Bioactive components in breeding industrial tomato

AB  - Selection of tomato lines for industrial use regarding their nutritional value is a potential that will reflect in the final product obtained from tomato fruits. At the same time, technological process of preparation of tomato juice (100 °C), as well as hot air drying, was studied in order to establish an optimal technological process that is the least disrupting for the natural potential of nutrients contained in fresh fruits. The research was performed on 6 lines and one variety of industrial tomato. The content of vitamin C, vitamin E, lycopene, β-carotene, phenols, flavonoids, dry matter and total antioxidative capacity was studied by applying standard methods for determination of the level of these parameters. Grouping was performed according to traits of average carotenoid content (lycopene, β-carotene), vitamin C, vitamin E, phenols, flavonoids, dry matter and total antioxidative capacity in tomato fruit, by applying PCA. The first two principle components were responsible for 77.18 % of total variability of researched samples. The impact of other five components was low and they were responsible for 22.18 % of the variability. Antioxidative activity was best preserved after finishing, through small losses of lycopene and β-carotene. Losses of vitamin C, vitamin E, phenols and flavonoids during thermal processing were great, mostly in juice, while in dried product, these losses were lower. Nutrient losses were in function of temperature height that the fruits were exposed to during the thermal processing. Genotypes SPRZ and SPSM were marked as the best.
AB  - Selekcija linija paradajza namenjenog industrijskoj preradi prema osobinama koje definišu njihovu nutritivnu vrednost predstavljaju potencijal koji će se reflektovati u proizvodu dobijenom od plodova paradajza. U isto vreme ispitan je i tehnološki proces pripreme soka paradajza (100 °C) kao i sušenje plodova na toplom vazduhu, kako bi se utvrdio optimalni tehnološki proces koji najmanje narušava prirodni potencijal nutrijenata sadržanih u svežim plodovima. Ispitivanje je sprovedeno na 6 linija i jednoj sorti industrijskog paradajza gde su ispitani sadržaj vitamina C, vitamina E, likopina, β-carotina, fenola, flavonoida, suve materije i ukupni antioksidativni kapacitet, standardnim metodama za utvrđivanje sadržaja ovih parametara. Grupisanje je izvršeno prema osobinama prosečnog sadržaja karetinoida (likopen, β-karoten), vitamina C, vitamina E, fenola, flavonoida, suve materije i ukupnog antioksidatinog kapaciteta u plodu paradajza, pomoću PCA analize. Prve dve principle komponente odgovorne su za 77,18 % ukupne varijabilnosti ispitivanih uzoraka. Uticaj ostalih pet komponenti je mali i one su odgovorne za 22,18 % varijabilnosti. Antioksidativna aktivnost je najbolje očuvana posle dorade kroz male gubitke likopina i β-karotina posle dorade. Gubici vitamina C, vitamina E, fenola, flavonoida pri termičkoj obradi su veliki i to najviše u soku, dok kod sušenog proizvoda ti gubici su nešto manji. Gubici nutrijenata su u funkciji visine temperature kojima su plodovi bili izlagani pri termičkoj obradi. Kao najbolji genotipovi ocenjeni su SPRZ i SPSM.

The impact of different thermal processing of tomato to its antioxidant activity, vitamin E, dry matter and sugar content

AB  - The objective of this study was the determination of total antioxidant activity, contents of vitamin E, sugar and total dry matter in fresh and thermally processed (dried and juiced) tomato fruits of different selected tomato lines with the aim to establish the nutritive profile and distinguish superior genotypes in order to obtain high-quality final product with more benefit to human health. Content of vitamin E, total antioxidant activity, dry matter and total sugars, in fresh and dried fruits (dried in parallel hot air dryer at 60 °C, until the final product reached the moisture lower than 10% and in tomato juice pasteurized at 100 °C, for 7 minutes) was studied. Comparative trial with 7 genotypes: one commercial variety (SP-109) and 6 selected high inbreeding generation lines (SPP, SPSM, SPRZ, SPRM-20, S-60 and SPO), was set up. Genotype SPRZ had the highest vitamin E content and total antioxidant capacity, both in fresh fruit and after the treatments. Thermal processing by drying at 60°C and pasteurization of tomato changed the level of total sugar and dry matter content. Total antioxidant activity decreased by drying, comparing to fresh fruit while the level of vitamin E decreased in juice pasteurized at high temperature (100 °C). .
AB  - Cilj istraživanja je određivanje ukupne antioksidativne aktivnosti, sadržaja vitamina E, sadržaja šećera i ukupne suve materije u svežim i termički obrađenim (sušeni plodovi i sok) plodovima različitih selekcionih linija paradajza, sa ciljem utvrđivanja nutritivnog kvaliteta i izdvajanja superiornih genotipova, čijom preradom bi se dobio kvalitetniji krajnji proizvod sa pozitivnim dejstvom na ljudsko zdravlje. Ispitivani su sadržaj vitamina E, ukupna antioksidativna aktivnost, suva materija, i ukupni sadržaj šećera, kod svežih plodova, sušenih plodova (sušenje toplim vazduhom na 60 °C, do konačne vlage uzorka manje od 10%) i soka paradajza (pasterizacijom na 100 °C, u trajanju od 7 minuta). Izveden je komparativni ogled sa 7 genotipova, jedna komercijalna sorta (SP-109) i 6 selekcionisanih linija (SPP, SPSM, SPRZ, SPRM-20, S-60 I SPO) visokih generacija inbridinga. Termička obrada plodova paradajza (sušenjem na 60 °C) i pravljenjem soka dovodi do promene ukupnog sadržaja šećera i sadržaja ukupne suve materije. Ispitivanjem ukupne antioksidativne aktivnosti utvrđeno je da se ona gubi sušenjem u odnosu na svež plod, a sadržaj vitamina E se smanjio u soku koji je dobijen obradom na višim temperaturama (100 °C). Genotip SPRZ imao je najviše vrednosti za sadržaj vitamina E i ukupan antioksidativni kapacitet kako u svežem stanju tako i nakon primenjene obrade. Izborom superiornih genotipova i akumulacijom nutrijenata kroz oplemenjivačke programe, može se poboljšati kvalitet krajnjeg proizvoda i postići dobijanje prerađevina sa većim pozitivnim uticajem na zdravlje ljudi.

AB  - Market significance of cucumber for fresh consumption and the new technology of growing make it one of the most attractive vegetable variety. Interest of producers is higher every day, while the selection of new varieties is very low. The aim of this research was the selection of cucumber intended for fresh consumption with good agronomic traits intended for growing in the greenhouses and in the open field. The researchers of the Institute for Vegetable Crops, Smederevska Palanka created new cucumber hybrid which was recognized by Ministry of Agriculture Forestry and Water Management of the Republic of Serbia, Department for Plant protection in 2013, under the name 'Kralj'.
AB  - Tržišna značajnost salatnog krastavca i nove tehnologije gajenja čine da on postaje jedna od najatraktivnijih povrtarskih vrsta. Zainteresovanost proizvođača je sve veća a domaća selekcija sorata na ovoj povrtarskoj vrsti je jako oskudna. Cilj ovog istraživanja je selekcija salatnog krastavca sa dobrim agronomskim osobinama namenjenog za gajenje u zaštićenom prostoru i na otvorenom polju. Novi hibrid salatnog krastavca Kralj, kreiran je u Institutu za povrtarstvo, Smederevska Palanka. Hibrid je priznat kod MPVŠ, RS, Uprava za zaštitu bilja, 2013 godine pod nazivom Kralj.

Effect of irrigation on pseudogley structural composition in the protected cultivation

AB  - Pseudogley soils are very important in agricultural production thanks to their significant percent cover, potential fertility, the fact that they occur in predominantly flat soil complexes, suitable for mechanized tillage. Moreover, it could be the substrates for protected cultivation. Intensive multiannual production in plastic greenhouses causes the changes which lower the soil productivity as well as changes soil structure. The aim of this paper is to investigate the degree to which pseudogley structure is changed by vegetable production in plastic-covered greenhouses, in the conditions of intensive irrigation and fertilization. The six-year-long implementation of drip irrigation system caused some changes in the soil structural composition in the sense of a mild increase in the content of larger-sized aggregates (>5mm), but also their greater liability to decomposition, as well as a mild decrease in the percentage of water-stable aggregates larger than 1mm. The soil water logging in the plastic greenhouse led to elevated processes of structure deterioration, the formation of crumby aggregates, as well as to the decrease in water stability of structural aggregates.
AB  - Pseudoglejna zemljišta imaju veliki značaj za poljoprivrednu proizvodnju zbog njihove značajne zastupljenosti, potencijalne plodnosti, činjenice da se javljaju na pretežno ravnim kompleksima zemljišta pogodnim za primenu mehanizovane obrade, kao i mogućnosti da se koriste kao podloga za proizvodnju u zaštićenim prostorima. Tokom intenzivne višegodišnje plasteničke proizvodnje dolazi do promena koje smanjuju produktivnu vrednost i dovode do promene strukturnog sastava zemljišta. Cilj ovog rada bio je da prouči u kojoj meri plastenička povrtarska proizvodnja, u uslovima intenzivnog navodnjavanja i đubrenja utiče na promenu strukture pseudogleja. Šestogodišnja primena navodnjavanja sistemom kap po kap dovela je do izvesnih promena u strakturnom sastavu zemljišta smislu blagog povećanja sadržaja agregata većih dimenzija (većih od 5mm.), ali i njihove veće sklonosti prema rasplinjavanju, kao i blagog smanjenja sadržaja vodootpornih agregata većih od 1mm. Prevlaživanje zemljišta u plasteniku dovelo je do izraženih procesa kvarenja strukture, stvaranja grudvastih agregata, kao i smanjenje vodootprnosti strukturnih agregata.

The six-year-long implementation of drip irrigation system caused some changes in the soil structural composition in the sense of a mild increase in the content of larger-sized aggregates (>5mm), but also their greater liability to decomposition, as well as a mild decrease in the percentage of water-stable aggregates larger than 1mm. The soil water logging in the plastic greenhouse led to elevated processes of structure deterioration, the formation of crumby aggregates, as well as to the decrease in water stability of structural aggregates., Pseudoglejna zemljišta imaju veliki značaj za poljoprivrednu proizvodnju zbog njihove značajne zastupljenosti, potencijalne plodnosti, činjenice da se javljaju na pretežno ravnim kompleksima zemljišta pogodnim za primenu mehanizovane obrade, kao i mogućnosti da se koriste kao podloga za proizvodnju u zaštićenim prostorima. In terms of the soil nitrogen supply, nitrogen fertilizers have positive effects on yields, but they are often applied inappropriately and at an excessive rate, adversely affecting the nitrate accumulation in the soil and, hence, inducing an increased uptake by the plant. Lettuce is a nitrophilous vegetable that has a pronounced tendency to uptake nitrates. Therefore, the objective of this study was to determine the effect of different types and application rates of nitrogen fertilizers on the lettuce yield and the nitrate accumulation in lettuce leaves. The trials were established at Trbušani, Čačak, in high greenhouses without additional heating on vertisol during the growing seasons of 2007 and 2008. The trial involved the Dutch lettuce cultivar Sportivo and two types of nitrogen fertilisers, KAN and Urea, at rates of 50, 100 and 200 kg N ha-1. The highest yield was produced by the KAN treatment at a nitrogen rate of 200 kg ha-1, and the lowest in the control treatment. The nitrate content in lettuce leaves showed a tendency to increase with the increasing nitrogen application rate. The content was lower under the Urea treatment than under KAN. The lowest nitrate content was found in the control (196 mg kg-1), whereas the highest was obtained at the highest rate of the KAN application (12,684 mg kg-1), followed by the highest rate of Urea (9,464 mg kg-1). .
AB  - U cilju postizanja visokih i stabilnih prinosa gajenih biljaka sve se više primenjuju mineralna đubriva, posebno azotna. Sa aspekta obezbeđenja zemljišta ovim hranivom upotreba azotnih đubriva ima pozitivan efekat, ali se veoma često nestručno primenjuju visoke doze ovih đubriva što se negativno odražava na akumulaciju nitrata u zemljištima, a time i povećano usvajanje od strane biljaka. Salata je jedna od povrtarskih vrsta koja pripada grupi nitrofilnog povrća i koja ima izraženu sklonost ka usvajanju nitrata, tako da je cilj ovih istraživanja bio da se utvrdi u kojoj meri različite vrste i doze azotnih đubriva utiču na postizanje visokih prinosa, ali i akumulaciju nitrata u listu salate. Ogledi su postavljeni u mestu Trbušani kod Čačka, u visokim plastenicima bez dopunskog zagrevanja, na zemljištu tipa smonica, tokom vegetacionih sezona 2007. i 2008. godine. U ogledu je korišćena holandska sorta salate sportivo, a primenjene su dve vrste azotnog đubriva KAN i urea, u dozama od 50, 100 i 200 kg N/ha. Najveći prinos ostvaren je primenom KAN sa dozom azota od 200 kg/ha, a najniži na kontrolnoj varijanti. AB  - The aim of the study was to analyze pepper seedling growth on five substrates containing soil and lubricum. Soil content in the substrates ranged from 50 to 90%. Lubricum content ranged from 10 to 50%. The content of the control substrate was entirely soil. The following parameters were monitored: plant height, number of leaves per plant and plant weight. The average seedling plant height was 20.82 cm. Lubricum content in the substrate contributed to a significant increase of both seedling plant height (by 5.63 cm) and plant weight (by 2.73 g). On average plant weight was 6.60 g. Lubricum had no effect on leaf number per plant. The average number of leaves was 7.23. The effect of lubricum content in the substrate on seedling plants was significant.
AB  - Rasad je ispitan na supstratima (smešama) koji su se sastojali od zemlje i glistenjaka. Sadržaj zemlje u supstratima kretao se od 50 do 90%, a sadržaj glistenjaka se kretao od 10 do 50%. Kao kontrola poslužio je supstrat u kome se nalazila samo zemlja. Uzeti su podaci za visinu biljke, broj listova po biljci i masu biljke. Glistenjak je uticao na dva parametra, a to su visina i masa biljke. One su povećane. Visina je povećana za 5,63 cm, a masa za 2,73 g. Prosečna vrednost za visinu biljke dostigla je 20,82 cm, dok je za masu dostigla 6,60 g. Broj listova po biljci nije se menjao. Rasad je bio dosta ujednačen, a samo je na zemlji (kontrola) i na supstratu zemlja 90% + glistenjak 10% bio nešto lošiji. Zbog toga udeo glistenjaka u supstratu ne treba da iznosi više od 20%.

AB  - In this paper results of two year research regarding the yield and quality of white mustard seed obtained from three types are presented.
AB  - U ovom radu prikazani su rezultati dvogodišnjih istraživanja (2000. i 2001.) prinosa i kvaliteta semena bele slačice dobijenog sa tri tipa zemljišta (černozem, aluvijum i ritska crnica). Najveći prinos postignut je na zemljištu tipa černozem u drugoj godini, a najmanji na zemljištu tipa ritska crnica u prvoj eksperimentalnoj godini. U obe godine istraživanja na černozemu je postignut najveći prinos a na ritskoj crnici najmanji. Kada je u pitanju kvalitet semena (energija klijanja i ukupna klijavost) najbolje rezultate dalo je seme sa černozema u drugoj godini istraživanja, dok je najlošiji kvalitet imalo seme sa ritske crnice u 2000-oj godini. Najveću masu imalo je seme sa černozema u 2001-oj godini, a najmanju seme dobijeno sa zemljišta tipa ritska crnica iz prve godine istraživanja. U načelu seme u drugoj eksperimentalnoj godini ispoljilo je bolje osobine od semena iz prve godine, izuzetak je uočen kod semena sa zemljišta tipa aluvijum iz prve godine koje je imalo bolju energiju klijanja od semena sa istog tipa zemljišta u narednoj, 2001 godini.

AB  - Three successive fractions of cichorium seed and standard have been analysed. The broad fraction was > 1 mm, medium 0.8-1 mm and small fraction up to 0.8 mm. In laboratory conditions, the germinating rate (energy), total germination and seed weight were investigated. A significant difference has been determined between the broadest fraction and the other fractions both for germinating energy and for total germination and seed weight. The temperature of 20°C constant proved the most optimum for the germinating energy and total germination. The most unfavorable was the temperature between 5/15°C 12/12 h alternately.
AB  - Analizirane su tri sukcesivne frakcije semena cikorije i nefrakcionisano seme kao standard. Krupna frakcija bila je veličine preko 1 mm, srednja 0,8-1 mm i sitna frakcija veličine do 0,8 mm. U laboratorijskim uslovima ispitivana je brzina klijanja (energija), klijavost i masa 1000 semena. Najkrupnija frakcija ispoljila je statistički značajnu razliku prema ostalim frakcijama u procentu energije klijanja i klijavosti. Naklijavanje na konstantnoj temperaturi od 20°C najpovoljnije deluje na energiju klijanja i klijavost, dok je najnepovoljnija temperatura od 5/15°C 12/12 h naizmenično. Prema tome, u praksi se preporučuje proizvodnja i dorada semena cikorije koja će dati najveći udeo najkrupnije frakcije. Indirektan je zaključak da niže temperature ili njihovo variranje ne pogoduju vitalnosti ovog semena.

AB  - The effect of different amounts of Ca-ammonium nitrates on yield and the accumulation of nitric nitrogen-NO3 was studied in open field and under greenhouse conditions, with special attention for the outer (green) and inner (light green) leaves. The results shows that the application of nitrogen (50 - 200 kg/ha) increased the lettuce yield and the nitric nitrogen content by 21-59% and 42-250% in relation to the control variant, for which 30 t/ha of manure was applied. The average content of the nitrates was markedly higher in the lettuce grown in the greenhouse and, for both growing methods, in the outer leaves.
