Comparison of sugars, lipids and phenolics content in the grains of organically and conventionally grown soybean in Serbia

AB  - The aim of the current study was to determine the content of several primary metabolites: total soluble sugars, starch and lipids, soluble sugars, fatty acids and triacylglycerols profile, and secondary metabolites: total phenolics and flavonoids, in the grains of soybean (Glycine max (L.) Merr.) cultivar ‘Kaća’. Additionally, grain antioxidant properties were assessed using ABTS•+ scavenging capacity and ferric reducing power (FRP) assays. Soybean was developed and grown in Serbia under two cultivation systems (conventional and organic) during two growing seasons (2016 and 2017). In both growing seasons and cultivation systems, soybean grains were characterised by reduced lipid content (8.16–14.34%) and as an excellent source of polyunsaturated fatty acids. Triacylglycerols (TAGs) with 44 equivalent carbon numbers (ECN44) represented the main fraction (30.95–32.79%) followed by ECN46 TAGs (23.27–26.36%). Low total soluble sugars (2.36–11.51%) content was determined. High-performance liquid chromatography (HPLC) analysis revealed a significant prevalence of non-reducing disaccharides (1.41–6.57%) among the individual sugars. Soybean grains were proved as a good source of phenolic (2493.9–4419.5 mg kg-1) and flavonoid (292.7–500.9 mg kg-1) compounds with the dominance of free (extractable) fractions. Strong positive correlations were observed between both cultivation systems and growing seasons indicating no clear differences for the majority of analysed parameters. All examined extracts possessed a significant ability (27.6–38.2%) to neutralize ABTS•+ radicals, while in the case of FRP assay a significant ability for iron ions (Fe3+) reduction was recorded for the samples from the second growing season.

AB  - Triacylglycerols (TAGs) and free fatty acids (FAs) present an important part of the grain lipid fraction. Knowing about its composition can be important information for both chemotaxonomic and nutritional parameters. The aim of the present study was to determine the TAG and FA profiles (and their similarities/differences) of several important crops (maize, spelt, buckwheat) grown under dissimilar agroecological systems - conventional and organic. Fatty acid composition was determined by applying the GC-FID method while HPLC method was used for the determination of the triacylglycerol profile of selected grains. To the best of our knowledge, the TAG profile of spelt grains was determined for the first time. Ten different FAs were identified in examined samples with a predominant presence of linoleic acid, except in the case of buckwheat (oleic acid) grains. Uniformly, buckwheat grains stood out due to the predominance of triglycerides with an equivalent carbon number of fifty (ECN 50) or forty-eight (ECN 48). In contrast, other samples contained ECN 44 and ECN 46 TAGs as the most represented triglycerides. Based on the principal component analysis (PCA) and cluster statistical analysis results, there is no uniformity in the differences between organic and conventional production growing systems.

AB  - The fatty acid profile, its relation to botanical origin and nutritional characteristics of bee-collected pollen from Serbia was determined. Twenty different fatty acids were detected. Depending on the palynological origin, the fatty acid (FAs) composition varied greatly. Three groups of pollen samples can be differentiated on the basis of Categorical principal component analysis. The first group was characterized by the presence of Fraxinus sp. pollen as predominant type and Zea mays as an accompanying pollen type and a high level of polyunsaturated FAs. Rannunculaceae, Apiaceae and Asteraceae family pollen, Ambrosia, Plantago, Sophora and Helianthus annuus pollen influenced the presence of saturated FAs and separation of the second group of samples. Pollen of plants belonging to the Fabaceae and Brassicaceae families had significant influence on constitution of the third group of samples with saturated and unsaturated FAs. The most abundant saturated, mono- and poly unsaturated fatty acids were palmitic, oleic and linolenic acid, respectively.

AB  - The most marketed species of fish in Serbia is common carp (Cyprinus carpio), which accounts for more than 80% of the national aquaculture. This study aimed to investigate the influence of two supplementary fish feeds (maize and extruded feed) on the proximate and fatty acid composition of carp. The results show that the protein, lipid, and ash contents were higher (P  lt = 0.001) in the extruded feed compared with maize. The carp fed extruded feed exhibited significantly higher protein and moisture contents (P  lt = 0.001 and P  lt = 0.01, respectively), whereas the total lipid content was significantly higher (P  lt = 0.001) in carp fed maize. The analysis of the fatty acid profiles showed that the saturated fatty acid (SFA) content in carp fed maize (23.94%) was lower than that in carp fed extruded feed (25.36%). The monounsaturated fatty acid (MUFA) content in carp fed maize (61.83%) was considerably higher compared with carp fed extruded feed (41.95%), whereas the polyunsaturated fatty acid (PUFA) content in carp fed maize (13.66%) was lower than that in carp fed extruded feed (30.91%). The principal component analysis (PCA) of the fatty acid profile resulted in a two-principal-component model that described 75.94% of the total data variance. The most influential factors were determined from the loading plot governing this distinction. The n-6/n-3 ratio in carp fed extruded feed (5.8) was found to be more nutritionally beneficial than that in carp fed maize (13.8), which indicates the better nutritional properties of carp fed extruded feed.

Changes in the proximate and fatty acid composition in carp meat during the semi intensive farming

AB  - The aim of this study was to examine and evaluate the proximate composition and fatty acid profiles of carp (Cyprinus carpio) during rearing in the semi-intensive farming conditions, supplementary fed extruded feed. Carp at the age of two years was submitted to trials, from spring to autumn, at the fish farm 'Ečka' AD. Samples of carp were collected in April, June, September and October. The protein content in fish sampled in September was significantly different from the protein content in fish sampled in April, June and October (p  lt  0.001), (17.48%, 17.27%, 18.28% and 17.26%, respectively). The quantities of total lipids slightly increased (2.25%, 2.37%, 3.02% and 4.72%, respectively) with the increase of the fish weight (598 g, 874 g, 1439 g and 1984 g, respectively), but significant increases occurred between September and October (p  lt  0.001). The moisture content decreased (79.55%, 78.86%, 77.46% and 75.72%, respectively). Principal Component Analysis (PCA) and Linear Discrimination Analysis (LDA) indicated that there were significant changes in the fatty acid composition of carp during growth. Starting from April to October the quantities of fatty acids were as follows: SFA (saturated fatty acids) - 28.47%, 28.97%, 24.86% and 23.66%, respectively; MUFA (monounsaturated fatty acids) - 38.57%, 40.52%, 41.68% and 42.43%, respectively; PUFA (polyunsaturated fatty acids) - 32.53%, 30.49%, 31.53% and 32.55%, respectively. The additional feeding of carp with the extruded feed influenced the increase in quantities of MUFA and n-6 PUFA (24.98%, 22.86%, 26.96% and 27.99%, respectively), and the decrease in quantities of the nutritionally important n-3 PUFA (5.13%, 6.59%, 4.57% and 4.57%, respectively). The highest n-3/n-6 ratio was obtained in June (0.30) and the lowest in October (0.16), indicating that the applied extruded feed was rich in n-6 and poor in n-3 PUFA. PCA and LDA have shown that significant changes in the fatty acid composition of carp during the breeding occurred. Separation of the carp according to the sampling period was achieved by the LDA analysis, which is consistent with the type of ingested food.
AB  - Cilj ovog rada bio je ispitivanje osnovnog hemijskog i masnokiselinskog sastava šarana (Cyprinus carpio) u toku uzgoja u poluintenzivnom sistemu uz prihranjivanje ribe ekstrudiranom hranom, kao i statistička evaluacija dobijenih rezultata. Eksperiment je realizovan od proleća do jeseni, na ribarskom gazdinstvu 'Ečka'AD, a korišćen je dvogodišnji šaran u nasadu za dvogodišnji. Uzorci šarana su uzimani u toku aprila, juna, septembra i oktobra meseca. Sadržaj proteina u šaranu koji je uzorkovan u septembru značajno se razlikovao od sadržaja proteina u šaranu koji je uzorkovan u aprilu, junu i oktobru (p  lt  0,001), (17,48%, 17,27%, 18,28% i 17,26%, respektivno). Količine ukupnih lipida su blago rasle (2,25%, 2,37%, 3,02% i 4,72%, respektivno) sa povećanjem mase ribe (598 g, 874 g, 1439 g i 1984 g, respektivno), a između septembra i oktobra došlo je do značajnog povećanja ukupnih lipida (p  lt 0,001). Sadržaj vlage se smanjivao (79,55%, 78,86%, 77,46% i 75,72%, respektivno). Analiza glavnih komponenti (Principal Component Analysis, PCA) i diskriminaciona linearna analiza (Linear Discrimination Analysis, LDA) ukazuju da je u toku perioda rasta ribe došlo do značajnih promena u sastavu masnih kiselina. U periodu istraživanja, od aprila do oktobra, količine masnih kiselina su bile sledeće: ZMK (zasićene masne kiseline) - 28,47%, 28,97%, 24,86% i 23,66%, respektivno; MNMK (mononezasićene masne kiseline) - 38,57%, 40,52%, 41,68% i 42,43%, respektivno, PNMK (polinezasićene masne kiseline) - 32,.53% , 30,49, 31,53% i 32,55%%, respektivno. Prihranjivanje šarana ekstrudiranom hranom uticalo je na porast količina MNMK i n-6 PNMK (24,98%, 22,86%, 26,96% i 27,99%, respektivno), kao i na smanjenje količina nutritivno važnih n-3 PNMK (5,13, 6,59%%, 4,57% i 4,57%, respektivno). Najveći odnos n-3/n-6 masnih kiselina dobijen je u junu (0,30), a najmanji u oktobru (0,16), što ukazuje da je ekstrudirana hrana koja je na ribnjaku korišćena bila bogata sa n-6 i siromašna sa n-3 PNMK. PCA i LDA su pokazale da je došlo do značajnih promena u sastavu masnih kiselina šarana tokom uzgoja. LDA analizom postignuto je razdvajanje šarana prema periodu uzorkovanja, a što je u korelaciji sa vrstom unete hrane.

The quantities of total lipids slightly increased (2.25%, 2.37%, 3.02% and 4.72%, respectively) with the increase of the fish weight (598 g, 874 g, 1439 g and 1984 g, respectively), but significant increases occurred between September and October (p  lt  0.001). The moisture content decreased (79.55%, 78.86%, 77.46% and 75.72%, respectively). Principal Component Analysis (PCA) and Linear Discrimination Analysis (LDA) indicated that there were significant changes in the fatty acid composition of carp during growth. Starting from April to October the quantities of fatty acids were as follows: SFA (saturated fatty acids) - 28.47%, 28.97%, 24.86% and 23.66%, respectively; MUFA (monounsaturated fatty acids) - 38.57%, 40.52%, 41.68% and 42.43%, respectively; PUFA (polyunsaturated fatty acids) - 32.53%, 30.49%, 31.53% and 32.55%, respectively. The additional feeding of carp with the extruded feed influenced the increase in quantities of MUFA and n-6 PUFA (24.98%, 22.86%, 26.96% and 27.99%, respectively), and the decrease in quantities of the nutritionally important n-3 PUFA (5.13%, 6.59%, 4.57% and 4.57%, respectively). The highest n-3/n-6 ratio was obtained in June (0.30) and the lowest in October (0.16), indicating that the applied extruded feed was rich in n-6 and poor in n-3 PUFA. PCA and LDA have shown that significant changes in the fatty acid composition of carp during the breeding occurred.
