zdravlje, poput alergijskih reakcija uključujući i sterilitet i kancer. Zagađivanje hrane sa ovim supstancama se smatra jednim od najopasnijih aspekata u poslednjih nekoliko godina. Riba i riblji proizvodi mogu biti kontaminirani sa hloriovanim ostacima kroz različite izvore. Ovi kvaliteti ih čine najopasnijom grupom hemikalija kojima prirodni sistemi mogu biti izloženi i funkcionišu kao hemijski indikatori antropogenog pritiska i zagađenja (Baiarri i dr., 2001; Storelli et al.,2004). Zbog  činjenice da su OCP ipak prisutni u ovim proizodima neophodno je iste izloziti stalnom monitoringu s ciljem obezbeđivanja plasmana samo bezbednih proizvoda na naše trzište.

Direktno ili indirektno pesticidi mogu ući u ljudsko telo kroz lanac ishrane i konačno, mogu prouzrokovati različite efekte na ljudsko zdravlje, poput alergijskih reakcija uključujući i sterilitet i kancer. Zagađivanje hrane sa ovim supstancama se smatra jednim od najopasnijih aspekata u poslednjih nekoliko godina. Riba i riblji proizvodi mogu biti kontaminirani sa hloriovanim ostacima kroz različite izvore. Ovi kvaliteti ih čine najopasnijom grupom hemikalija kojima prirodni sistemi mogu biti izloženi i funkcionišu kao hemijski indikatori antropogenog pritiska i zagađenja (Baiarri i dr., 2001; Storelli et al.,2004). Zbog  činjenice da su OCP ipak prisutni u ovim proizodima neophodno je iste izloziti stalnom monitoringu s ciljem obezbeđivanja plasmana samo bezbednih proizvoda na naše trzište.",

AB  - Republika Srbija nema sopstvenu proizvodnju morskih riba i poseduje svega nekoliko objekata za preradu morske ribe. Sva morska riba se uvozi, samim tim su i sve konzerve od komada i komadića tunja na našem tržištu uvezene. Uvoz konzervi od tunja, kao i svih drugih ribljih proizvoda prilikom ulaska u našu zemlju se mora podvrgnuti kontroli granične veterinarske inspekcije. Odmah nakon prispeća pošiljke na granični prelaz lice odgovorno za pošiljku, pored obrasca zajedničkog veterinarskog ulaznog dokumenta za proizvode, podnosi i zahtev za veterinarsko sanitarni pregled. Svaka pošiljka konzervi od tunja u uvozu u Republiku Srbiju mora biti podvrgnuta pregledu dokumentacije, identifikaciji pošiljke i fizičkom, hemijskom, mikrobiološkom i senzorskom pregledu.
Sadržaj histamina u ribama i proizvodima od riba je pre svega kriterijum bezbednosti hrane obzirom da utiče na zdravlje ljudi, ali je u isto vreme i pokazatelj higijene procesa i svežine proizvoda. Cilj ove studije je da se obezbede informacije o prisustvu histamina u uvezenim konzervama od tunja i da se ukaže na značaj granične inspekcije u kontroli histaminske intoksikacije koja nastaje kao posledica konzumiranja konzervi od tunja sa povišenim sadržajem histamina. 
Tokom jednogodišnje studije (od januara do decembra 2014. godine) ispitano je 97 proizvodnih partija uvezenih konzervi od tunja. Svih 97 proizvodnih partija je uzorkovano tokom granične inspekcije i ispitano u laboratorijama Naučnog instituta za veterinarstvo „Novi Sad“. Ispitivanje sadržaja prisustva histamina u konzervama od tunja je urađeno ELISA metodom sa test kitom HIS-E02 (Immunolab GmbH, Germany).  
Rezultati studije pokazuju da je 3,09 % proizvodnih partija uvezenih konzervi od tunja imalo nezadovoljavajuće povećan nivo sadržaja histamina i da nisu bezbedne za ljudsku ishranu. Sve proizvodne partije kod kojih je dokazan povećan nivo histamina, odnosno koje su proglašene za nebezbedne za ljudsku ishranu su vraćene, a uvoz je zabranjen. Granična inspekcija, tj. ispitivanje pri graničnoj inspekcije predstavlja značajnu preventivnu meru u sprečavanju histaminske intoksikacije kao posledice konzumiranja konzervi od tunja sa povišenim sadržajem histamina.

AB  - Riba predstavlja znatan deo ishrane ljudi u svetu. Pre svega, riba je značajan izvor proteina (15-24%) visoke biološke vrednosti, bogata je mineralima, vitaminima, a posebno esencijalnim masnim kiselinama za koje je dokazano da pogoduju u prevenciji mnogobrojnih oboljenja. Zbog velikog značaja polinezasićenih masnih kiselina n-3 klase,  u Evropi su date i preporuke o optimalnom dnevnom unosu. Međutim, pored hranljivih svojstava koje ima, riba može biti i izvor različitih bioloških i hemijskih opasnosti. Od bioloških opasnosti posebno su značajni paraziti (Trematodae, Nematodae, Cestodae), bakterije (Salmonella spp, E. coli, Vibrio parahemolyticus, Vibrio vulnificus, Listeria monocytogenes, Clostridium botulinum, Staphyloccocus aureus), virusi (Norwalk virus, Entero virusi, Hepatitis A, Rotavirus) i biotoksini. Najznačajnije hemijske opasnosti su policiklična aromatična jedinjenja, histamin i teški metali (živa, olovo, kadmijum, arsen, gvožđe). Alergije usled konzumiranja pojedinih vrsta namirnica su u porastu poslednjih godina. Veliki pokret oko pravilnog načina ishrane je doveo do toga da ljudi sve češće konzumiraju ribu, proizvode od ribe kao i različite plodove mora. Pored različitih opasnosti koje mogu poticati iz ribe, posebni značaj poslednjih godina se daje ribi kao potencijalnom alergenu. Naime, veliki broj alergija koje se javljaju u svetu pripisuju se alergenima koji potiču iz mesa ribe, pre svega proteinima mesa ribe. Učestalost alergija koje se povezuju za unosom mesa ribe varira u Evropskim zemljama (Norveška 1,5%; 2,3% Turska, 2,3% Grčka; Švedska 1.2-3.2 %). Kao najznačajniji proteinski alergen iz mesa ribe navodi se parvalbumin (ß tip), koji je izolovan kod velikog broja vrsta. Smatra se da su šaran i bakalar najčešći izvori parvalbumina koji se dovodi u vezu sa različitim vidovima alergijskih reakcija. Potencijalni alergeni su takođe kolagen i želatin koji su izolovani iz kože i pojedinih organa riba. Takođe, značajan alergen iz plodova voda je i tropomiozin, arginin kinaza, aldolaza. Pored ovih alergena, značajni alergeni mogu da potiču iz ikre, pojedih vrsta kavijara, a opisani su slučajevi gde su alergijske reakcije povezane sa kolagenom koji se nalazi u ekstracelularnom matriksu proteina. Alergeni koji dovode do različitih alergijskih reakcija, pored proteina mesa ribe, mogu poticati i od gotovih proizvoda od ribe. Tu spadaju različiti panirani proizvodi od ribe koji sadrže celer, gluten i druge dodatke koji mogu biti potencijalni alergeni. Zbog značaja koji imaju na zdravlje ljude, tehnologija je omogućila različite metode za detekciju ovih alergena. Kao neke od njih navode se ELISA (Enzyme-linked immunosorbent assay), RAST (Radioallergosorbent test) i RIE (Rocket Immuno-electrophoresis). Koja će se metoda detekcije primeniti, prvenstveno zavisi od dostupnosti alergena i praga njegove detekcije. Industija mesa je razvojem tehnologije uvela pojedine tehnološke prosece koji imaju mogućnost inaktivacije pojedinih alergena, pre svega proteina mesa ribe. Visoke temperature koje se primenjuju u obradi mesa ribe mogu uticati na ove alergene, tako što će smanjiti alergeni potencijal, dok neki tehnološki postipci nemaju tu mogućnost.

AB  - U Srbiji se vrši program nadzora virusnih i bakterijskih bolesti na osnovu Programa mera zdravstvene zaštite životinja, u skladu sa  propisima Evropske Unije, i to: virusne hemoragične septikemije (VHS) i zarazna hematopoezne nekroze (IHN), zarazne nekroze pankreasa (IPN), prolećne viremije šarana (SVC) i renibakterioze (BKD). Cilj programa praćenja i nadzora bolesti riba je dobijanje i održavanje statusa slobode od bolesti, iskornjivanje ili sprečavanje širenja bolesti. Primarna ciljna populacija u programu nadzora su kalifornijska pastrmka i šaran.
U Srbiji postoji nacionalno zakonodavstvo kao osnov za nadzora i kontrolu bolesti riba, kao i lista bolesti obaveznih za prijavljivanje. Pored nacionalnog zakonodavstva, prihvaćeni su i principi navedeni u Direktivi 2006/88/EC, koji se odnose na zahteve za kontrolu zdravlje riba u akvakulturi i njihovih proizvoda. Praćenje i nadzor virusnih bolesti vrše se na osnovu postupaka ispitivanja datih u Odluci Komisije 2001/183/EC, a za bakterijske bolesti, koriste se standardne dijagnostičke procedure.
Klinički pregledi na ribnjacima vrše se dva puta godišnje i uzimaju se uzorci za virološka i bakteriološka ispitivanja, u svrhu dokumentovanja odsustva bolesti. Postupak ispitivanja, dat u Priručniku OIE za dijagnostiku bolesti riba, osnova je za ispitivanja. Uzorci svih kategorija riba iz 56 šaranskih i 52 pastrmska ribnjaka se godišnje ispituju na prisustvo bolesti. Za virusološka ispitivanja su korišćeni homogenati bubrega, slezine, jetre i škrga. Pulirani parenhimatozni organi i škrge su homogenizovani i centrifugirani na 2500 x g, 20 minuta. Za izolaciju, supernatanti su inokulirani na 24 sata stare kulture EPC i BF-2 ćelijskih linija. Inokulisane kulture su inkubirane na 15 - 20 °C, tokom 7 dana i svakodnevno su posmatrane na pojavu citopatogenog efekta. Identifikacija virusa je vršena PCR, ELISA testom i testom fluorescentnih antitela. Kao materijal za PCR je uziman homogenat organa i prva ili druga pasaža odgovarajuće ćelijske linije. PCR produkti su sekvencirani direktno, pomoću Big Dye Terminator v1.1 Cycle Sequencing Kit (Applied Biosystems, SAD) i ABI PRISM 3100-Avant Genetic Analyzer (Applied Biosystems). Dobijene sekvence su analizirane pomoću Sequencing Analysis Software 5.1 (Applied Biosystems).  Na osnovu rezultata nadzora, Srbija se smatra slobodnom od VHS, IHN i KHV. Najveći problem predstavlja zarazna nekroza pankreasa. Renibakterioza je prisutna na određenom broju ribnjaka.

Cilj programa praćenja i nadzora bolesti riba je dobijanje i održavanje statusa slobode od bolesti, iskornjivanje ili sprečavanje širenja bolesti. Primarna ciljna populacija u programu nadzora su kalifornijska pastrmka i šaran.
U Srbiji postoji nacionalno zakonodavstvo kao osnov za nadzora i kontrolu bolesti riba, kao i lista bolesti obaveznih za prijavljivanje. Pored nacionalnog zakonodavstva, prihvaćeni su i principi navedeni u Direktivi 2006/88/EC, koji se odnose na zahteve za kontrolu zdravlje riba u akvakulturi i njihovih proizvoda. Praćenje i nadzor virusnih bolesti vrše se na osnovu postupaka ispitivanja datih u Odluci Komisije 2001/183/EC, a za bakterijske bolesti, koriste se standardne dijagnostičke procedure.
Klinički pregledi na ribnjacima vrše se dva puta godišnje i uzimaju se uzorci za virološka i bakteriološka ispitivanja, u svrhu dokumentovanja odsustva bolesti. Postupak ispitivanja, dat u Priručniku OIE za dijagnostiku bolesti riba, osnova je za ispitivanja. Uzorci svih kategorija riba iz 56 šaranskih i 52 pastrmska ribnjaka se godišnje ispituju na prisustvo bolesti. Za virusološka ispitivanja su korišćeni homogenati bubrega, slezine, jetre i škrga. Pulirani parenhimatozni organi i škrge su homogenizovani i centrifugirani na 2500 x g, 20 minuta. Za izolaciju, supernatanti su inokulirani na 24 sata stare kulture EPC i BF-2 ćelijskih linija. Inokulisane kulture su inkubirane na 15 - 20 °C, tokom 7 dana i svakodnevno su posmatrane na pojavu citopatogenog efekta. Identifikacija virusa je vršena PCR, ELISA testom i testom fluorescentnih antitela. Kao materijal za PCR je uziman homogenat organa i prva ili druga pasaža odgovarajuće ćelijske linije. PCR produkti su sekvencirani direktno, pomoću Big Dye Terminator v1.1 Cycle Sequencing Kit (Applied Biosystems, SAD) i ABI PRISM 3100-Avant Genetic Analyzer (Applied Biosystems). Dobijene sekvence su analizirane pomoću Sequencing Analysis Software 5.1 (Applied Biosystems).  Na osnovu rezultata nadzora, Srbija se smatra slobodnom od VHS, IHN i KHV. Najveći problem predstavlja zarazna nekroza pankreasa. Renibakterioza je prisutna na određenom broju ribnjaka.",

Oboljenje izaziva Ichthyopthirius multifiliis. Životni ciklus I. multifiliis pogoduje nastanku epizootija u gustim populacijama riba, što je najčešći slučaj u intenzivnoj akvakulturi. Oboljenje je veoma rasprostranjeno i gotovo sve slatkovodne vrste riba se mogu smatrati prijemčivim. U radu su opisane karakteristike uzročnika, njegovo patološko delovanje, kao i mere prevencije i terapije.

AB  - Aquaponic production combines intensive production with waste recycling and water conservation. Aquaponic join recirculating aquaculture with hydroponics to use nutrient waste from aquaculture as an input to plant growth. Traditional aquaculture systems treat or dispose nutrient-rich wastewater. In aquaponics, the waste products from the fish are converted by a bio-filter into soluble nutrients which are absorbed by the plants, and allow ‘clean’ water to be returned back to the fish. Thus, it produces valuable fish protein with a minimal pollution of fresh water resources, while at the same time producing horticultural crops. Fish in aquaponic production systems can be raised in ponds, tanks, or other containers. Plants are grown separately in hydroponic tanks, submerged in water but suspended in gravel, sand, perlite, or porous plastic films, as well as on floating rafts. Systems vary greatly in design and construction, but most perform the following key functions: finfish and plant production, removal of suspended solids, and bacterial nitrification. This review discusses applications, effects and perspective of aquaponics.
AB  - Akvaponika kombinuje intenzivnu proizvodnju sa reciklažom otpadnih materija i očuvanjem vode, i povezuje akvakulturu sa hidroponikom u cilju korišćenja hranljivih materija iz akvakulture za rast biljaka. U tradicionalnoj akvakulturi, otpadna voda bogata hranljivim materijama se ne koristi. U akvaponici, produkti nastali prilikom gajenja riba se pomoću biofiltera konvertuju u rastvorljive materije koje biljke apsorbuju, a “čista” voda se vraća ponovo u proizvodnju. Na ovaj način se omogućava proizvodnja visoko vrednih animalnih proteina, uz minimalno zagađenje vode, dok se istovremeno dobijaju proizvodi hortikulture. Postoji veliki broj sistema za gajenje, različitog dizajna i konstrukcije, ali se svi baziraju na zadovoljavanju ključnih funkcija: proizvodnji riba i biljaka, uklanjanju rastvorenih materija i bakterijskoj nitrifikaciji. U radu su prikazani primena, efekti i perspektive akvaponike.

AB  - The most marketed species of fish in Serbia is common carp (Cyprinus carpio), which accounts for more than 80% of the national aquaculture. This study aimed to investigate the influence of two supplementary fish feeds (maize and extruded feed) on the proximate and fatty acid composition of carp. The results show that the protein, lipid, and ash contents were higher (P  lt = 0.001) in the extruded feed compared with maize. The carp fed extruded feed exhibited significantly higher protein and moisture contents (P  lt = 0.001 and P  lt = 0.01, respectively), whereas the total lipid content was significantly higher (P  lt = 0.001) in carp fed maize. The analysis of the fatty acid profiles showed that the saturated fatty acid (SFA) content in carp fed maize (23.94%) was lower than that in carp fed extruded feed (25.36%). The monounsaturated fatty acid (MUFA) content in carp fed maize (61.83%) was considerably higher compared with carp fed extruded feed (41.95%), whereas the polyunsaturated fatty acid (PUFA) content in carp fed maize (13.66%) was lower than that in carp fed extruded feed (30.91%). The principal component analysis (PCA) of the fatty acid profile resulted in a two-principal-component model that described 75.94% of the total data variance. The most influential factors were determined from the loading plot governing this distinction. The n-6/n-3 ratio in carp fed extruded feed (5.8) was found to be more nutritionally beneficial than that in carp fed maize (13.8), which indicates the better nutritional properties of carp fed extruded feed.

Multivariate Analysis of Fatty Acid Profiles of Carp Meat During Semi – Intensive Farming

AB  - Poređenje masnokiselinskog sastava mesa šarana pomoću multivarijantnih metoda, kao što su analiza glavnih komponenti (PCA) i linearna diskriminaciona analiza (LDA), omogućava razdvajanje riba prema načinu ishrane i bolje razumevanje promena u sastavu masnih kiselina tokom uzgoja. U periodu od aprila do oktobra, sa šaranskog ribnjaka u kojem je riba bila prihranjivana ekstrudiranom hranom, ispitano je dvadeset osam šarana. Mase riba su se značajno povećale između juna i septembra (P  lt  0,001) i septembra i oktobra (P  lt  0,001), zbog intenzivnog prihranjivanja šarana tokom letnjeg perioda, a sadržaj ukupnih lipida se značajno povećao između septembra i oktobra (P  lt  0.001). PCA je pokazala da je postojala visoka pozitivna korelacija između mase šarana, sadržaja lipida i oleinske kiseline (r > 0,6; P  lt  0,0001). Zbog veće dostupnosti prirodne hrane, u aprilu i junu, došlo je do povećanja sadržaja n-3 polinezasićenih masnih kiselina u mesu šarana, što je doprinelo boljem kvalitetu ribe. Prihrana šarana sa ekstrudiranom hranom uticala je na povećanje sadržaja n-6 polinezasićenih masnih kiselina, koje su u septembru bile značajno veće u odnosu na juni (P  lt  0,01), ali i na smanjenje nutritivno važnih n-3 polinezasićenih masnih kiselina (P  lt  0,01). Odnos n-3/n-6 je bio najveći u junu (0,30), a najmanji u oktobru (0,16). LDA analizom postignuto je razdvajanje šarana prema periodu uzorkovanja, što je u korelaciji sa vrstom unete hrane u ovim periodima. Najveća sličnost u masnokiselinskom sastavu ustanovljena je između šarana u septembru i oktobru, kao posledica smanjenja količine dostupne prirodne hrane i većeg unosa ekstrudirane hrane. PCA i LDA su pokazale da je došlo do značajnih promena u sastavu masnih kiselina šarana tokom uzgoja ribe. Rezultati koji su dobijeni u ovom radu o uticaju ishrane na sastav masnih kiselina i sadržaj lipida u mesu šarana doprineće poboljšanju načina ishrane i konsekventno kvalitetu mesa gajenog šarana.

abstract = "Poređenje masnokiselinskog sastava mesa šarana pomoću multivarijantnih metoda, kao što su analiza glavnih komponenti (PCA) i linearna diskriminaciona analiza (LDA), omogućava razdvajanje riba prema načinu ishrane i bolje razumevanje promena u sastavu masnih kiselina tokom uzgoja. U periodu od aprila do oktobra, sa šaranskog ribnjaka u kojem je riba bila prihranjivana ekstrudiranom hranom, ispitano je dvadeset osam šarana. Mase riba su se značajno povećale između juna i septembra (P  lt  0,001) i septembra i oktobra (P  lt  0,001), zbog intenzivnog prihranjivanja šarana tokom letnjeg perioda, a sadržaj ukupnih lipida se značajno povećao između septembra i oktobra (P  lt  0.001). PCA je pokazala da je postojala visoka pozitivna korelacija između mase šarana, sadržaja lipida i oleinske kiseline (r > 0,6; P  lt  0,0001). Zbog veće dostupnosti prirodne hrane, u aprilu i junu, došlo je do povećanja sadržaja n-3 polinezasićenih masnih kiselina u mesu šarana, što je doprinelo boljem kvalitetu ribe. Prihrana šarana sa ekstrudiranom hranom uticala je na povećanje sadržaja n-6 polinezasićenih masnih kiselina, koje su u septembru bile značajno veće u odnosu na juni (P  lt  0,01), ali i na smanjenje nutritivno važnih n-3 polinezasićenih masnih kiselina (P  lt  0,01). Odnos n-3/n-6 je bio najveći u junu (0,30), a najmanji u oktobru (0,16). LDA analizom postignuto je razdvajanje šarana prema periodu uzorkovanja, što je u korelaciji sa vrstom unete hrane u ovim periodima. Najveća sličnost u masnokiselinskom sastavu ustanovljena je između šarana u septembru i oktobru, kao posledica smanjenja količine dostupne prirodne hrane i većeg unosa ekstrudirane hrane. PCA i LDA su pokazale da je došlo do značajnih promena u sastavu masnih kiselina šarana tokom uzgoja ribe. Rezultati koji su dobijeni u ovom radu o uticaju ishrane na sastav masnih kiselina i sadržaj lipida u mesu šarana doprineće poboljšanju načina ishrane i konsekventno kvalitetu mesa gajenog šarana.",

AB  - The aim of this study was to examine and evaluate the proximate composition and fatty acid profiles of carp (Cyprinus carpio) during rearing in the semi-intensive farming conditions, supplementary fed extruded feed. Carp at the age of two years was submitted to trials, from spring to autumn, at the fish farm 'Ečka' AD. Samples of carp were collected in April, June, September and October. The protein content in fish sampled in September was significantly different from the protein content in fish sampled in April, June and October (p  lt  0.001), (17.48%, 17.27%, 18.28% and 17.26%, respectively). The quantities of total lipids slightly increased (2.25%, 2.37%, 3.02% and 4.72%, respectively) with the increase of the fish weight (598 g, 874 g, 1439 g and 1984 g, respectively), but significant increases occurred between September and October (p  lt  0.001). The moisture content decreased (79.55%, 78.86%, 77.46% and 75.72%, respectively). Principal Component Analysis (PCA) and Linear Discrimination Analysis (LDA) indicated that there were significant changes in the fatty acid composition of carp during growth. Starting from April to October the quantities of fatty acids were as follows: SFA (saturated fatty acids) - 28.47%, 28.97%, 24.86% and 23.66%, respectively; MUFA (monounsaturated fatty acids) - 38.57%, 40.52%, 41.68% and 42.43%, respectively; PUFA (polyunsaturated fatty acids) - 32.53%, 30.49%, 31.53% and 32.55%, respectively. The additional feeding of carp with the extruded feed influenced the increase in quantities of MUFA and n-6 PUFA (24.98%, 22.86%, 26.96% and 27.99%, respectively), and the decrease in quantities of the nutritionally important n-3 PUFA (5.13%, 6.59%, 4.57% and 4.57%, respectively). The highest n-3/n-6 ratio was obtained in June (0.30) and the lowest in October (0.16), indicating that the applied extruded feed was rich in n-6 and poor in n-3 PUFA. PCA and LDA have shown that significant changes in the fatty acid composition of carp during the breeding occurred. Separation of the carp according to the sampling period was achieved by the LDA analysis, which is consistent with the type of ingested food.
AB  - Cilj ovog rada bio je ispitivanje osnovnog hemijskog i masnokiselinskog sastava šarana (Cyprinus carpio) u toku uzgoja u poluintenzivnom sistemu uz prihranjivanje ribe ekstrudiranom hranom, kao i statistička evaluacija dobijenih rezultata. Eksperiment je realizovan od proleća do jeseni, na ribarskom gazdinstvu 'Ečka'AD, a korišćen je dvogodišnji šaran u nasadu za dvogodišnji. Uzorci šarana su uzimani u toku aprila, juna, septembra i oktobra meseca. Sadržaj proteina u šaranu koji je uzorkovan u septembru značajno se razlikovao od sadržaja proteina u šaranu koji je uzorkovan u aprilu, junu i oktobru (p  lt  0,001), (17,48%, 17,27%, 18,28% i 17,26%, respektivno). Količine ukupnih lipida su blago rasle (2,25%, 2,37%, 3,02% i 4,72%, respektivno) sa povećanjem mase ribe (598 g, 874 g, 1439 g i 1984 g, respektivno), a između septembra i oktobra došlo je do značajnog povećanja ukupnih lipida (p  lt 0,001). Sadržaj vlage se smanjivao (79,55%, 78,86%, 77,46% i 75,72%, respektivno). Analiza glavnih komponenti (Principal Component Analysis, PCA) i diskriminaciona linearna analiza (Linear Discrimination Analysis, LDA) ukazuju da je u toku perioda rasta ribe došlo do značajnih promena u sastavu masnih kiselina. U periodu istraživanja, od aprila do oktobra, količine masnih kiselina su bile sledeće: ZMK (zasićene masne kiseline) - 28,47%, 28,97%, 24,86% i 23,66%, respektivno; MNMK (mononezasićene masne kiseline) - 38,57%, 40,52%, 41,68% i 42,43%, respektivno, PNMK (polinezasićene masne kiseline) - 32,.53% , 30,49, 31,53% i 32,55%%, respektivno. Prihranjivanje šarana ekstrudiranom hranom uticalo je na porast količina MNMK i n-6 PNMK (24,98%, 22,86%, 26,96% i 27,99%, respektivno), kao i na smanjenje količina nutritivno važnih n-3 PNMK (5,13, 6,59%%, 4,57% i 4,57%, respektivno). Najveći odnos n-3/n-6 masnih kiselina dobijen je u junu (0,30), a najmanji u oktobru (0,16), što ukazuje da je ekstrudirana hrana koja je na ribnjaku korišćena bila bogata sa n-6 i siromašna sa n-3 PNMK. PCA i LDA su pokazale da je došlo do značajnih promena u sastavu masnih kiselina šarana tokom uzgoja. LDA analizom postignuto je razdvajanje šarana prema periodu uzorkovanja, a što je u korelaciji sa vrstom unete hrane.
