Quantitative deposition of nutrients in dorsal muscle, adipose tissue and liver in common carp (Cyprinus carpio L.) in a semi-intensive farming system

AB  - Carp is the dominant species grown in Serbia and makes up over 80% of the total fish production. The aims of the present study were to analyze changes of protein, lipid, ash and moisture in dorsal muscle, adipose tissue and liver in common carp additionally fed complete pellets during four months in natural carp ponds. Twenty fish from four ponds were sampled. Analysis of variance showed that protein
content was the highest in dorsal muscle and adipose tissue and was the smallest in liver (P < 0.05). The percentage of protein was quite stable and reached a plateau value (18.42–19.49%) in dorsal muscle. Total
lipid content in common carp was the highest in liver (14.79–17.24%) and smaller in dorsal muscle (1.92–5.42%) (P<0.05). More interested were how the fish mass increased during breeding. The proximate composition of fish tissues was expressed as absolute content by weight of each fish. Simple regression resulted in relationships between protein content (g/fish) and body weight (g) indicating strong association (r = 0.965). Simple regression resulted in not strong relationships between lipid content (g/fish) and body weight (g (r = 0.784). There was a strong relationship between moisture content (%) and lipid content (%) (r = 0.962). The protein content (g/fish) was strongly associated with body weight in dorsal muscle and adipose tissue since coefficients of regression were high (>0.95), as were t-tests of significance (13.69, 18.04), and in the liver there was also an association since the coefficient of regression was 0.952 and the t-test was high (11.72).

AB  - Usled izuzetno povoljnih prehrambenih, medicinskih i agronomskih karakteristika, kao i povoljnog hemijskog sastava semena koje je u skladu sa najsavremenijim nutritionističkim zahtevima, proizvodnja spelte dobija sve veći značaj, naročito u organskoj proizvodnji hrane. Veoma važan nutritivni faktor namirnica predstavlja sadržaj masnih kiselina u njima, neophodnih za pravilno funkcionisanje ljudskog organizma. Cilj ovog rada bio je da GC-FID metodom ispita sadržaj masnih kiselina u organskom i konvencionalnom semenu spelte, poreklom iz 2015 i 2016. godine. Sadržaj masnih kiselina izražen je kao % sadržaj u odnosu na ukupne masne kiseline. Detektovano je deset masnih kiselina. Kod obe vrste semena, u najvećoj količini se nalaze linolna (C18:2n-6) i oleinska (C18:1n-9) kiselina. Najveći udeo polinezasićenih masnih kiselina sadrži seme konvencionalne spelte (59.46 %), dok se u organskom semenu iz 2016. godine nalazio najveći udeo zasićenih (18.33 %) i mononezasićenih masnih kiselina (26.71 %).
AB  - Due to the extremely favorable nutritional, medical and agronomic characteristics, as well as the favorable chemical composition of seed which is in accordance with the current nutritional requirements, spelt production is gaining increasing importance, especially in organic food production. The fatty acids (FAs) content is a very important nutritional factor. Adequate FAs daily intake is necessary for the proper functioning of the human body. The aim of this paper was to examine fatty acids content in organic and conventional spelt seeds produced during 2015 and 2016 year. GC-FID method was used for FAs determination. FAs content is expressed as % of content in relation to the total fatty acids. Ten fatty acids were detected. Both types of seeds contained linoleic (C18:2n-6) and oleic acid (C18:1n-9) as predominant. Conventional spelt seed possessed higher content of polyunsaturated fatty acids (59.46 %) while organic seed from 2016 contained higher amount of saturated (18.33 %) and monounsaturated fatty acids (26.71 %).

AB  - The objective of this study was to evaluate the influence of three supplementary diets on the nutritional quality of marketable common carp. Supplementary diets (Carp1-maize, Carp2-extruded and Carp3-pelleted feed) exhibited significantly different (p≤0.05) influences on the protein, lipids, moisture and ash content in market-sized carp. The most abundant saturated FA (SFA) was palmitic acid (C16:0), the most predominant monounsaturated FA (MUFA) was oleic acid (C18:1n-9), and the most abundant polyunsaturated FA (PUFA) was linoleic acid (C18:2n-6). The highest content of SFAs was established in Carp1 (24.57% and 1888.72 mg/100 g wet fillet). MUFAs were presented in the highest quantities (61.77%, I.e. 4854.91 mg/100 g wet fillet) in Carp1, and PUFA accounted the highest quantities (33.48%, I.e. 1763.01 mg/100 g wet fillet) in Carp3. The most nutritionally beneficial n-6/n-3 ratio was obtained in Carp2 (5.83). The results obtained in this study indicate that introducing supplementary diets containing extruded or pelleted feed instead of maize improved carp nutritional quality. PCA (principal component analysis) and LDA (linear discriminant analysis) of the FAs demonstrated that carp could be reliably classified based on their supplementary feed.

AB  - Increasing the amount of n-3 PUFA in carp meat is one of the most important tasks in enhancing its overall quality. However, the relative influence of supplemental feed and natural feed on the FA profile of cultivated carp flesh is not well documented, making it difficult to choose the most efficient strategy. Carp diet composition and diet and flesh fatty acid profiles were simultaneously followed in order to determine the influence of pelleted feed compared to natural feed on fatty acid profiles of carp tissues. Pelleted feed clearly dominated over zooplankton and Chironomidae in the carp diet, producing carp tissue fatty acid profiles closely resembling those of pelleted feed. However, increase in the abundance of zooplankton over the course of the investigation resulting in concomitant increase of its proportion in feed bulk was in strong positive correlation with increase in n-3 HUFA in the dorsal muscle. n-3 PUFA enrichment of supplemental feed could be the dominant mechanism in production of carp meat rich in n-3 PUFA. However, even a small increase in natural feed availability could significantly change the diet of common carp and result in considerable improvement of meat quality with regard to n-3 HUFA content.

AB  - U ovom radu razmatrane su promene grupa masnih kiselina (zasićenih, mononezasićenih, polinezasićenih n-3 i n-6, kao i njihovog odnosa n-3/n-6) u zavisnosti od sadržaja lipida u mesu šarana sa dve vrste prihranjivanja (ekstrudirane hrane i kukuruza). Vrsta korišćene hrane značajno je uticala na sadržaj lipida deponovanih u tkivu ribe. Korelacija lipida sa sastavom masnih kiselina pokazala je, da se sa povećanjem sadržaja lipida u mesu šarana, masnokiselinski sastav značajno menjao: povećavale su se mononezasićene masne kiseline, sa dominantnom oleinskom kiselinom (18:1n-9), a istovremeno smanjivale n-3 i n-6 polinezasićene masne kiseline. Istraživanja koja su prikazana u ovom radu su ukazala na opravdanost prihranjivanja šarana ekstrudiranom hranom u cilju poboljšanja kvaliteta mesa ribe.

abstract = "U ovom radu razmatrane su promene grupa masnih kiselina (zasićenih, mononezasićenih, polinezasićenih n-3 i n-6, kao i njihovog odnosa n-3/n-6) u zavisnosti od sadržaja lipida u mesu šarana sa dve vrste prihranjivanja (ekstrudirane hrane i kukuruza). Vrsta korišćene hrane značajno je uticala na sadržaj lipida deponovanih u tkivu ribe. Korelacija lipida sa sastavom masnih kiselina pokazala je, da se sa povećanjem sadržaja lipida u mesu šarana, masnokiselinski sastav značajno menjao: povećavale su se mononezasićene masne kiseline, sa dominantnom oleinskom kiselinom (18:1n-9), a istovremeno smanjivale n-3 i n-6 polinezasićene masne kiseline. Istraživanja koja su prikazana u ovom radu su ukazala na opravdanost prihranjivanja šarana ekstrudiranom hranom u cilju poboljšanja kvaliteta mesa ribe.",

AB  - Poređenje masnokiselinskog sastava mesa šarana pomoću multivarijantnih metoda, kao što su analiza glavnih komponenti (PCA) i linearna diskriminaciona analiza (LDA), omogućava razdvajanje riba prema načinu ishrane i bolje razumevanje promena u sastavu masnih kiselina tokom uzgoja. U periodu od aprila do oktobra, sa šaranskog ribnjaka u kojem je riba bila prihranjivana ekstrudiranom hranom, ispitano je dvadeset osam šarana. Mase riba su se značajno povećale između juna i septembra (P  lt  0,001) i septembra i oktobra (P  lt  0,001), zbog intenzivnog prihranjivanja šarana tokom letnjeg perioda, a sadržaj ukupnih lipida se značajno povećao između septembra i oktobra (P  lt  0.001). PCA je pokazala da je postojala visoka pozitivna korelacija između mase šarana, sadržaja lipida i oleinske kiseline (r > 0,6; P  lt  0,0001). Zbog veće dostupnosti prirodne hrane, u aprilu i junu, došlo je do povećanja sadržaja n-3 polinezasićenih masnih kiselina u mesu šarana, što je doprinelo boljem kvalitetu ribe. Prihrana šarana sa ekstrudiranom hranom uticala je na povećanje sadržaja n-6 polinezasićenih masnih kiselina, koje su u septembru bile značajno veće u odnosu na juni (P  lt  0,01), ali i na smanjenje nutritivno važnih n-3 polinezasićenih masnih kiselina (P  lt  0,01). Odnos n-3/n-6 je bio najveći u junu (0,30), a najmanji u oktobru (0,16). LDA analizom postignuto je razdvajanje šarana prema periodu uzorkovanja, što je u korelaciji sa vrstom unete hrane u ovim periodima. Najveća sličnost u masnokiselinskom sastavu ustanovljena je između šarana u septembru i oktobru, kao posledica smanjenja količine dostupne prirodne hrane i većeg unosa ekstrudirane hrane. PCA i LDA su pokazale da je došlo do značajnih promena u sastavu masnih kiselina šarana tokom uzgoja ribe. Rezultati koji su dobijeni u ovom radu o uticaju ishrane na sastav masnih kiselina i sadržaj lipida u mesu šarana doprineće poboljšanju načina ishrane i konsekventno kvalitetu mesa gajenog šarana.
