Differential response of two tomato genotypes, wild type cv. Ailsa craig and its aba-deficient mutant flacca to short-termed drought cycles

AB  - Two tomato genotypes with constitutively different ABA level, flacca mutant and wild type of Ailsa Craig cv. (WT), were subjected to three repeated drought cycles, with the aim to reveal the role of the abscisic acid (ABA) threshold in developing drought tolerance. Differential responses to drought of two genotypes were obtained: more pronounced stomatal closure, ABA biosynthesis and proline accumulation in WT compared to the mutant were compensated by dry weight accumulation accompanied by transient redox disbalance in flacca. Fourier-transform infrared (FTIR) spectra analysis of isolated cell wall material and morphological parameter measurements on tomato leaves indicated changes in dry weight accumulation and carbon re-allocation to cell wall constituents in flacca, but not in WT. A higher proportion of cellulose, pectin and lignin in isolated cell walls from flacca leaves further increased with repeated drought cycles. Different ABA-dependent stomatal closure between drought cycles implies that acquisition of stomatal sensitivity may be a part of stress memory mechanism developed under given conditions. The regulatory role of ABA in the cell wall restructuring and growth regulation under low leaf potential was discussed with emphasis on the beneficial effects of drought priming in developing differential defense strategies against drought.

Sectorial resistance of plum to sharka (Plum Pox Virus)

AB  - A special resistance to sharka (Plum Pox Virus, PPV) has been discovered and studied in plum trees. That resistance is characterized by the absence of sharka symptoms and PPV, too, in some of primary branches of plum trees otherwise diseased by sharka. Symptoms appearance was observed and PPV presence was checked serologically by DAS-ELISA test as well as by grafting transmission. That resistance mainly appears in a portion of the tree crown, i.e. on some primary branches of young plum trees and it is diminishing in following years. That distinct resistance to sharka (PPV) was found in trees of Čačanska rodna, Stanley and Crvena ranka cvs. In selected plum trees in the parts with such resistance no sharka symptoms appeared nor PPV was proved. The absence of sharka symptoms as well as PPV in a portion of a plum tree otherwise diseased by sharka is considered as a sign of resistance. For such resistance the name 'Sectorial Resistance' is proposed. More and detail research on sectorial resistance of plum to PPV are in progress.
AB  - Otkrivena je i istraživana jedna posebna otpornost šljive na virus šarke šljive (VŠŠ, Plum pox virus - PPV) za koju se predlaže naziv 'sektorijalna otpornost'. Ta otpornost se ispoljava u delu krune, odnosno na pojedinim skeletnim granama obolelih stabala. U tom delu krune, odnosno na skeletnim granama koje pokazuju sektorijalnu otpornost nema simptoma oboljenja, niti je prisutan VŠŠ. Odsustvo VŠŠ proveravano je serološki DAS-ELISA testom i kalemljenjem. Sektorijalna otpornost je nađena kod stabala Čačanska rodna, Stenley-a i Crvene ranke. Sektorijalna otpornost šljive na VŠŠ je u negativnoj korelaciji sa starošću stabala na kojima se javlja. Broj skeletnih grana sa sektorijalnom otpornošću kod obolelih stabala se smanjuje iz godine u godinu, a povećava broj skeletnih grana sa simptomima oboljenja. U toku su dalja i svestranija proučavanja te novootkrivene otpornosti šljive prema VŠŠ.

Sensory properties of hamburger-type products of different composition

AB  - The authors examined the effect of additive use on sensory properties of thermally treated hamburger-type products with different raw material composition. Three experimental product groups were prepared of the following ingredients: beef and tallow, pork shoulder, beef and back bacon, pork trimmings, beef and back bacon. Common salt, polyphosphate, soybean flour TB-200, textured soy protein (Soja Protein, Bečej), SUPRO EX 33 (Protein Tehnologies International) and water were used as additives. After forming, products were thermally treated on grill. Sensory analysis was carried out by application of rank method and hedonic scale. The results of examination show that use of polyphosphate is useful in production of "hamburgers" from beef and tallow, because these samples were evaluated as more acceptable in respect of appearance, taste or juiciness. In products in which composition dominated pork meat, this effect was less expressed. The most acceptable sensory properties of hamburger-type products were attained by use of additives in the following combination: textured soy protein and SUPRO EX 33 (powder).
AB  - Autori su ispitivali uticaj upotrebe dodataka na senzorna svojstva toplotna obrađenih proizvoda u tipu hamburgera različitog sirovinskog sastava. Pripremljene su tri ogledne grupe usitnjenog mesa izrađene od: goveđeg mesa i loja: mesa svinjske plećke, goveđeg mesa i čvrstog masnog tkiva; svinjskih odrezaka, goveđeg mesa i čvrstog masnog tkiva. Kao dodaci su korišteni kuhinjska so, polifosfat, sojino brašno TB-200, teksturirani proteini soje (Soja Protein, Bečej), SUPRO EX 33 (Protein Tehnologies International) i voda. Nakon oblikovanja, proizvodi su toplotna obrađivani na roštilju. Senzorna analiza je obavljena primenom metoda rangiranja i hedonske skale. Iz rezultata ispitivanja proizilazi da je upotreba polifosfata korisna u izradi "hamburgera " samo od goveđeg mesa i loja, jer su ovi uzorci ocenjeni kao prihvatljiviji u pogledu izgleda, ukusa i sočnosti. Ovaj efekat je manje izražen kod proizvoda u čijem sastavu dominira svinjsko meso. Najprihvatljivija sočnost proizvoda u tipu hamburgera se postiže upotrebom SUPRO EX 33 (u suvom stanju i u vidu granulo), a ukus kombinacijom dodataka: sojin izolat i teksturirani sojini proteini.
