AB  - The aim of this research was to verify the authenticity of monofloral honeys from the territory of the Republic of Serbia on the basis of physicochemical parameters routinely measured in honey quality control using multivariate analysis. Seventeen samples of monofloral honey (11 samples of acacia honey and 6 samples of sunflower honey) from the territory of the Republic of Serbia were analyzed. Physico-chemical analysis of the samples included the examination of basic quality parameters and qualitative and quantitative analyses of phenolic compounds. In the samples tested, a total of 93 phenolic compounds were tentatively identified, and 19 of them were quantified. The obtained physicochemical analysis of the data served as input for the multivariate analysis. The hеаt map, which is useful for visualizing numerical data, was used for this purpose. The obtained results showed that the applied data can serve to clearly separate acacia and sunflower honeys.

AB  - In this study, we have analyzed the anthocyanin composition of skin extracts of three red grape varieties Prokupac, Evita and Čokot Zemun in order to distinguish these cultivars based on their anthocyanin profile. Also, mechanical analysis of grape bunches and berries was performed. According to our results, seventeen anthocyanins were identified using LC/MS technique and quantitative differences were recorded using HPLC-DAD method. The highest content of total anthocyanins was obtained for Evita variety and the lowest one was recorded in Prokupac. Also, clear differences were observed in anthocyanins ratios. In comparison to Prokupac and Evita varieties, Čokot Zemun was characterized with a high content of coumaroyl derivatives of anthocyanin compounds, while high levels of acetylated derivatives were recorded in Prokupac. Data reported in this study represent a certain contribution to a database of mechanical properties and chemical composition of grape varieties originating from Balkan.

Antiviral activity of medicinal plants extracts against foodborne norovirus

AB  - Medicinal plant extracts (MPE) have a broad antimicrobial activity, including antiviral effects. In our study, eleven dry extract of ten different medicinal plant prepared with two solvents (5%, dimethyl sulfoxide (DMSO) and 30% ethanol in 5% DMSO) in different concentrations have been examined for anti-noroviral activity. The reduction of norovirus > 1 log10 genome equivalents (GE) has been obtained with 1 mg/mL of Aronia melanocarpa leaf extract (AMLE), dried wine Prokupac (WPE) and Hypericum perforatum extract (HyPE). Some of MPE i.e. HyPE, Aronia melanocarpa fruit extract (AMFE) and Punica granatum (PPE) showed better activity when dissolved in 30% ethanol with 5% DMSO. All results of anti-noroviral activity of tested MPE which achieve  lt  0.5 log10 GE are considered as not effective.

Influence of bunch morphology on quality of wines produced from clones of grape variety Prokupac

AB  - Wine quality depends mainly on the characteristics of the grape it is made of, and one of the attributes affecting wine composition is cluster and berry morphology. The aim of this study was to represent variability of the morphological characteristics between different clones of the autochthonous grape variety Prokupac and to perform chemical evaluation of wines obtained from them. Total phenolic content was generally low and it ranged from 33.0 to 114.5 mg GAE/100 mL. Six main anthocyanin compounds including malvidin as the main anthocyanidin were detected. Malvidin 3-O-glucoside was the most abundant anthocyanin with concentration of 59.8 to 101.7 mu g/mL. Clones 43/5 and 43/4 yielded highest quality wines. According to the results, clonal selection makes a significant difference in Prokupac wine quality. On the other hand, there is a minor dependance of wine quality parameters to variation in morphological attributes of clusters and berries (bunch weight, proportion of stem, berry and seed weight, skin, pulp and seed weight per berry).

Morphological and chemical characterization of Arnica montana L. under different cultivation models

AB  - Arnica (Arnica montana L) is a perennial mountain plant whose flower heads are mainly used for topical treatment of bruises and sprains in phytopharmaceutical preparations such as ointments, creams and gels. In this study, different models of arnica cultivation have been tested in three-year field trial arranged in 2 x 3 x 2 factorial design. Planting date (spring and autumn), fertilizater type (manure, NPK and control) and mode of reproduction (generative and clonal) were induced factors on the trial. The variation of the rosette diameter, flowering stem count and height, flower heads count and diameter, together with flower heads yield and chemical properties were investigated as morphological parameters. Spring planting of clonally propagated plants was showed to be the least successful model due to the low percent of rooted plants and weak shoot development. Other models yielded from 59.8 to 143.6 kg ha(-1) and 116.3 to 258.7 kg ha(-1) flower heads (dw) in the second and third year, respectively. Total sesquiterpene lactones content in flower heads of all tested variants was above the minimum of pharmacopeia quality regulation and ranged from 4.6 to 13.9 mg g(-1) depending on factor levels, while the amounts of two dominant flavonoid compounds quercetin-3-O-glucoside and kaempferol-3-O-glucoside ranged from 7.8 to 13.9 mg g(-1) and from 2.1 to 4.7 mg g(-1), respectively. All induced factors in the field trial significantly influenced variation in both morphological and chemical parameters, where fertilized variants from autumn planting have shown to be superior in flower heads yield with satisfying levels of the secondary metabolites content. Factorial analysis distinguished that half of morphological parameters positively correlated with flower heads yield. First three ranks of sequential classification of cultivation models with desirable properties were captured by variants planted in autumn, while the last rated variants were those from clonal propagation planted in spring. This attempt of arnica domestication in agroecological conditions of western Serbia has proven to be successful in ensuring high quality raw material, providing at the same time answers to the questions that have not been reviewed so far.

Chemical Composition and Antimicrobial Activity of the Essential Oils of Micromeria thymifolia (Scop.) Fritsch., M. dalmatica Benth., and Satureja cuneifolia Ten. and Its Secretory Elements

AB  - Light yellowish, pleasant-smelling essential oils were obtained in 0.3%, 1.3%, and 0.8% yields from the aerial parts of S. cuneifolia Ten., M. thymifolia (Scop.) Fritsch., and M. dalmatica Benth, respectively. Thirty-four compounds were identified in the oil of M. dalmatica representing 98.7% of total oil composition, while in the oil of M. thymifolia, 21 were identified representing 78.2% of total oil composition. The major compounds in the oil of M. thymifolia included pulegone (50.4%), piperitenone (10.3%) and piperitenone oxide (4.3%), while the oil of M. dalmatica was rich in pulegone (26.7%), piperitenone (21.8%) and piperitenone oxide (25.4%). Fifty-five compounds were characterized in the oil of S. cuneifolia, representing 92.1% of total oil composition. Linalool (19.9%) and alpha-pinene (12.3%) were found to be the dominant compounds. Antimicrobial activity was noticed in all examined oils with MIC Values ranging from 5.6-54 mu g/mL. The most active was the oil of S. cuneifolia, which completely inhibited the growth of mostly all tested microorganisms at the lowest supplied concentration. Glandular trichomes (both peltate and capitate) and nonglandular, uniseriate, simple hairs were distributed on abaxial and adaxial surface of the leaves, calyces and stem in all examined species.

Phenolic Content and Radical Scavenging Capacity of Berries and Related Jams from Certificated Area in Serbia

AB  - Chemical composition and the effects of domestic processing and storage were studied in organically cultivated or wild growing berries, harvested in certificated area in Serbia. The total phenolics content in fresh berries ranged from 380 to 1660 mg GAE/100 g. The phenolic content decreased during the processing to jams, and storage in almost all samples, except in black currant. Among fresh berries, the highest amount of total anthocyanins was found in bilberry (0.61 +/- 0.03 %). Processing and storage caused decrease in anthocyanin content. The most ubiquitous anthocyanin aglycone was found to be cyanidin. Ellagic acid was detected in fresh and frozen black raspberries and related jams, and its content increases during thermal processing to jam. Among fresh berries, bilberry showed the strongest DPPH radical scavenging activity with an IC(50) value of 0.82 mg/ml. However, frozen as well as processed berries in our study still showed comparable high values of radical scavenging activity. After 9 months of storage all investigated jams were microbiologicaly correct. Regardless of the losses in the amount of total phenolics, total anthocyanins and radical scavenging activity, frozen berries and related jams are still excellent sources of nutritional substances with antioxidant potential.
