AB - Western Balkan region, particularly Serbia, is faced with an increased frequency of extreme weather events, as a consequence of global climate change. However, there is still no enough research on how the effects of extreme weather events could be measured on the farm level. More importantly, there is no standard international methodology that is used regularly to address the issue. Therefore, the aim of this research was to evaluate the effects of extreme weather events on business performances of two the most common farm types in Serbia. To achieve this goal, the authors performed a financial loss assessment on a farm level. Panel models and R software environment were used to perform a multiple regression analysis allowing to indicate determinants of financial loss indicator depending on the farm’s production type. The results indicated that performance of both farm types is more influenced by drought than by floods. The regression analysis revealed that for both farm types financial stress is the most important independent variable.

AB - Increased demand for food production, influenced by the constant growth of population, resulted in the agricultural production systems that are more energy and economy intensive. The aim of this study was to evaluate the energetic and economic efficiency of sugar beet and wheat production. Attention was given to the fertilizer usage and its share in energy consumption since it can amount to 50%. Data show that energy input in wheat production was 5.84 MJ.kg(-1) and in sugar beet it was 0.93 MJ.kg(-1). The highest share of energy input both in wheat and sugar beet was observed for fertilizers, 52.45% and 46.70%, respectively. Economic analysis has shown that wheat production is a low profitable production with a net return of only 20.69 USD.ha(-1), in comparison with sugar beet production with a net return of 513.53 USD.ha(-1). Costs related to the fertilizer use prevailed in total variable and total production costs. Economic analysis has also shown that the benefit-to-cost ratio was higher in sugar beet production (1.33) compared to wheat production (1.03). Furthermore, it was determined that these economic indicators were less sensitive in sugar beet production than in wheat production regarding the variation of fertilizer.

AB - Crop production is largely unprotected and exposed to a great number of production factors. On the other hand, farmers are exposed to fluctuations in the market prices of their products every year, which often has a negative impact on the profits made. There are various risk management measures in plant production, and insurance is certainly one of the most effective instruments. One of the recent insurance models is Whole-Farm Revenue Insurance (WFRP), which is an American insurance model that has been applied since 2015. The essence of WFRP is to ensure that all crops on the farm are secured against production and market risks with only one policy. The aim of the research in this paper is to present WFRP as an entirely new model of revenue insurance on the example of a typical Serbian farm specializing in crop production. The WFRP model works by determining the insured revenue before the start of the production year. If at the end of the production year, for any reason, the realized revenue falls below the level of insured revenue, the farmer is entitled to indemnification. Due to the drought that hit the region where the analyzed farm is located, the yields were reduced, and thus the expected revenue was also reduced, and the farmer was entitled to damages of $5697. On the other hand, it is the farmer's obligation to pay $373 to the insurer as a risk transfer fee. The authors proved that even such complex insurance models can be applied in countries such as Serbia, where awareness of the importance of insurance of agricultural production is still not developed.

AB - Tsigai is an indigenous sheep breed present in entire Central and South-East Europe. Due to its low meat and milk production number of Tsigai sheep is in a sharp decline. But, there is a strong need to preserve valuable genetic resources of this breed. Therefore, the goal of this research is to evaluate economic performance of Tsigai breeding and to define strategies for its future use. In the paper profitability of Tsigai breeding is determined as well as economic efficiency of investments in Tsigai farms (using Net Present Value and Internal Rate of Return). To perform the analysis in risky circumstances authors applied sensitivity and decision tree approach. The results indicated that breeding of Tsigai sheep requires state subsidies to be profitable and economically efficient. Decision tree approach resulted in calculation of expected NPV. Investments in Tsigai farms proved to be economically efficient, but associated with high level of risk.

AB - Production and processing of milk represents a very important sector of the agricultural industry of Montenegro. Milk production is performed primarily on family farms, from which a small percentage is further placed in processing facilities. In addition to favourable conditions for cattle rearing and milk production, production results are modest. ARIMA model was applied in order to forecast the quantities of cow's milk that will be collected and processed in 2019 into fermented dairy products and drinking milk. The observed and obtained data show the presence of seasonal and trend component in time series. Furthermore, the analysis highlighted the importance of milk processing on family farms, in addition to the need for investment in its improvement. The paper also analyzes investment support referring to the milk processing facilities in Montenegro.

AB - Productivity is one of the basic economic principles needed for successful farm operations. The goal of this research is to analyze productivity of Serbian milk producers involved in FADN sample. Therefore, the research has been based on publically available FADN data and FADN methodology. Applying number of indicators authors discussed close relation between farm size and productivity. Besides, relation between productivity and economic efficiency of Serbian farms specialized in milk production is presented. The results indicated number of cows necessary to improve productivity of Serbian farms oriented towards milk production.

AB - The aim of the present study was to investigate encapsulation of probiotic Lactobacillus casei ATCC 393 on alginates using the extrusion technique and to evaluate cell survival under simulated gastrointestinal conditions and during fermented milk production and storage at 4 degrees C for up to four weeks. Encapsulation of probiotic bacteria led to significantly higher viabilities compared to free cells under simulated gastrointestinal conditions, as well as after storage for 28 days in fermented milk (7.13 log cfu g(-1)). In addition, the effect of encapsulated L. casei ATCC 393 cells on aroma volatile compounds formation during milk fermentation was studied using the SPME GC/MS technique. The fermented milks presented improved aroma, containing characteristic compounds produced usually by L. casei in fermented dairy products. The results showed that the alginate matrix has a great potential as encapsulation material for probiotics and application of the encapsulated cells in fermented dairy products may result in effective maintenance of cell survival during refrigerated storage and improvement of sensory characteristics. From an economical point of view and under certain conditions, the application of encapsulated probiotic cells is a sustainable process for the production of fermented milk.

AB - Bearing in mind the increasing price of diesel fuel, it is necessary to determine its effect on the production of family farms as main factors of agricultural production in Serbia. First of all, it is necessary to pay attention to the farms specializing in crop production because the price of diesel fuel has the biggest influence on economic effects of their production. In order to achieve this goal, the model of a family crop farm was used in this paper. This model was used to determine how the change of diesel fuel market price influences the change of efficiency ratio of the total farm production. Calculations were made for production with subsidies and without them, as well as for two initial presumptions - when the sowing structure of farm was not optimized and when it was. Besides forming models and optimization of production structure, method of sensitive analysis was also used in the paper, starting with a premise that market price of fuel fluctuates in the interval reflecting changes that occur in practice. It was determined by analysis that without optimization of the sowing structure, family farm businesses were economically efficient only with government subsidies. On the other hand, on condition that optimal sowing structure was used, production is economically efficient even without subsidies, except for the case with maximized presupposed fuel price. Ratio of economical efficiency in corn production (as the most important crop in the sowing structure of a family farm) for different yields and corn price with presupposed increase of fuel price was also analyzed in the paper.

AB - Economic efficiency of crop and livestock farms largely depends on their size. Some indicators of efficiency increase with the enlargement of farms, while others decrease. By monitoring some indicators, it is possible to determine the size of family farms which enables the best economic efficiency in crop and livestock production. It was determined that the best results were achieved on the EU crop production farms with the standard output over 500,000 EUR, while the best results were achieved on the EU livestock production farms with the standard output ranging between 100,000 EUR and 500,000 EUR.
AB - Efekti poslovanja ratarskih i stočarskih gazdinstava u velikoj meri zavise od njihove veličine.

AB - Sheep and goat production is different from other types of livestock production (cattle, pig, poultry production) because it is most commonly extensive, which means that it demands a relatively low level of investments into buildings, equipment and other fixed assets. This paper aims to analyse characteristics of investments into the sheep and goat production in the European Union and compare them to the similar investments in the Republic of Serbia. In order to analyse the state in the EU, data from the appropriate FADN data base were used, as well as the sector analyses conducted for the area of the EU. On the other hand, in order to analyse necessary investments into sheep and goat production in Serbia, available technical and technological data and appropriate literary sources were used. Analysis of construction costs for buildings used in sheep and goat production was done, as well as the calculation of investments into appropriate necessary equipment. It has been noticed that there is a need for enlargement of the sheep and goat farms in Serbia in order to provide a proper living standard for holders of such enterprises.

AB - Various types of extensive livestock production are present worldwide, primarily in regions where natural resources such as pastures and meadows could be used. Extensive livestock production is common in the EU, as well. Therefore the goal of this research was to establish economic efficiency of extensive livestock production types and to compare their efficiency with some intensive livestock production types. In order to achieve that goal FADN (Farm Accountancy Data Network) methodology was used. Source of information was FADN database as well as appropriate sector analysis and publications of European commission. It has been determined that sheep and goat production is competitive with intensive production types (dairy and granivores - pigs and poultry). Cattle production (other than dairy production) proved to be economically inefficient due to low output level.

AB - In order to develop and improve fruit production in Serbia it is necessary to invest in establishment of nurseries for production of quality fruit seedlings. Therefore the goal of this paper is to analyze economic efficiency of investments in fruit nurseries. Discounting methods of investment evaluation (Net Present Value, Internal Rate of Return and Payback period) are used to determine profitability of investments in expected circumstances while sensitivity analysis and scenario analysis methods were used to evaluate investments in risky circumstances. It is determined that investments in fruit nurseries are economically efficient even in risky circumstances. Type of nurseries which provide more balanced cash flows is more economically efficient and less risky.

AB - This paper is the result of studying effects of mechanical chamomile harvesting on yield and quality of harvested chamomile. Chamomile (Chamomilla recutita (L) Rausch.) was harvested at three time intervals (T1 - 240 days, T2 - 250 days and T3 - 260 days after sowing) by three conceptually different harvesters. The results achieved indicate that the harvester type significantly influences quality of harvested chamomile, whereas it is not influenced by chamomile harvesting time. Quality of harvested chamomile was classified into four categories, and it was observed that the greater number of rotations of a picking device increased the content of the first category of quality. The harvester A achieved 54.79% of the first category of quality in respect to the harvester B achieving 50.26% and the harvester C with 42.93%.

AB - In the past, farmers have bought traditional insurance to protect them-selves against crop losses caused by weather. As a new tool, weather derivatives have the potential to support farmers against weather induced risks more efficiently than traditional insurance. Nevertheless the market for weather derivatives is still relatively limited. The objective of this analysis is to quantify the risk reducing effect that can be achieved by using weather derivatives in crop production. For this reason a crop farm in Serbia served as an example to determine the risk reducing effect in wheat and corn production, as they are the most important crops in Serbia with grate export potential. The paper applies stochastic simulation and value-at-risk methods. In the paper are presented fair premiums and payoffs of put options in wheat and corn production, as well as revenue distributions with and without weather derivatives. It was found that the risk reduction was more significant in wheat production (21.88%) than in corn production (18.13%). Therefore, in case of Serbia weather derivatives would be more useful in wheat production.

AB - In the case of some agricultural investments, often net cash flow changes its sign from positive to negative, many times during the project. It causes the problem of internal rate of return calculation, which is an important indicator of economic effectiveness of investments. That is, in such situations, internal rate of return cannot be used. To solve this problem, modified rate of return is applied. This paper aimed to describe this method in detail, and to show its calculation for investments in pigs fattening. By application of modified internal rate of return it is determined that pigs fattening, under assumed conditions, is economically justified. Also, authors calculated the upper limit of discount rate (cost of capital), to which investment in pigs fattening is economically justified. It is concluded that, in the case of specific agricultural investments (such as pigs fattening), the use of traditional internal rate of return could give the wrong image on actual rate of return on investments.

AB - Production of compost from mixture of liquid manure and wheat straw is achievable process. In order to obtain final product of good quality, it is necessary to achieve total control of process. In the production process, essential changes in properties were recorded, compared to initial stage. Organic fertilizer of excellent quality was produced by composting the mixture of liquid manure and wheat straw. Prior to composting, components were mixed in fixed ratio. Production process involves aerobic treatment of mixture, by turning the mass frequently. Mixture of manure and straw was placed on the concrete surface in form of prisms, 3m wide and 1m high. Special machine for mass turning was used. The most important parameters for composting process, and their changes during treatment were monitored (changes in temperature, mass, height, bulk density, moisture content, N content, organic dry matter content, pH level C/N ratio).

AB - Chamomile is very important medicinal and aromatic plant, and is used in many industries. The goal of this paper is to analyze the effect of risk elimination (effect of hedging) in production of chamomile in Serbia using weather put option based on the quantity of precipitation. The analysis is based on calculations of average costs of chamomile production per hectare, costs of agricultural mechanization, and determination of profit in chamomile production. To structure weather put option the key issue is calculation of option payoff and evaluation of risk price (fair premium) a buyer is willing to pay for risk transfer. Fair premium is determined by burn-rate method. Chamomile revenue is calculated with use of the weather derivatives and without them using stochastic simulation method. Calculations are performed by appropriate computer software (" Risk). Results have shown that use of weather put option is efficient only if production location is in the immediate vicinity of weather station and if the correlation between quantity of precipitation and chamomile yield is high.

AB - Chamomile as a medicinal and aromatic plant is very important as a valuable product in the world market of medicinal plants. Regardless of that, there have been only a few researches so far concerning economic effects of its production. Costs of chamomile harvesting require special attention as these costs, as a rule, account for a major portion in the structure of total costs. The aim of this paper is to show when it is economically justified to substitute hand harvesting by machine harvesting as well as to determine the largest possible investment in purchasing different harvesters for chamomile harvesting. For that purpose were used enterprise budgeting (analytical calculations) of chamomile production, calculations of costs of agricultural machinery, as well as dynamic methods for investment evaluation (present value method). It was determined that it is economically justified to substitute hand harvesting with mechanized harvesting of chamomile on land area of over 2.5, i.e. 4 ha of chamomile, depending on the harvester type. If harvesters are used on land areas smaller than this economical effectiveness of the investments in purchasing them, i.e. their present value, depends on the harvester type and the land area on which chamomile is grown.

AB - There is no research regarding economic effects of genetic improvement for dairy cattle in Serbia. Therefore, the goal of this paper is to determine economic values for various production traits (milk yield, milk fat content and proteins content) in dairy production, as well as to determine total economic selection index. The research is based on data which include 9,516 lactations of 4,893 milking cows from 7 farms. Data were collected during the period 2004 - 2012. Authors used sensitivity analysis and partial budgeting approach to determine changes in revenues caused by variations of particular production traits. It was determined that within economic selection index the most important trait is milk yield, while values for other traits are almost negligible. On the other hand, it is expected that importance of certain traits will be changed after Serbian accession to the European Union.

AB - This paper is aimed at providing the basic theoretical postulates of indirect-index insurance and by its application at quantifying the effect of the reduction in risk using a stochastic simulation. The paper uses data on maize yield gathered from family farm in the central part of Srem, and weather data were acquired from the nearest referential meteorological station. For the purpose of achieving a stated aim, two situations were analysed: maize production value by using the indirect-index insurance and by using no indirect-index insurance. In the case of applying this type of insurance, a farmer can decrease the risk by 8,816 RSD/ha (r=1.0), 4,116 RSD/ha if the correlation coefficient is 0.8, that is 2,598 RSD/ha (r=0.6). Therefore, it is possible to conclude that there is a significant effect of the reduction in risk by applying indirect-index insurance.

AB - The introduction of the HACCP system is very important in the primary production of milk and in the food industry. If the milk is produced and processed in accordance with the HACCP system, there is more certainty regarding its safety and quality. On farms, milk production according to HACCP standards comprises the implementation of tests for the purpose of checking the status of cows, milk and total environments of milk production. Farms that produce better quality milk have the possibility of working with larger dairies and achieving the highest price of milk. Given the complexity of the issues regarding the rates of economic effectiveness of investment in the implementation of HACCP standards in milk production, the aim of this paper is to review the different concepts that can be applied in the economic analysis of the introduction of HACCP standards. It should be noted that the introduction of quality standards may not necessarily be related to additional investments. It was found that, in the economic analysis, costs are more often expressed in money, whereas the benefits of the introduction of quality system are more difficult to be valued. The method of partial budgeting is used as the most common approach to the economic analysis. This method monitors the changes in costs that occur due to the introduction of measures which should lead to an increase in the quality of milk. In addition, other methods such as integer linear programming, Cost - Effectiveness and Cost - Benefit analysis and defining of functions that determine the movement of costs, can be used. To estimate the amount of the costs of introducing quality standards, accounting, economic - engineering and econometric approaches can be applied. The most important limitation of all these analyses is that the majority of parameters monitored are generally difficult to measure.

abstract = "The introduction of the HACCP system is very important in the primary production of milk and in the food industry. The most important limitation of all these analyses is that the majority of parameters monitored are generally difficult to measure., Uvođenje HACCP sistema veoma je važno u primarnoj proizvodnji mleka i u prehrambenoj industriji. AB - The starting point of the paper is the fact that the economic effects of field crop operations is highly conditioned by energy prices (primarily diesel fuel prices) as well as by the raw material whose prices to a large extent depend on energy price (fertilisers). Hence, it is determined on the basis of the model of family farm (specialized in field crop production) that the change in the prices of the given inputs influences the change in gross margin and farm profit. A special attention is paid to the changes in gross margin per worker and per working hour, as well as to the profit per worker and per working hour, which is caused by a varying of the purchase prices of raw materials, whose prices depend on energy prices (diesel fuel and fertilisers). It is determined by the analysis that diesel D-2 is distinguished because of its importance for profitable business operations of the examined family farms regarding that the 20% price increase of diesel D-2 leads to the decrease in family farm profit by 35.56%. In the second place, the highest impact on the profit is created by the prices of different NPK fertilisers, whereas the prices of KAN and UREA fertilisers do not have so significant impact on the farm profit. By subsidizing the price of the aforementioned inputs for family farms, it is possible to produce greater economic effects of labour on family farms and thus influence the reduction of rural poverty. This solution is acceptable only in the short run, but in long term perspective it is needed to emphasize investments instead of subsidies. .

AB - In the past, farmers have bought insurance for protection against fluctuations in crop yields caused by weather risks. Relatively new tools for risk management in plant production are weather derivatives. Although weather derivatives show many advantages over traditional, the market for these products is still relatively limited. Therefore, it is necessary to quantify the effect of risk reduction that can be achieved by using weather derivatives on the example of selected farm in north-eastern part of Srem, Serbia. If the field of production is close to the meteorological station, and if a high correlation between weather indices and yield of sugar beet is assumed, then the effect of risk reduction is significant (up to 37,18 %).

AB - A special type of weather derivatives are weather forwards and they exists mostly in the form of weather swaps. Hedging effectiveness in wheat production with and without weather swap was analyzed in this paper using stochastic dominance. The results show that the effect of risk reduction is significant using weather swap, but geographical- basis risk and production-related basis risk are important factor that reduce the utility of weather derivatives.
