AB  - Secale cereale L. is second important bread grain, after wheat, and an economically important crop for functional food. Rye production parameters in world and in Serbia were analysed in this study and quality parameters. The average rye area (4.28 mill. ha) and production (12.12 mil.t) in world, in the five- year period, recorded a growth trend and average grain yield was 3.01 t ha-1. In 2020 in the Republic of Serbia, the average grain yield of rye was 3,23 t ha-1. Rye is considered a healthy cereal due to its high content of dietary fiber and is a rich source of vitamins B and E, minerals: Ca, Fe, F, P, K, Zn, Mn, Cu, K, which is why it is a suitable raw material for the production of functional food. Rye foods have beneficial effects on insulin, which may have positive implications for diabetes prevention. AB  - The study aimed to determine the effect of different fixed factors (breed, region, calving year,
calving season, parity and lactation stage) on daily milk production (yield and content) of four
dairy cattle breeds under the heat stress conditions (THI≥72). The research was conducted
on a set of test-day records of four dairy cattle breeds (Simmental, Holstein-Friesian, Red
Holstein and Brown Swiss) reared in the Republic of Serbia (Region of Mačva, Podunavlje and
Šumadija). The statistical analysis included test-day records collected in the period from the
beginning of the year 2012 to the end of the year 2019. Based on the performed analysis, it
could be demonstrated that all the effects included in the statistical model (breed, region,
calving year, calving season, parity and lactation stage) statistically highly significant (p<0.001)
affected daily milk production (yield and content) of cows reared in the terms of the heat stress
conditions. The highest daily milk production was determined in the region of Podunavlje, and
by the Holstein-Friesian breed. Furthermore, dairy cows calved during the spring season, in the
third lactation and from the 61st to the 120th day of lactation, had the highest milk production
during the summer period in an environment characterised by heat stress. Also, daily milk yield
of cows in a heat stress environment decreased in the period from June to September. The
results obtained indicate different animals’ responses to heat stress concerning the animal’s
breed, rearing region, calving year, calving season, parity and lactation stage.

Genetic parameters and breeding values for daily milk production of Holstein cows in terms of heat stress

AB  - In order to estimate the variance components as well as the breeding value for daily milk production of Holstein cows in terms of heat stress defined as different THI threshold values (68, 70, and 72) 1,275,713 test-day records from 90,159 cows were used. Temperature-humidity index (THI) calculated from ambient temperature and relative humidity recorded in the barns on the milk recording day was used as the measure of heat stress. Daily milk production was analysed as a bivariate variable, in the normal conditions (under the set THIthreshold value), and in terms of heat stress (above the set THIthreshold value) using a model that accounted variances due to lactation stage, calving season, age at calving, breeding region, parity, permanent environment, interaction between hear and year, and individual animal. The estimated high genetic correlations between the daily milk production in normal and heat stress conditions, as well as high correlations among the EBVs in normal and heat stress conditions, point out that Holstein cows with high productivity in normal condition will sustain an alike level of production even in terms of heat stress. These results indicate that the Holstein cows are very well acclimatized to the environmental conditions at dairy farms in Croatia. However, these findings should be taken with caution, given that measurements of microclimate parameters were conducted only once at a milk recording day, so the reliability of such measurements could be questionable. In conclusion, in order to realize a completely unambiguous conclusion, further studies that include multiple daily measurements of microclimatic parameters in the farms facilities are necessary.

AB  - Aiming determination of the variability of production traits (daily milk yield and composition) and microclimate parameters (ambient temperature and humidity) in the barns; as well as the correlation between the analyzed groups of traits, 1,636,192 test-day records from Simmentals and 1,275,713 test-day records from Holsteins were analysed. Performed analysis indicate high variability of production traits due to cow's breed, parity as well as breeding region. Also, high variability of microclimate parameters in the barns due to season and breeding region was found. Furthermore, statistically highly significant (p  lt  0.001) correlations between the production traits and microclimate parameters were determined. Finally, the negative effect of inadequate microclimate on daily milk production was determined in both breeds in all breeding regions. Since genetic evaluation and selection of dairy cattle for heat resistance is only long-term method for heat stress managing, determined effect will be taken into account in the statistical model for estimation of genetic parameters and breeding values.
AB  - Cilj istraživanja je bio određivanje varijabilnosti proizvodnih osobina (dnevni prinos i sastav mleka) i mikroklimatskih parametara (temperatura i vlažnost okoline) u objektima za držanje krava za proizvodnju mleka; kao i korelacija između analiziranih grupa osobina; 1.636.192 zapisa za grla simentalske rase i 1.275.713 zapisa test dana grla holštajn rase. Izvršene analize pokazuju veliku varijabilnost proizvodnih osobina zbog rase krava, pariteta kao i odgajivaĉkog regiona. Takođe je utvrđena velika varijabilnost mikroklimatskih parametara u objektima zbog sezone i odgajivačkog regiona. Pored toga, utvrđene su statistički vrlo značajne (p lt 0,001) korelacije između proizvodnih svojstava i parametara mikroklime. Konačno, negativan uticaj neadekvatne mikroklime na svakodnevnu proizvodnju mleka utvrđen je kod obe rase u svim odgajivačkim regionima. Pošto je genetska procena i selekcija mlečnih goveda na otpornost na visoke temperature sredine samo dugoročna metoda za upravljanje toplotnim stresom, utvrđeni efekat biće uzet u obzir u statističkom modelu za procenu genetskih parametara i odgajivačkih vrednosti.

Qualitative risk assessment from gluten in dairy products for population with celiac disease

AB  - People with celiac disease represent susceptible population that can be cured only by "gluten-free" diet, while dairy products have been recognized as exceptionally recommended. Therefore, it is very important for dairy products not to contain gluten in concentrations that could be harmful for them. The aim of this research was to investigate risk exposure to gluten from dairy products for the population with celiac disease in the Republic of Croatia by usage of referent analytical methods and scientifically based methods of risk assessment. Total number of 19 subgroups of standard dairy products (n=40) and four subgroups of "gluten-free" dairy products (n=53) labelled with crossed cereal or quotation "gluten-free" and without quantity of gluten labelled were analysed by ELISA-R5 method. Adult population with celiac disease (n=57) was interweaved on eating habits, while intake of dairy products for infants and children was calculated based on recommended intakes and menus. The results have shown that number of standard dairy products that according to their nature should not contain gluten, as well as "gluten-free" dairy products contain certain amount of gluten that can be estimated in certain unfavourable scenarios and in susceptible subpopulations as risky to sick individuals. Dairy products represent very low risk to adult population with celiac disease and can be consumed in quantities that do not differ from the recommended quantities for healthy population. On the other side, dairy products for infants in the age from 6 to 12 months represent increased risk for infants with celiac disease and require implementation of risk management activities in order to reduce risk. Dairy products for infants and children from 1 to 6 years represent moderate risk depending on eating habits. The obtained results point out neediness of risk management methods implementation through information and education of population with celiac disease, as well as producers of dairy products.
